which of your ocs is most apt to end up in jail? What is their crime? Who do they take with them, canon or oc? Why do they take the person with him?

The most apt person to end up in jail is actually a toss-up between Echo and Face. Both because they're Wraiths under Wedge Antilles' ( @red-flight ) tutelage and are either cooling their heels after a fight in a tapcaf, or as part of an intelligence op they're in on.
Chances are, one of them was jailed simply for a public disturbance and property damage and the other is there to either break them out or give them the tools to break out. And if it isn't one of them going in initially, then it's one of them breaking another Wraith out.~

Echo is the epitome of a Vanguard Danger Ferret
She's good at what she does, clearing areas that need to be cleared, killing monsters that need to be killed - ergo the Danger. But she has this impulsive need to stash things she either thinks are pretty, useful, or could be useful to someone she knows - ergo the Ferret.
As a Vanguard hunter, this has led her to make loot caches for fellow guardians and help in the restocking of those caches from her various battlefield exploits.
In her Star Wars verse, this battlefield scavenging is a habit that is quickly broken with prejudice, as that kind of stuff is considered looting in the New Republic and is very illegal there. HOWEVER! This doesn't stop Echo from stashing what she legally acquires for herself and her teammates.
After being a backup/replacement pilot for the Rogues and then moving to Commando work before their reorganization, Echo still maintained the habit of stashing things she was able to purchase or salvage for herself and her fellow squad mates. This would continue into her time as a Wraith after she reapplied for a position in Star Command after spending a year back in Sol to help deal with the Witness.
Wedge still gets headaches from their Quartermaster, Squeaky the 3PO droid, who complains about the random, uncatalogued supplies stashed and found in random hiding places on the ship. Haven't decided if he will put a stop to her stashing things or if he will wait to see what the others do when they find the stuff. Morale is definitely a thing he likes to keep up with the Wriaths.
