LAPHROAIG HONOURS IAN HUNTER IN NEW SERIES đđ„
One of the most richly flavoured of all Scotch
In the whisky industry, it's important to enter the market with innovative production techniques to create unique flavour profiles that appeal to a younger demographic. The use of different cask finishes demonstrates how innovation can be a strong advantage in the competitive whisky landscape.
Laphroaig Distillery honoured the legacy of one of its former owners with The Ian Hunter Series, a ârare and collectableâ range of whiskies. The Ian Hunter Series is a 30-year-old single malt matured in first-fill ex-Bourbon barrels, which is titled âUnique Characterâ to reflect Hunterâs decision to introduce American oak casks to Laphroaigâs maturation regime.
The fifth and final instalment in this iconic series is a 34-year-old single malt whisky with intriguing flavours of classic Laphroaig peat combined with accents of fruity blueberry, sweet, and rich butterscotch. This combination of classic and modern flavours showcases the evolving vision and individuality that Ian Hunter had in mind for Laphroaig whisky, making it certainly a legacy of spirit that will endure. Whiskies released as part of The Ian Hunter Series are presented in a âcollectableâ hardback book.
The Laphroaig distillery was established in 1815 by Donald and Alexander Johnston. The Johnstons who founded Laphroaig were from the Clan Donald and are likely to be from the MacIain of Ardnamurchan branch of the clan.
Ian Hunter was a distant relative of the brothers who founded Laphroaig in 1815 and He took over the operation of the distillery in 1908. During his ownership Hunter launched Laphroaig as a single malt, began distribution in the US, and increased output by building two additional stills.
Hunter passed to Bessie all of Laphroaigâs secrets over the years. This included the idea of maturing Laphroaigâs spirit in ex-Bourbon barrels.
Today, it's clear to see the impact of Ian Hunter at the Laphroaig Distillery through the practices and innovations that are still followed. Ian is credited as the pioneer and innovator of this incredible whisky. Without him, the Laphroaig we know today would not exist.
He ran the business until his death in 1954, leaving the distillery and operating company in the hands of his secretary, Bessie Williamson.
Bessie Williamson, Laphroaig - First lady of Laphroaig. Bessie proved Scotch was not just a manâs world. She became a distillery owner in 1954 after Ian Hunterâs passing and was a pioneer of women in whisky.
The distillery has also released The Bessie Williamson Story, a 25-year-old Laphroaig, into global travel retail in honour of another manager and the only woman to own and run a Scottish distillery in the 20th century.

Among the standout names in this evolving industry is DOT Whisky, a brand that has quickly made a significant impact. This blog explores the history of whiskey in India and highlights how DOT Whisky fits into this storied tradition.
Whiskey production in India began during the British colonial period, when the British introduced their own distillation methods to the subcontinent. Initially, the focus was on creating spirits that could cater to the British palate, leading to the establishment of several distilleries across the country. These early whiskeys were often blended with imported malts and grains to adapt to local tastes.
As India gained independence, the whiskey industry started to evolve, focusing more on creating unique Indian styles and flavors. During the post-independence period, there was an increase in domestic distilleries and a growing interest in producing premium whiskey. Today, India is a hub for top Indian whiskey brands.

This success is a testament to the brand's commitment to quality and craftsmanship.
The DOT Whisky Approach
As one of the best Indian whiskeys, DOT exemplifies the modern approach to whiskey making in India. Despite being a new brand, its expertise in the art of aging is clear from the carefully selected barrels and careful maturation process. This dedication produces a well-balanced whiskey with a nuanced flavor profile featuring rich oak, subtle spices, and a hint of sweetness.
The Impact of DOT Whisky
DOT Whisky's rise to prominence is significant not only for its quality but also for its role in showcasing the potential of Indian whiskey on the global level. From Barrel to Bottle: Exploring the World of Alcoholic Spirits
Amidst the most consumed beverages, alcoholic spirits have played a significant role in human culture, shaping societies and traditions for centuries. In fact, according to National Geographic, by 1770, there were over 150 rum distilleries in New England. Over time, the evolution of beverage history reflects a rich tapestry of innovation, trade, and cultural exchange. Originating in the Caribbean sugar plantations, people during the 17th century discovered that molasses, a byproduct of sugar production, could be fermented into alcohol. Here is a deeper insight into some interesting aspects of alcoholic spirits.
Demystifying the Process of Aging in Alcoholic Spirits
The aging process of spirits is considered an art form that significantly influences the final productâs flavor and character. Aging spirits in oak barrels is a tradition that dates back centuries. The interaction between the spirit and the wood, known as barrel aging, imparts complex flavors and aromas essential to the spirit maturation process.
