Made these basic cookies a while back which turned out so well . These are guilt free snack as they have good amount of protien and also can be made with natural sugar replacing processed ones . Also these are eggless , so all my vegetarian friends can enjoy this anytime 💕 . I have a detailed youtube on this . These are not like ordinary cookies , I have used gram flour as a secondary flour to give the punch of protein and some Indian flavour . My mom told me they sometimes imparted the flavour of "besan ladoo" (indian dessert) . . Follow - @veg_bites_by_avika . . The recipe is super easy and can be altered really well . You can use honey/ Jaggery/ brown sugar to replace the traditional processed cane sugar . These can be eaten after gym as well . Besan Badam Dooh or Chickpea Flour and Almond Milk is a winter special drink that is popular in the Northern States of India. It is a home remedy for cold-related infections and chest congestions. Mom used to give us a glass of this warm delicious drink at night just before going to bed during the winter months. Now I give it to my kids sometimes when the temperatures here are below freezing point or when they suffer from cold and cough. The milk has a nutty taste of roasted chickpea flour, the richness of almonds. The kids also like this warm milk.
As per Ayurveda, the milk has all the ingredients like turmeric, ginger powder and black pepper, desi ghee that protect and strengthens the body to fight infections, build immunity, are anti-carcinogenic, remove toxins from the body, good for hair and skin.
  Today is the Day 3  for week 1 Blogging Marathon#96 and this is my 3rd post for Kid’s Delight Event with the theme Winter Warmers. My first post was on Besan aur Badam Ke Ladoos for winter warmers. If you think that these ladoos are too heavy and sweet for to consume due to sugar and ghee in it, you can have this milk as in this the amount of sugar and ghee used is very less and can be adjusted as per your requirement. Also, this is a recipe that comes handy when kids or grown-ups are down with cold and cough and want a good night sleep!! Let’s see the recipe of this healthy and nutritious warm drink..
Winter Special Besan Aur Badam Dooh

Winter Special Milk, with chickpea flour, almonds and spices like turmeric, black pepper, ginger powder. Learn how to make this magical drink that nourishes and protects the body during cold and harsh winters. 
2 Cups Milk
2 tbsp Besan/Chickpea Flour
2-3 tbsp Finely ground Almonds
1 tsp Desi Ghee
1/4 tsp Turmeric Powder
1/4 tsp Ginger Powder
A pinch Black Pepper
2-3 tsp Sugar (or as required)
Dry roast besan/chickpea flour till it starts to give nutty aroma, add and mix desi ghee and roast further till light brown in color.
Add milk and mix nicely, make sure no lumps are formed, add turmeric powder, ginger powder, black pepper powder and sugar.
Boil for 3-4 mins, keep stirring in between to avoid burnt milk at the bottom.
Serve hot.
You can add saffron strands in place of turmeric powder.
We prefer moderately sweet milk, add sugar as required.
For vegans, you can use almond milk or any non-dairy milk, though I have never used it in this preparation.
Do try this warm and nutritious milk preparation when you want something comforting or suffering from cold-related infections. Kids and grown-ups all are going to love this. Take this before going to bed and avoid taking cold water after this. That’s what my mom always told us as it benefits best during night when the body is at rest and absorbs all the nutrients well.

Gluten Free Vegan Laddoos
I had one of those moments today when I realised I’d promised to bring a dessert to a dinner party but didn’t have time to go shopping for any ingredients! Looking in my cupboard it seemed like I didn’t have much in the way of gluten free vegan desserty ingredients. 
What I did have plenty of was gram flour... I started researching what desserts could be made with gram flour (otherwise known as Chickpea Flour or Besan). Given the limited ingredients I had I soon narrowed it down to Indian type sweets called Ladoo. I had to combine several different types of recipes to cater for not only my dietary requirements, but also accounting for my lack of ingredients. They turned out surprisingly well considering I wasn’t really following a recipe!
Ingredients:
2 Cups Gram Flour
1/3 Cup Coconut Oil
1/2 Cup Powdered Sugar
6 Cardamom Pods (grind seeds with a pestle & mortar, alternatively use 1/4 Tsp ground cardamon)
1/4 Tsp Ground Cinnamon
1/8 Tsp Freshly Ground Nutmeg
1 Tsp Honey
1/4 Cup Toasted Slivered Almonds
Instructions:
Melt the coconut oil in a pan on a medium/low heat.
Add gram flour and regularly stir to toast the gram flour until it’s a golden color and has a nutty smell to it - roughly 20-30 minutes.
Added spices & sugar and cook for a further 5-10 minutes, stirring regularly.
Take off the heat and let cool.
While it’s cooling you can gently toast the almonds in a clean, dry frying pan.
When the mixture is cool enough to touch add the honey and mix well, followed by the almonds.
Form into 1 inch sized balls. You should be able to get about 15-18 balls.
Enjoy!

