Preparing for dinner Saturday afternoon, one of the legs of the dining table cracked. I couldn’t believe it. It wasn’t even a year old. I put a small table from outside under that corner to support it. I also brought in the table from outside so I could seat everyone. I forgot to take pictures though, sorry.

Tartufi novi biznis u BiH: Brzo jednostavno i skupo
Skupocjene gljive tartufi, čije cijene po kilogramu dostižu i po nekoliko hiljada eura, polako „sele” u sjevernije krajeve, pa tako i u Bosnu i Hercegovinu.
Njihovo postojanje potvrđuju sve češći pronalasci.
Tartufi ili gomoljače (lat. Tuber) su rod gljiva iz porodice Tuberaceae. Obitavaju ispod zemlje, na dubini od 10 do 30 cm, zbog čega ih je teško pronaći u prirodi. Za pronalaženje se koriste posebno obučene životinje koje njuhom otkrivaju mjesto gdje se mogu pronaći zrele gljive.
Dvije najznačajnije vrste tartufa su bijeli (Tuber magnatum) i crni (Tuber melanosporum). Bijeli tartuf se ubraja među najkvalitetnije te postiže najveću tržišnu cijenu. Tartuf ima specifičan jak i prodoran miris, nalik na bijeli luk i stari sir. Kvalitet i cijena ovise o izgledu, mirisu i staništu (uz koje su drvo pronađeni) itd.
Nikli kao gljive poslije kiše…
O postojanju tartufa u BiH pisao je ugledni zenički ekolog profesor Akif Smajlović, koji je na području izletišta Smetovi kod Zenice pronašao bijele tartufe. Smajlović je sa prijateljima brao planinsko bilje i gljive kada je pronašao bijeli tartuf. Razgovarao je i sa stanovnicima Istre, koji su mu objasnili kako kod njih već više godina ima manje tartufa, koji „bježe” u sjevernije krajeve.
Nakon Smajlovićevog pronalaska, uslijedile su i vijesti iz Breze, sa područja Orahova, gdje su otac i sin, koji se bave branjem i prodajom gljiva, uspjeli pronaći nekih 350 grama bijelog tartufa.
Vijesti stižu i iz srednje Bosne. Dragan Lujić, limar iz Viteza, slučajno je otkrio tartuf u šumi nedaleko Busovače. Šetao je bosonog i nagazio na nešto. Kada je raskopao zemlju, pronašao je gljivu. Kao dobar poznavatelj gljiva odmah je prepoznao o čemu se radi, a ugostitelj Vlado Lovrinović iz Bile kod Viteza, navodi kako je otkupljivao tartufe od ovčara Mehe s Vlašića. U talijanskom institutu potvrđeno je da se radi o tartufima visokog kvaliteta.
Lovrinović navodi kako su svi sumnjali da se radi o tartufima, jer su oni obično vezani za istarsko područje. Zamolio je prijatelja iz Slovenije da sa sobom ponese nekoliko komada i provjeri o čemu se radi. Nakon samo sedam dana stigla je potvrda da se radi o pravim tartufima. Nakon toga su tartufi ponuđeni i jednom Lovrinovićevom prijatelju iz Italije, koji ih je ponio u jedan od njihovih instituta. U Trstu su potvrdili da je riječ o tartufima.
Već duže vremena dolaze vijesti o pronalascima tartufa na Vlašiću. Travnički stručnjak za gljive Slobodan Ličanin je davno rekao da na Vlašiću ima tartufa, a otkrivani su i na široj lokaciji Jajca. Potvrdu da je zaista riječ o tartufima dao je i bh. mikolog Tomislav Lukić, autor više knjiga o gljivama, kao i čuveni hrvatski stručnjak za gljive Roman Božac.
Tihomir Radovac, direktor rudnika boksita u Jajcu, često odlazi u prirodu tražiti tartufe, a njegov pas Neki glavni je “krivac” za pronalaženje tartufa na ovom području. Mikolog Lukić navodi kako je od Radovca dobio malu teglu sa gljivama, a radilo se o crnim tartufima. Lukić dodaje i kako je još prije 40 godina mikolog Marijan Hrka u svojoj knjizi opisao mogućnost pronalaska tartufa u cijeloj Bosni i Hercegovini.
Glavni krivac za nalaženja „vlašićkih tartufa” je Meho Osmanović. Petnaestak kilometara od Gluhe Bukovice kod Travnika, do prvog staništa na Vlašiću ide se šumskim makadamom, a onda se stiže do Mehine drvene vikendice. On tvrdi da je prvi pronašao način kako pod zemljom otkriti kvalitetnu gljivu. Sam se, kaže, uvjerio i u njeno podizanje spolne moći te su klijenti brzo počeli dolaziti.