Various aging techniques have been developed to enhance the flavor development of spirits. The choice of wood, climate conditions, and duration all play crucial roles in determining the unique characteristics of each aged spirit. These factors demystify the intricate aging process that transforms raw spirits into refined beverages.
Beyond Basics: Understanding Spirit Categories
Liquor classification is an essential aspect of the spirits industry, providing consumers with the knowledge needed to explore and select beverages that suit their preferences. Let us explore the diverse categories of spirits, each with distinct production methods and flavor profiles.
Whiskey: It is classified based on the grain used and the aging process. Scotch whisky is made from malted barley and aged for at least three years, often with a smoky flavor. Bourbon, an American whiskey, is made from at least 51% corn and aged in new charred oak barrels, giving it a sweet, rich flavor. Irish whiskey is typically triple-distilled, resulting in a smooth and slightly sweet taste, while Rye whiskey, made from at least 51% rye, offers a spicy, fruity profile.
Vodka: It is distilled to be as neutral as possible, allowing it to be a versatile base for cocktails. However, regional variations can be found. Russian vodka often uses wheat, resulting in a smooth texture, while Polish vodka made from potatoes can have a richer, creamier texture.
Gin: This type of alcoholic spirit is flavored with juniper berries and other similar berries. London Dry Gin is known for its strong juniper flavor, while Plymouth Gin is softer and slightly sweeter. There are also contemporary gins that experiment with unique botanicals, offering a modern twist on the classic spirit.
Rum: Classified by its aging and flavor profile, white rum is light and clear, perfect for cocktails. Golden rum is aged longer, providing richer flavors with notes of vanilla and caramel. Dark rum is aged in heavily charred barrels, resulting in a deep, complex flavor with molasses and spice notes. Spiced rum is infused with spices like cinnamon and vanilla, offering a warm, aromatic profile.
Tequila: It is classified into several types based on aging. Blanco (or silver) tequila is unaged, offering a pure agave flavor. Reposado is aged for 2 to 12 months, gaining subtle oak flavors, while Añejo is aged for 1 to 3 years, resulting in a richer, more complex profile.
Craft spirits and specialty spirits further expand the alcoholic spirits, offering unique and often artisanal products that showcase creativity and expertise. Thus, spirits brands consistently innovate, introducing new products and reviving traditional methods to cater to evolving tastes.
How Regional Ingredients and Climates Influence Versatile Flavors in Spirits
Climate influence, along with temperature fluctuations and humidity levels, affect the rate of maturation and flavor development of spirits. Its impact on spirits imparts unique qualities to the final product. Regional spirits are profoundly influenced by local ingredients and climatic conditions, creating distinct profiles unique to their place of origin.
For instance, Scotch whisky derives its unique characteristics from the natural resources of Scotland due to barley, water, and peat used in its production to create a distinct flavor profile. Similarly, Islay Scotch, known for its smoky flavor, is made with peat from the islandâs bogs, while Speyside Scotch tends to be sweeter and fruitier due to the regionâs fertile soil and pure water sources.
Interestingly, tequilaâs flavor is deeply influenced by the blue agave plants and the region in which they are grown. Tequila from the highlands of Jalisco tends to be sweeter and more floral, while lowland tequila has a more earthy and robust profile. The volcanic soil and climate of these regions contribute to these distinct differences.
Sustainable Byproducts of Spirits Production
Spirit production generates various byproducts, often overlooked but crucial for sustainable practices. For example, the leftover grains from whiskey production, known as âspent grains,â are rich in nutrients and are commonly used as animal feed or in biofuel production. In brandy production, the grape skins, seeds, and stems left after pressing, known as âpomace,â can be distilled into grappa or composted as natural fertilizer in vineyards.
Reusing byproducts reduces waste and minimizes the environmental impact of distillation processes. Hence, innovative distillers are finding new uses for these byproducts, from animal feed to biofuel production. This commitment to sustainability is shaping the future of the spirits industry, highlighting the importance of environmental stewardship.
Future of Alcoholic Spirits
Emerging trends and shifting consumer preferences are shaping the future of alcoholic spirits. Consumers are increasingly seeking authenticity, quality, and unique experiences, driving innovation and diversification within the market. Hence, the spirits industry is witnessing a growing interest in craft spirits, sustainable practices, and premium products.
As the industry evolves, the rich history and cultural significance of alcoholic spirits continue to influence modern trends. The future holds exciting possibilities, with new flavors, techniques, and sustainable practices ensuring that the world of spirits remains dynamic and captivating.