Chakli recipe with step by step photos. Chakli is a deep fried snack made from rice flour, gram flour, wheat flour or a mixture of lentil flours. They are also known as Murukku in south.
I am still making Diwali snacks and sweets before the badi Diwali (big Diwali) & laxmi puja tomorrow. Made quite a number of goodies today, but managed to click only two recipes, which includes this chakli and Cornflakes chivda.
Chakli or Chakri are made as a part of the Diwali faraal (Diwali snacks and Diwali sweets) in maharashtra and Gujarat. There are many versions of making chakli. Sharing today a family recipe of instant chakli or rice flour chakli.
You will need a chakli maker to prepare these chaklis. these chaklis are made from rice flour and gram flour (besan). I have not made them spicy, but if you add more red chili powder or even garlic-green chili paste, they will become spicy. I have given tips wherever possible in the step by step recipe.

How to make chakli recipe
1. First take the rice flour and gram flour in a bowl.
2. Add the carom seeds, cumin seeds, sesame seeds, turmeric powder, red chili powder, asafoetida and salt.
3. Mix everthing with a spoon.
4. Heat butter or oil in a bowl or small pan.
5. Add the hot butter or oil to flour mixture.
6. Mix the butter/oil with your fingertips with the flours.
7. Heat water till it starts boiling.
8. Add this hot water in parts to the flour mixture. Mix with a spoon.
9. Add more hot water as required and begin kneading.
10. Knead and form a dough.
11. Knead to a dough which is firm. Cover and let the dough rest for 30 minutes.
12. Apply some water in the chakli/murukku maker and place a portion of the dough inside it.
13. Tighten the lid and Press the chakli maker to prepare the chakli. move in rounds to get a spiral shape. Make the chaklis on butter paper or aluminium foil, so thats its easy to remove them. Tip 1 – if the chakli breaks while forming them, this means that the dough does not have enough moisture. Add 1 or 2 tbsp of water and knead the dough again. Tip 2 – if you are not getting proper shape, this mean that the dough is too moist. Add some flour and knead again.
14. Break the dough towards the end and press it to the last concentric circle of the spiral.
Frying chakli
15. Heat oil for deep frying in a pan. Take a small piece of the dough and check the temperature of the oil. If the dough comes up gradually, then the oil is ready. If the dough sits at the bottom, the oil is still cold. If the piece of dough comes up briskly and quickly, the oil is too hot. Tip 3 – have a bite into the piece of dough and if it tastes hard, add a 1 or 2 tsp or ½ tbsp of oil or butter to the dough and knead again.
16. Lift the chakli gently and slid into the hot oil.
17. Fry 3 to 4 chaklis at a time. Don’t over crowd the kadai or pan while frying. Tip 4 – check the first batch of chakli. If it appears that the chakli has absorbed oil or breaks in oil, then add some rice flour, about 1 to 2 tbsp and knead again. This happens if too much fat has gone in the dough.
18. Make chaklis with remaining dough on the butter paper. Cover them with a dry kitchen napkin, so that they don’t dry out.
19. Fry the chaklis till golden.
20. Drain chakli on paper towels to remove excess oil.
21. Fry the remaining batches in the same way. Once the chaklis are cooled at room temperature, then store them in an airtight box or jar.
22. Serve chaklis plain as a snack with some masala chai.

1 tablespoon sesame seeds - white or black (safed til or kala til)
oil for deep frying
salt as required
InstructionsMaking Dough

Notes
I have not made them spicy. To make the chakli spicy, you add more red chili powder or even garlic-green chili paste.

