Pulp “Malai” Kofta with Veggie Pulao The leftover saga continues with the juicing pulp turned into flattish oval shaped ‘Kofta’/ Patties with a spoonful of Ginger Garlic paste, a spoonful of Besan & Baking Powder. Baked at 175 degrees C for 14 to 18 minutes. While these bake, blend into a smooth paste, 1/2 cup of raw Cashews, soaked in hot water for an hour & drained 1 red Onion 4 cloves of Garlic 1/2 inch of Ginger 2 large Tomatoes Add the paste above into a deep pan with, 1 teaspoon Turmeric, 1 tablespoon Kasuri Methi (dried Fenugreek leaves) Flavour with salt to taste and, freshly ground Black Pepper Add water as needed to thin the sauce and cook until the raw smell goes off. I used a deep pan with a lid, as the mix tends to spatter….. everywhere!! Add in the baked/ airfried ‘Kofta’ into the gravy. Lightly spoon the gravy over & garnish with a pinch of Kasuri Methi/ dried Fenugreek leaves.