putting my two cents in; i'm intently following this appleton business but let's not get ahead of good practice. i think seeing this post from the op tickles my skepticism button from the fact that they are now setting out to find facts in service of a narrative.
historians usually like to present their findings through narratives, but i find this quite a premature statement to make, and as much as the american occupation has been harmful, i find it this quite infantilizing of industrial japan. let's not forget why the usa ended up as an occupier in the first place.
i'm also finding this saga a bit light on sources, so i'll provide a few of my own. my main sources come from william r. shurtleff and his former wife akiko aoyagi through the soyinfo center. note: shurtleff and aoyagi's works have cited and dedicated to kikkoman inc., and the center also advises the soy industry. please keep your skepticism hats on.
first of all, let's set things straight by noting that kikkoman does not claim to produce semichemical soy sauce (æ°ćŒé€æČč shinshiki shoyu) anymore as of about 1965. [link, p.1543-1544, interview by shurtleff with kikkoman inc., 1980] "chemical soy sauce," a.k.a. hydrolyzed vegetable proteins (hvp) soy sauce, is the main non-fermented soy sauce produced at the moment. the only link i can find regarding "electrolysis" is this one blog without citations, and i am keen to believe this might be a game of broken telephones from the word "hydrolyzed" or a misinterpretation of how low-sodium soy sauce may be produced. i find it unlikely that electrolysis can outright replace anaerobic processing of organic molecules by bacteria. as a result, i find it a stretch that ms. appleton's singular actions, while influential in the short term, significantly and permanently altered the path of an entire industry.
it seems to me that shurtleff is also corroborating the story of appleton being instrumental in making semichemical soy sauce the main variety for a while in post-war japan; i feel like since he has access to kikkoman inc., he got the story from the same place as the op.
soy sauce wasn't some small-batch artisan product before the war, it was an active area of research by japanese food scientists and hvp "soy sauce" (i dont think you're allowed to legally call it soy sauce in many countries anymore) was industrially produced in at least republican china and showa japan, if not elsewhere. you could even buy the imported stuff in the usa in the 30s, and the brand still exists! [wiki link] also, i'm p sure maggi brand sauce is the same stuff but european.
there should be sources talking about this woman's ability to transform Japan's soy sauce production so heavily that today only 1% of all soy sauce is made with pre-WW2 traditional techniques.
so this is as useful as saying less than 1% of all shoes are made by cobblers using pre-wwii traditional techniques. food production is a science and evolves with the time; the american occupation is only a part of it. let's not forget that since china, korea, and south-east asian countries like indonesia have industrialized, they all developed techniques that are shared amongst businesses, while maintaining local varieties.
These days, the term soy sauce is distinct from traditional shoyu, and requires distinguishment because of such a radical difference the two products are.
i'm assuming you mean in english, and the terms ăăŸă tamari and é€æČč shoyu? the difference is in wheat usage: tamari uses little wheat similar to chinese soy sauce, as it is based in chĆ«bu (central japan) where soy sauce was first introduced from china, whereas the most common japanese soy sauce type, æżćŁ koikuchi, is fermented from about 50% soybeans and 50% wheat. to put it in american terms, it's the difference between bourbon and whisky: bourbon (about 50% corn) is a whisky but all whisky ain't bourbon.
soy sauce production matters aside, i think the american occupation's interactions with the japanese underworld and the remnants of pre-war industrial institutions is very interesting as a topic, and i'd love to hear more about how ms. appleton individually influenced such matters in one industry. that said, let's also be careful with our initial statements and our a priori intentions when engaging in historical research.
tl;dr: ms. appleton probably did not single-handedly change the soy sauce forever (in japan) and influence a traditional food through the american occupation. making soy sauce has been a science for decades at this point, but @inneskeeper is correct in that she was instrumental in popularizing semichemical soy sauce for a while as a post-war resource-saving move.
I cannot fucking believe how much I'm losing my mind right now over soy sauce history. I'll tell all of you about it after I finish this essay because I need to un-distract myself enough to finish it but what the fuck? What the fuck is going on? I'm losing my fucking mind.
#what the heck am i doing here lmao#im not a food scientist but i can do a lit review (:#voice of the canyon

Lead Distiller Nick Reiss stated, âWe are grateful for the recognition from the panel at this year's U.S. Open Whiskey & Spirits Championship where Kupu Spirits showed well in its respective categories. Grabbing Gold with our Barrel-Aged Gin and our upcoming Cask Finished Whiskey release reminds me that our craftsmanship is about honoring tradition, yet always striving for perfection and innovation. At Kupu, we'll continue to learn, refine our technique, and give back to the art of crafting spirits."
Among accolades received, Gold medal winner Kupu Spirits Barrel-Aged Gin is distilled from grain and a proprietary blend of botanicals including juniper, coriander, local citrus, angelica roots, and grains of paradise, then aged a minimum of three months via a Solera Aging method in Port casks.