Winters are the time when all you need is something warm and comforting, and there is nothing comforting than a bowl of soup with garlic bread on the side. I try to make wholesome soups for dinner, kind of one bowl meals as these are one of the best ways for me to sneak in multiple veggies in one bowl for my kids. This Butternut Squash and Tomato soup with Red lentils is healthy nutritious and is ready in under 15 minutes total, in my Instant Pot or any pressure cooker.
It’s been a month that I got Instant Pot, and I am trying out various dals, curries, soups in the Instant Pot. Yesterday I made this Butternut Squash and Tomato in my Instant Pot. The soup has the goodness of Butternut Squash, tomatoes, ginger and garlic and is spiced with Indian garam masala, turmeric for immunity against colds and infections and protein-rich Red lentils!! Red Lentils add so much flavor and structure to the soup. Pureeing the soup makes it creamy without adding any dairy like cream or milk. Butternut Squash makes it extra creamy and gives it a hint of sweetness and tomatoes add to the tanginess in soup.
Butternut squash with its sweet flavored like pumpkin and is a great source of omega 3s and beta-carotene. It’s also an excellent source of various vitamins like vitamin A, C & B-6 and minerals such as manganese, copper, potassium and folate. The health benefits of tomato are known to all. A rich source of lycopene, carotenoids and anti-oxidants. Red Lentils are a great source of protein, especially for the vegetarians and vegans. Health benefits of Red Lentils include improved digestion, healthy heart functioning, helps in weight loss and is good for a healthy nervous system. Most of my soups are red lentil based, as this gets very quickly cooked along with other vegetables, unlike other lentils that take long to cook. Enjoy the simple and easy soup recipe with these highly nutritious ingredients.
Butternut Squash and Tomato Soup with Red Lentils

A creamy, healthy, nutritious Butternut Squash and Tomato and Red Lentils soup  made in Instant Pot, with just the right ingredients like ginger, garlic, turmeric for chilly winters evenings
1 Cup Butternut Squash
4-5 Tomatoes (Finely chopped)
1/2 Cup Red Lentils
1/2 Cup Finely Chopped Red Onions
2-3 Garlic Cloves
1-2" Stick/piece Ginger
1/2 tsp Garam Masala (or Curry Powder)
1/4 tsp Red Pepper Powder/Cayenne Pepper (or as required)
1/4 tsp Black Pepper (or as required)
1/2 tsp Cumin Powder (optional)
1 Bay Leaf
1-2 tsp Olive Oil
Salt to taste
Wash and soak red lentils in water for 10 minutes. Finely chop ginger and garlic. chop tomatoes and onions if sing whole onion. Add only half of it.
Switch on the Instant Pot in saute mode. Set the timer for 5 mins. to medium heat. 
Add oil when it is hot enough, add finely chopped ginger and garlic and saute till the raw smell of garlic goes away.
Add finely chopped onions and saute till light pink.
Add chopped tomatoes, cubed butternut squash and soaked red lentils.
Add the spices(garam masala/curry masala, turmeric powder, red chilli powder, cumin powder) and salt.
Add water. I added around 2-3 cups of water initially, then can add more water as per required consistency of soup.
Cancel the saute mode, and switch to pressure cook mode. Cover the lid and seal. Pressure cook on high for 5 minutes. 
After 5 minutes, do a quick release, open the lid and blend the soup with the immersion blender or in batches in a regular blender until creamy and smooth. 
Serve the hot soup with garnished with cheese/ nuts of choice with some garlic bread or steamed rice or on it’s own.
You can add some cheese or cream while blending the soup to make it more creamy and cheesy. Add some fun to soup for kids, serve the soup with some goldfish crackers for the crunch factor in the soup.
To make the soup in the pressure cooker, add all the ingredients as per the recipe and cook the soup till 2-3 whistles. Blend the soup with immersion blender or in batches in a regular blender and serve hot. 
Pls Note.. one pic showing the Instant Pot Pressure cook setting to 5 mins is missing.. will update soon. 
Also, I have the Instant Pot Ultra Model, but these setting work for cooking the soup in other models as well. Only the display screen of Ultra is different than the earlier models.
Few pointers to keep in mind to enjoy it more.
I use fresh tomatoes to make the soup, you can use canned tomato paste or canned diced tomatoes in it.
Also, I usually blend the soup to a creamy consistency, you can leave chunks of tomato and butternut for a kind of chunky soup.
 I buy diced butternut squash from store to avoid peeling and cutting, and it is easier and quicker to use in recipes.
Adding some grated cheese or some greek yogurt on the top will add up to the creaminess and taste of the soup, especially for the kids.
You can add some pasta to it to make more filling but trust me the soup is in itself quite filling.
Make it a little thicker and you can use it as pasta sauce to your favorite pasta. And since the soup is so creamy, there will be no need to add any cream to it.
Adjust the consistency of the soup to make it thicker or thinner.
This comforting bowl of goodness can be enjoyed with garlic bread or some steamed rice on the side.
The soup can be frozen for 2-3 days.

