Flammulina velutipes--Velvet Foot/Winter Mushroom/Wild Enoki
Ever wondered what those tiny, densely-clustered white mushrooms in the grocery store look like in the wild? No? Yes? Well, now you will. All photos mine, unedited.

They're orange, the caps are flatter and bigger, and the stipes are dark and velvety. They show up in the fall and continue to the spring. They won't pop up when it's below freezing but it literally only needs to be 1 degree above freezing and then they will! Be careful of lookalikes, but bright orange cap + dark velvet stipe + white spores is a pretty good tell. This only goes for eastern North America, though. I have no idea what lookalikes might be around in other areas. You can have them with pizza, in pasta sauce. Or you can fry them up in butter and serve with salmon in a red wine sauce (I did that one winter). :)
Word of caution: ALL edible wild mushrooms must be cooked before you eat them. Even if you don't get sick immediately there can be longterm effects. It's very difficult to overcook a mushroom, so do it well.
Word of ethics: always leave at a third of the young mushrooms you find, and only in a large flush. If there's only one, leave it be.

Velvet foot
The velvet foot grows in clusters on deciduous logs. They are not recommended for eating because - even though edible - confusing them with their deadly counterpart (the galerina) is easy. Nevertheless, wild velvet foot is the same species as the cultivated enoki available in supermarkets.

Enokitake is known under many names, such as golden needle mushroom, lily mushroom, seafood mushroom, winter mushroom, velvet foot, velvet shank or futu. In China it is known as enoki. It is edible & tasty too.

my heart jumped when I saw this lovely oyster (Pleurotus ostreatus) cluster along a path at the Pere Lachaise cemetery. spot the little velvet foot enoki (Flammulina velutipes) friends peeking out the bark too.

It’s crazy that it’s late December and there are still wild tasty things outside. I checked out one of my favorite foraging spots and found some new growth velvet foot, some older but ok Autumn Oysters plus garlic mustard greens and hickory nuts. All found within 20 yards of each other.
I was feeling lazy after Holiday festivities so I put the garlic mustard greens on Red Baron pizza, and a side of velvet foot on Corelle plateware with blue roses. Classy.

They’re all cooked and frozen and mixed with all the other mushrooms I found for that purpose, and I’m almost out of the perogie mushroom thing I did (with a bunch of boletes my bestie found on a hill). I have 9 containers! So now I don’t if I’m making pizza, lasagna, pasta, or soup.
My mushroom mix includes:
Schizophyllum commune (split gill) Flammulina velatipes (velvet foot/winter mushroom/wild enoki) Polyporus squamosus (Dryad’s saddle/pheasant’s back) Climacodon septentrionalis (Northern toothed polypore) Agaricus bitorquis (pavement/sidewalk mushroom) Agaricus campestris (meadow mushroom) Auricularia judae (wood ear) Calvatia giganteus (giant puffball) Lycoperdon pyriforme (pear-shaped puffball) Coprinopsis atramentaria (common inkcap/tippler’s bane) Coprinus micaceus (mica cap/glistening inkcap) Dacrymyces chrysospermus (orange jelly/witch’s butter) Exidia nigricans (black jelly roll/witch’s butter) Pleurotus populinus (oyster mushroom) Pleurotus ostreatus (pearl oyster mushroom) Hymenopellis megalospora Exidia saccharina (witch’s butter) Leucoagaricus leucothites (white dapperling) Tyromyces chioneus (white cheese polypore) and an unknown bolete (there are no known deadly boletes, and the poisonous ones have red on them or stain blue).
I also have Ganoderma applanatum (artist’s conk/painter’s palette) and Trametes versicolor (turkeytail), but I have different plans for those.
I’ve found other edibles but I didn’t know what they were at the time so I missed out on them for this year. Other edibles I’ve eaten but they were no longer fruiting by the time I started collecting for the winter.