Zanimljivo je napomenuti da za ove gljive znaju gotovo svi šumski radnici, pastiri, ali i kradljivci šume. Pastir Huso Osmanović svjedočio je neobičnom prizoru kada su se pojavili ljudi koji su skinuli obuću i počeli nešto da traže. Kada ih je pitao šta rade, odgovorili su mu da traže tartufe. Huso navodi da ih nije nikada probao, ali da ih je viđao.
Meho Osmanović je danas najpoznatiji gljivar na Vlašiću, a već zna kako se prodaje gljiva u inostranstvu i ko su kupci, a kaže da i on sam tartufe traži bosonog, ali i uz pomoć psa. Od meda i tartufa pravi smjesu, za koju tvrdi da podiže spolnu moć.
Tartufi su pronađeni i na području Tuzlanskog kantona. Bijeli tartuf otkriven je na području planine Bišina kod Gračanice. U hrastovo-grabovoj šumi pronađen je kapitalni primjerak bijelog tartufa od 360 grama.
Ljetos su na području Krivajvići, općina Kladanj, dvojica sakupljača gljiva uspjeli da pronađu tartuf od 220 grama. Budući da nisu bili sigurni u svoj pronalazak, obratili su se stručnjacima iz oblasti mikologije Džemailu Ferhatoviću, vanrednom profesoru Prirodno-matematičkog fakulteta u Tuzli i profesoru Seadu Noćajeviću.
Oni su, na osnovu organoleptičkih i morfoloških karaktristika, potvrdili da se radi o vrsti Tuber magnatum, bijelom tartufu koji pripada klasi Ascomycetes, redu Tubelares, rodu Tuber.
U Unsko-sanskom kantonu također postoje područja gdje uspijevaju tartufi. Na lokaciji Majdanskih planina, između Sanskog Mosta i Ljubije, ove rijetke i skupocjene gljive mogu se naći u velikim količinama, tvrdi strastveni sakupljač gljiva Hamdija Ražić. Prema njegovim riječima, tartufe je izuzetno teško pronaći, s obzirom da raste dvadesetak centimetara ispod površine zemlje.
Prema njegovom mišljenju, prostor Majdanskih planina idealan je za rast i razvoj ove vrste gljiva zbog specifičnog sastava zemljišta, s obzirom da je ovaj kraj poznat po bogatim nalazištima željezne rude. Primijetio je da najbolje uspijevaju u prirodnim vrtačama i rupama, gdje ima dosta vlage.
Budući da su nepravilnog oblika, kaže da treba biti pravi majstor u njihovom prepoznavanju. “Naši stari su smatrali kako se radi o nejestivim gljivama, tako da na ovim prostorima ne postoji tradicija branja i pripreme tartufa. Međutim, u drugim zemljama su izuzetno tražena roba”, kaže ovaj gljivar i dodaje kako svaku lokaciju svojih pronalazaka drži u strogoj tajnosti, a i da želi nabaviti obučenog psa tragača.
Po šumama i gorama
Prijedorčanin Roman Ostojić pronašao je tartufe na Kozari i u okolini Prijedora. Ovaj gljivar i strastveni ribolovac, kaže, stalno je u prirodi, pa je tako otkrio i ove gljive. Njegova desna ruka je mješanka Lea, koju je sam obučio za traženje tartufa, nakon što je pročitao da svaki pas može postati tragač, ako ga to naučimo. Kaže da je obuka bila veoma jednostavna: u zemlju je zakopavao plastične kutije u kojima se nalazio komadić hljeba namazan paštetom od tartufa.
Osim pasa, tartufe uspješno pronalaze i obučene svinje. Iskusniji sakupljači gljiva ih mogu osjetiti pod zemljom, ukoliko pažljivo hodaju bosi.
Ostojić navodi i kako je njegov brat pronašao tartufe na Kozari te da ih ima svuda u okolini Prijedora, u Ljubiji na Kozari. Planina krije bijeli tartuf, ali ima i crnog, tvrdi Roman, koji vjeruje da gajenje tartufa može biti odlična perspektiva u budućnosti, ali da treba značajno uložiti u zasade drveća, zaraženih micelijem ovih gljiva.
Ni uposlene u Nacionalnom parku Kozara ne čude pronalasci tartufa, jer se prema istraživanjima na ovoj planini može naći 300 vrsta gljiva. Prema dostupnim informacijama u BiH, nema pouzdanih i konkretnih podataka o nalazištima tartufa, izuzev sporadičnih slučajeva koje bi trebalo registrovati.