Gur Makhana/Spiced Jaggery Puffed Lotus Seeds recipe | How to make Makhana especially for winters with spices like dry ginger powder and sesame seeds
Gur Makhana recipe with makhana sweetened with jaggery or gur, a crunchy, nutritious snack for kids and grown ups. It is gluten-free and can be made vegan friendly.
Here I present you Gur Makhana recipe especially for winters, where I have spiced these sweetened seeds with spices like fennel seeds, dried ginger  and black pepper powder and added sesame seeds. These nutritious spiced and sweetened seeds are suitable for consumption for kids and adults alike. It’s just like caramel popcorn spiced with ginger powder!!
Many of you must be familiar with Makhana. For those who do not know Makhana, these are seeds from Lotus plant which is very commonly found in Asia. Recent studies have shown that these are one of the Super Food which have all the vital nutrients from all the essential food groups.
Puffed Lotus Seeds or Foxnuts are very popular since ancient times in Indian Cuisine. It is consumed as snack especially during fasting time as these are light on stomach, low in calories and as mentioned above have all the vital nutrients.
My kids love Makhana both as sweet and savory snack. For savory snacking I saute in butter with little salt. It tastes just like buttered popcorn.

Other winter special snacks that your can make.. Besan aur Badam Ke Ladoo, Wheat Ragi and Edible Gum Ladoos, Mixed Nut and Gur Chikki, Til and Khus Khus Chikki with Coconut Sugar and
Ingredients for Gur Makhana
You can make it with the ingredients of your choice. Usually only jaggery is used for making Gur Makhana. Many add coconut flakes and add cardamom for flavour. It is winter season now and with below zero temperatures, I added Dried Ginger Powder/ Snooth, Fennel seeds/Saunf, Crushed Black Pepper(Kali Mirch) and black salt which help to keep body warm and also help in digestion of food.

Desi Ghee is used usually to roast Makhana, but you can use any other oil like Olive oil, Coconut Oil for vegan friendly version.
If you plan to make these in summers then you can skip sesame seeds and ginger powder as these heat up body.
You can also add some nuts along with Makhana for a more nutritious crunch.
Let’s see how to make Gur Makhana /Spiced Jaggery Puffed Lotus Seeds
First step is to roast Makhana till crisp. For that add ghee in a pan/kadhai, add makhana and roast on low flame. Check the doneness by crushing a seed between index finger and thumb. It should have a nice crunch and crush easily.
Once Makhana are done, transfer to a plate/dish.
In the same pan, add sesame seeds and fennel seeds and lightly roast the seeds till these give nutty aroma. Take out and keep aside.

Add water and jaggery powder in a pan and make syrup. If you are going to use the same pan, let it cool down a bit, as water may splutter out of pan is hot.
Cook syrup till one thread consistency.
For that dip a spoon lightly in syrup, drop it on a plate/dish. Take a drop of it and touch the syrup with clean index finger. Press between thumb, then pull apart. One thread should form without breaking. The syrup is ready to use.

Take off pan away from flame and add sesame seeds, fennel seeds mix and roasted makhana. Mix well coating all seeds nicely.
Transfer carefully to another completely dry dish/plate. Let it cool and store in an air-tight container.
Enjoy the crunchy munchy snack whenever you have the hunger pangs or with your tea.

The same recipe can be used for making Jaggery coated nuts like almonds, cashews and hazelnuts.

Sugar-free, fat-free Rice Krispy treats!! Yes you heard me right. These Rice krispy treats are no-bake with dates ,figs and walnut and chia seeds perfect those times when you need something to munch on or in between meal food cravings. It’s Day 2 for Week 4 of  #96 Blogging Marathon, the theme for this week is How about elevenses?. Elevenses is a short break taken at around 11 a.m. to consume a drink or snack. The name and details vary between countries. Chana Murmura  was the first post for this theme.Amd these Date and Fig Rice Krispy Treats are perfect for those times. Light and fulfilling!! I had planned to make Date and Fig Oats bar for the theme but then noticed that I ran short off oats, had some rice krispies in the cupboard, added these instead of oats and here I had the crunchiest no bake, sugar-free energy bars.
Dates and Figs are one of the richest sources of fibres,iron, calcium, vitamins and other minerals. These are rich in natural sugar so can be substituted for white sugar in deserts by those on sugar-free diets. These promote bone strength, brain health and are one of the richest sources of antioxidants.Walnuts and Chia Seeds another superfood that are rich source of antioxidants  and Omega-3 fats. Rice Krispies are gluten-free, low in cal and fat free.
Let’s see how I made these healthy, fat-free, sugar-free no bake energy bars..
Dates and Fig Rice Krispy Treats
1 Cup Rice Krispies
5-6 No. Figs
1/2 Cup Dates
1/2 Cup Walnuts
1 Tbsp Chia Seeds
1-2 Tbsp Almond Butter (or use Coconut Oil)
In a Food Processor,very finely chop dates and figs. 
Add Chia seeds and chop Walnuts finely. 
Add Almond Butter and and mix it nicely. 
Transfer the contents in a microwave safe bowl, and microwave for 30 secs, to warm up the mixture so that it is easy to bind with the rice krispies.
Mix in the rice krispies and with mixture, bind the mixture well and transfer to a parchment paper lined pan and flatten the mixture to level it. 
Keep in the refrigerator for minimum 30 mins, after that take it out cut into pieces of required size and shape.
Incase you don’t have almond butter, use coconut oil.
You can also use instant oats instead of Rice Krispies.
To make it nut free, add pumpkin seeds or sunflower seeds  and coconut oil. 
Do make this light and healthy energy bars. Perfect to give to kids in lunchboxes for snack time. So perfect for busy professionals who many times miss on the lunch. So apt while travelling. These are suitable for vegans and are gluten-free.

