Brewing Tea The Right Way???
Almost daily I get asked, “How do I make loose leaf tea? Or What’s the best way to brew loose leaf?”
In my shoppe where we only offer western based teawares, answering this question is very simple. But when talking to people who have heard of gongfu or other brewing methods, and ask “what’s the best way?��, it becomes a little more difficult. As a major fan and practitioner of gongfu cha, I’m inclined to say that gongfu is the best. But is it? Well, the answer is yes... and no. I think the question can be answered based off two trains of thought. The first based off the tea itself and the other based off of the individual. More can be said about the tea itself then the individual, as this is much more subjective.
A person can take a good quality tea and brew it in the most obscene way a connoisseur could think possible, and believe they are doing it the right way. For example, taking an expensive, spring green tea and dropping a few tablespoons of it in a pot of full boiling water for 10 minutes until it’s piss yellow, bitter and thick like syrup. To someone like me, this would be a completely wrong way to brew green tea, but to the individual, this is how they like it and therefore for them, it is “right”. Now whether or not there is someone out there who actually brews green tea like this, I’m not sure, but as much as I hope not, I’m sure there is!
Another person may take the same green tea, and brew it with a certain temperature water, with a weighed-out amount of leaf, for a strictly timed infusion, in a certain vessel. To someone like me, this would been seen as correct and to the individual would be seen as “right” as well, both because that’s how they like it and also because they may have taken something extra into consideration. That being the tea itself. Taking the tea itself into consideration will give a wealth of insight into how to brew a tea “right”. And this is where the much more technical side of modern day gongfu can come into play.
A major part of gongfu in modern day, is the strict control of several variables, such as water temperature based on tea type. Ratio of leaf to water. Vessel size and material. And of course, infusion times based around number of infusions of a particular tea. And these variables, put together can create the best cup of tea, because the variable were based on the type of tea. However, does this mean gongfu works best for all teas? NO! For example, Japanese green teas such as Sencha and Gyokuro respond to and brew best when using a kyusu teapot. Why? Because these pots were made and designed specifically for brewing Japanese green teas, based on their specific characteristics. So, it shouldn’t be a surprise that your Gyokuro didn’t hold up well being brewed with a gongfu tea set.
Another great example would be black teas. While many Chinese black teas (hong cha) perform well using gongfu brewing, black teas from Sri Lanka, Kenya, and India, may not perform so well. The reason for this again, is based on the characteristics of the tea itself, and therefore should be brewed accordingly. Turkish tea is a great example of this. Turkish grown tea is processed to be made into a concentrate using a Turkish samovar or double teapot. This method is the traditional way of brewing tea in this part of the world and the tea leaves produced are meant for it. So, why should you expect Turkish tea to taste just as good because you brewed it with a gongfu tea set? You shouldn’t!
But ultimately, I think what it comes down to is that there are two trains of thought, based of two types of tea drinkers. The person who “likes and drinks” tea, and the connoisseur. The person who likes tea will brew teas in the simplest method without very much thought beyond whether or not they like it. The connoisseur will brew their teas based not only on how they like it, but also based on the study of the tea itself. One side sees tea as a drink. A hot beverage made by throwing some leaves in hot water and calling it a day. The other sees tea as a way of life. A special plant that requires extra consideration and passion. And who, quite often, will look at the everyday tea drinker and tell them they're doing it wrong. An opinion which is still subjective, just based off a little extra or a lot of extra thought.
But as a connoisseur, firmly believing, like anyone else, that my methods are “right”, should I be turning my nose up to people of the other mind? Should I be outright telling them they’re wrong? Or should I be taking all that time studying and tasting and put it towards educating them in a positive and progressive manner? Yes! Because there’s always room for improvement, and there’s always something new to learn, which is why for a connoisseur especially, tea journeys never end. And if you teach somebody, something new, who knows they may come back to tell you how much more they like their tea now and vice versa!
