When I WB meats, I put them (cold and cut) in the jars with nothing but maybe some seasoning, potatoes, garlic and/or onions, if preferred, no water as meat makes it’s own liquid, clean rims with vinegar for a good seal, place in water that covers jars at least 2″ above top of jar, and turn heat up. Okay, time to start the day of jam making/canning!
First up are peach based varieties: peach with cinnamon, peach with ginger (homegrown ginger!), and peach with raspberries.

I think I gathered enough strawberries for a little jam! They smell so good. I have a mix of red, white and wild strawberries.
Doing it in such small amounts makes it super easy, cleaning and slicing them took 5 minutes.

I added approximately the amount of sugar I thought it needed, then tasting it I decided that was too much and I added some vinegar to balance it out. I know usually recipes for jams say to use lemon juice, but I cannot be bothered to go buy a lemon every time I'm making a jam, so vinegar is a good alternative, and mixed with sugar makes it taste super good. In about 15 minutes of cooking it, it started getting thick and dark and stopped foaming around, that's when you know it's done.

I prepared a little jar by putting boiling hot water in it to sterilize it, then transported the jam in it while it was still hot, and then I just put it into a pot of boiling water and boiled it for 10 minutes. I left it in there to cool down, I noticed the seal on the lid is stronger if it's left to cool slowly. And it is done!

The entire process took me about half an hour and I have my first jar of strawberry jam. I did over-estimate how big of a jar I will need, but it's sealed well and will be delicious in the winter when I'm making pancakes. Also the entire apartment smelled delicious the entire day.