Roasted Chana Murmura is a healthy low fat snack that can be had to satisfy the hunger pangs in between the meals or with the evening tea. Murmura or Puffed Rice is popular in the Indian Subcontinent, as it had in form of snacks or a breakfast cereal or forms an important ingredient of the popular Indian street foods likes. Bhelpuri, Murmura Bhel, Jhalmuri etc.
Puffed rice or murmura is very less calories low in fat and light on stomach. Though it is not a good source of protein or fibres. It can be eaten without any guilt by weight -watchers. It is gluten-free and suitable for vegans. During our summer vacations, I and my sister used to munch on these whenever we felt hungry during those long summer days. The crunchy Murmura along with the roasted chana was a full-filling snack for us. My parents often have this with their evening tea. Murmura is also known as Lai in many parts of North India. Apart from being eaten as savoury snack , it is also used for making ladoos or sweet balls or chikkis(brittles) with jaggery or sugar, that are consumed during festivals like Makar Sankranti and Diwali. To make this snack we need murmura(rice puffs), chana(roasted chickpeas without skin), curry leaves and spices like(red chilli powder, turmeric and dry mango powder). Murmura are roasted in mustard oil along with the chana and spices, till crunchy , cooled and then stored in an air-tight container.

Elevenses is a short break taken at around 11 a.m. to consume a drink or snack. The name and details vary between countries. Mostly popular in UK where it is similar to High Tea tradition with muffins, cookies and scones being served in the menu along with tea or coffee. We all agree how hearty be our breakfast or lunch we all feel some  kind of craving to eat something around 10 or 11 in the morning or around 4-5 in evening. These light and healthy snacks are so perfect for those hunger pangs. Some of the light and healthy snacks that I usually keep ready for me and pack in kids lunchbox for snacktime–dry fruit bars, ladoos(Besan Ke Ladoo, Mix Fruit Salads,Whole Wheat Ladoos with Edible Gum or Mixed Nuts or Healthy Muffins and  Cookies– Almond and Coconut Cookie) to name a few.This low calorie and low fat Murmura or Chivda are some of the other snacks that can be eaten for mid-morning or at evening with tea. Will be updating some more recipes for the same in coming days.
Let’s see how I make this light snack.
Chana Murmura
A light and hearty low calorie and low in fat snack of murmura or puffed rice and chana/roasted chickpeas without skins. Perfect for Mid-morning or evening time hunger pangs. 
2 Cups Murmura/Rice Puffs
1 Cup Chane/Roasted Chickpeas without skin
2 Tsp Mustard Oil/Any flavorless oil
1 Tsp Jeera/Cumin Seeds
4-5 Curry Leaves
1-2 Dry Red Chillies
1/4 Tsp Turmeric
1/2 Tsp Red Chilli Powder
1/2 Tsp Dry Mango Powder (optional)
Salt(to taste)
Heat oil in a non-stick or heavy bottomed pan , add curry leaves,cumin seeds, dry red chilies. Add roasted chana and saute for l4-5 minutes, till the chana turm dark brown in color. Take care not burn Chana.
Add the spices and murmura and mix well. Saute for 2-3 minutes, check for the crunchiness of murmura. Roasting the murmura makes it more crispy and crunchy. 
Once done, transfer to another bowl or plate, let it cool and store in an air-tight container. 
You can add peanuts, cashews or almonds as per your choice.
Roasted Chana/Chickpeas without skin are available in Indian grocery stores(outside India). 
Use any other oil instead of mustard oil.
If using mustard oil, heat it till smoking point, let it cool a little add curry leaves and jeera prepare murmura. 
Do make this light and hearty snack. This is so perfect to pack when travelling, add up some more nuts of your choice and can be served or packed to gift your friends and loved ones during festivals like Holi and Diwali.
