April and Sean (the recently Mr & Mrs!) just sent us through a couple of snaps from thier wedding today. these two really are an amazing couple of people that we enjoyed every minute of working with, and I just know that's going to mean a long and happy life together. We are so pleased to have been able to provide acoustic music for their ceremony at @burbrookforest , and thier first dance at @kuitpo_hall along with an outdoor party DJ session throught the evening, complete with lighting and even a first run for us on some Fireworks that we've recently added to our list of special FX. #marchmeetthemaker #day18 - skills Since I started my business in 2011 I have learnt many new skills, and I'm always looking to upskill at every opportunity. I've tweaked my recipes and baking techniques (although I still cannot bake a loaf of bread for love nor money!), I've taught myself chocolate making, royal icing techniques, painting on cakes, (and canvases but that's a different story), various fondant skills, sugar models, macarons (aka maca-f-in-rons in this house ;) ), delicious raw and vegan treats, not to mention business management and social skills - etc etc etc - but the one I want to highlight today is my sugar flowers. This Dahlia took hours and hours, and I could've gone on for longer for more of a statement flower, but sometimes we just have to say "when" lol I've been learning from the amazing Suzanne Esper in the UK, and hoping to spend a bit more time on these skills whilst we're all on lockdown. What a scary time for us all, and here in Australia, we're not quite *completely* as turned upside down as a lot of other countries. yet. I know, there is an awful lot of scaremongering and negativity online, so I've decided I need to get back on track, and try to reinstate a little touch of normality and pleasure to "life as we know it". After a mad couple of weeks with postponements, cake changes, with weddings and gatherings needing a different kind of cake; I've got my kids doing home learning for now, husband is WFH, and life is pretty much arse uppards for me, I need to get back to MY happy place, back to what we all know and love - CAKE!! (NB hubby & kids ARE my happy place also, but bloody hell, full time everyone is SO MUCH WORK!!!) Day 13 Meet The Maker topic is USP. As far as Tasty Bakes, my USP is me. As in a previous post - I care! I WANT you to have the best cake you can imagine, and I feel lucky to have the vision that I do. #marchmeetthemaker day 12 Learning Curve My kitchen has been so busy over the last few days I have not had chance to post on here, and I am really sorry about that, because i have actually had people stopping me in the street to tell me how much they are loving my #meetthemaker posts! 💓 So - my biggest learning curve has been macarons!! They really can be temperamental little fings... or something else beginning with F!! When I first started in business I must have made hundreds of batches of these, using every different method under the sun - tweaking cooking temperatures, timings, flavours, mixing methods, etc. If it's a damp day, they don't work, if it's a hot day, they don't work, if your oven is not the right temp, they don't work 🙄. They rise too much, then collapse. They don't rise. they don't get feet. They don't get bottoms. They don't get middles. they go too dark. They don't cook through. They can be, a PITA. Fingers crossed, I have absolutely got these bad boys figured. They're chewy, crunchy, moist, yummy, and I love the different flavours you can make them, and the colours can be stunning! So here's a pic of my little baby macarons, which are just the cutest little mouthfuls, and a picture of one of my first ever batches.
