Reposting @whole30recipes:⠀ ...⠀ "SWEET POTATO QUICHE WITH SAUSAGE AND SPINACH | @showmewholeliving.⠀ .⠀ With four young kids I need to have breakfast prepped ahead of time if I don’t want to start my day with high cortisol levels 😳. When I need a break from my usual frittata of the week, I make these sweet potato quiches.⠀ .⠀ They’re delicious right out of the oven, but I’ve been known to hand them to my kids cold as we walk out the door (late) in the morning. I’ve also taken them on road trips and picnics for #whole30coldlunch, AND they freeze well!⠀ . ⠀ Sweet Potato Quiche With Sausage and Spinach:⠀ .⠀ Ingredients:⠀ - 1.5 pounds sweet potatoes.⠀ - 1 pound #whole30 compliant breakfast sausage.⠀ - 12 eggs. - 2 large handfuls of spinach.⠀ - Salt and pepper to taste. .⠀ Directions:⠀ 1. Preheat oven to 375F and grease two, 6-count muffin tins with coconut oil.⠀ 2. Peel and coarsely chop the sweet potatoes, then place in a food processor and pulse until finely diced.⠀ 3. Transfer the sweet potatoes to a large bowl, add TWO eggs, and stir until well combined.⠀ 4. Spoon the sweet potatoes into the muffin tins and press them to make a “crust” on the bottom and up the sides of each well.⠀ 5. Bake the crusts for 15 minutes.⠀ 6. Meanwhile, brown the breakfast sausage in a skillet, and set aside.⠀ 7. Whisk the ten remaining eggs in a large bowl and add salt and pepper to taste.⠀ 8. When the crusts are done, remove from the oven and drop the temperature down to 350F.⠀ 9. Place the spinach on top of the crusts, then spoon the sausage on top of the spinach.⠀ 10. Using a 1/4 cup measuring cup, add the whisked eggs to the quiches.⠀ 11. I eat so much salad now, usually 2 a day. I decided to make it easier on myself and made a giant bowl of it that would last a few days. Romaine, carrot ribbons, radishes, cucumer, and sliced snap peas are my base. It makes life easier because then all I have to do is add whatever protein and additional veggies.

Preparing for Whole30
Tomorrow I'm devoting several hours to prepping for my first go round at Whole30. Here's my plan:
Clean out fridge/pantry. I have a lot of non-compliant food that is old and I don't need in the house period. I find that "out of sight, out of mind" is a mantra that works well for me.
Meal plan. I don't think plan to make a bunch of elaborate meals, but I do plan to plan ahead each week. I use Green Bean Delivery for weekly delivery of fresh fruits, vegetables and local meats. I'm a big fan of Pinterest so I've created a Whole30 board. Luckily we decided to do Whole30 before I put this week's order in, so our order is Whole30 compliant. However, it's not enough to feed us for a week, so...
Grocery shop. I typically shop at Marsh because I work next door to one and drive passed another (new, shiny) Marsh on my way to my daughter's day care each day. However, I think I may venture to Whole Foods and/or Trader Joe's for some of the shopping because I've heard good things about some compliant food. One thing I'm definitely on the lookout for is ghee.
Pre-cheat. As terrible is it sounds one of my preparation steps is enjoying some completely non-compliant foods and beverages. The husband and I both really enjoy beer so I'm going to partake in several beverages while ringing in the New Year.
Measure. On Thursday morning, first thing sI'm going to weigh and measure myself. Obviously you cannot measure success without a baseline. I'm going to try very hard to be compliant and not weigh myself during the month but I admit that this is one of the most likely ways I will cheat (however, I'll be honest, if this is the worst thing I do to cheat, I'll call that winning all day long).
Any tips for preparing? Anything you do that you think leads to success?

#Whole30prep shopping done. This is enough for about 3 days. Possibly can stretch it to 5 days, if I try really hard. Many thanks to @jen_mabs for going with me to ShopRite & showing me where the spaghetti squash was. I'm going to bake it now. Fingers crossed it comes out right, for dinner/my lunch tomorrow. #whole30 #vegetables #fruit #healingmygut
