Making patoleos was one of Avozinha’s favourite family activities, just like how she’d like to spend time making Christmas sweets together. This is the first 15th August without her. 🥺 Happy Feast everyone! Happy 75th Indian Independence Day!! Patoleos are steamed Goan sweet parcels made with a thick rice paste and a filling of jaggery and freshly grated coconut mixed together. Turmeric leaves are washed and prepared by applying the rice paste, followed by the stuffing. These are then steamed. The aroma that fills the home is so nostalgic. It is so mesmerising to fathom how Spring can be a reminder that new life is born once again as the season changes. The bright colours and warm sunshines are a reminder every day to have a more positive outlook to life. Yesterday, I handed in my 4 weeks notice at work to follow my passion and dreams. Feelings: A heavy load is off my shoulders. I feel happier, lighter and brighter. Currently, I don’t have a plan B but my plan A is to focus and work very hard as a content creator. I don’t know what the future holds and I wouldn’t want to think of it either. I might be alone in this decision while many family, friends and acquaintances might disagree and remind me of the ‘what ifs’ but this time I’m going with my heart. I’ve always wanted to be a full-time content creator and I know I’ll do this! Everything will be just perfect. God will definitely provide and guide. I truly believe in this and have faith. Thank you to all of you beautiful souls that are with me here in my journey. We’re going to have so much fun in the next few months/years/decades.. and I can’t wait! Little note: Thank you for all your fervent prayers! Everything went well! I was just too exhausted yesterday to post the recipe so sharing it with you all today! We’ve been off meats for lent and I think of any kind of fish as something with that little mass. It feels like you’ve eaten something hearty if you’re not a big fan of pure vegetarian food. We both finished work early that evening and went to get some nice fish. I got the whole salmon for around £40. The fishmonger was kind enough to fillet it for us and I’m a happy girl if I don’t have to clean fish myself. I’d take that any day. Back home when we were young, if my mum wasn’t home and if we didn’t have a maid at that time then my sister and I were incharge of making lunch. I’d make her cook the rice, grate coconut and clean the fish. I’d do the rest. 😂 @eneidecotta remember those days? Anyway back to the recipe: A very simple fewer ingredients kinda recipe tbh. Wash the fillet. Wipe it dry. Place it on an oven tray. Drizzle on some extra virgin olive oil, black pepper powder, Himalayan salt, and a lot of finely chopped garlic. Grill the salmon until just done. Serve this salmon with simply sautéed mushrooms and spinach in garlic, olive oil and a pinch of salt. There! Dinner is ready in just a few seconds. Hassle free too! It really brings out the flavour of salmon. Healthy and just the best! If I was still having alcohol these days then I’d pair this with a glass of wine! It can never go wrong that way. Okay! I didn’t really do a fab job with the puris considering this was probably my 3rd or 4th attempt in making them half heartedly. I preferred Avozinha making them. She’d make the Goan version called Vode. Anyway, today I have to share this potato and peas curry. It’s simply delicious! This is an Odia version. Recipe courtesy @silanaveena14 I added a few extras and made it my own. This recipe is a must have if you’re looking for veg options to cook this Lenten season. This is how I made it today for dinner. Boil, peel and mash about 3-4 large potatoes. Keep aside. In a pot, heat some oil. To that add mustard seeds, asafoetida, urad dal and curry leaves. Leave them to crackle. Add some finely chopped onions, a coarse paste of freshly pounded garlic, ginger and green chillies and finally some tomatoes.. sauté it until the tomatoes turn mushy. Add turmeric powder, red chilli powder and garam masala to this and stir in little water. Next add some peas and more water as preferred. Add the potatoes and 1tbsp of besan or wheat flour. Stir well and let the gravy simmer. Add salt to taste and your dish is ready to be eaten with hot puris. This gravy can also be eaten with curd rice, chapatis, dosas, puris, etc. Definitely give this recipe a try or save it to be made on a later day. I’d say have a folder on Instagram called Veg dishes to make this Lent and just save this recipe there. You’ve got to try it out. Follow @trulysoulfullyeats for more veg recipes the next few days. Happy Pancake Tuesday!! The best Tuesday of the year!! Tomorrow marks the beginning of the Lenten season. My prayers go to all those suffering because of war all around the world. The world needs peace. Ukraine needs peace to prevail and it needs our support. #cookforukraine is a fundraiser started by @oliahercules and @alissatimoshkina (find the link in @alissatimoshkina’s stories) and what better day than today to support them. I made some Ukrainian Cheese Pancakes or Syrniki. They’re so so good by themselves but you can always add extra toppings, jam, sour cream or honey. They’re sweet, fluffy, cheesy and everything good!! I’ve made this recipe with Ricotta Cheese but you can use some Russian farmers cheese. ✨2 nos eggs ✨1tsp Madagascan Vanilla Extract ✨250g Ricotta Cheese ✨1/4 cup caster sugar ✨A pinch of Himalayan salt ✨1/2 cup All purpose flour and 1/2 cup to roll the batter in before frying ✨1/2 tsp baking powder ✨1/2 cup dried cranberries ✨Butter for frying, I used @lurpakuk Whisk the eggs,vanilla extract and ricotta together until light. Add sugar and salt and mix well. Next add the dry ingredients and fold in well. I added cranberries but you can add raisins or any other dried fruits if you prefer or just make them plain. In a plate spread 1/2 cup flour. Put a spoonful of the batter and coat it well with flour. Fry these in oil or butter and enjoy with a nice hot cuppa. These pancakes are so homely and comforting. Morning Fam, Just a quick little pasta dinner from last night. We got some fresh tagliatelle pasta from @eatalylondon on our last visit there recently. This creamy fresh pasta dish is definitely a winner. It is quick and easy to make with every little ingredient just readily available lying around in the corner of your pantry. Just regular, everyday, humble, fresh ingredients. For this pasta recipe I used 2 nos chimichurri sausages I’d picked from the farmers market last Sunday. Dice them into small pieces. 2 boneless chicken thighs cut into thin strips. 5 cloves of garlic finely minced. One small white onion finely chopped. Salt and white pepper to taste. Half a cup of single fresh cream and about 250g of boiled tagliatelle pasta. 1 tbsp olive oil for sautéing everything. This pasta recipe literally took me 10mins to put together. Turn on your kettle. In a hot pan, add together the sausages and chicken along with a tsp olive oil. Sauté it together for a min. Add the boiled water to a pot along with some salt. Once boiled add the noodles and cook al dante. While the noodles get done side by side continue working on the meat in your pan. To that meat add finely chopped onion and garlic. Sauté for a few minutes and add the cream. Add some white pepper and pinch of salt to taste. Season well. Mix well and turn off the flame as you don’t want the cream to split. Add your drained pasta to this along with some pasta water to adjust the creaminess accordingly to your preference. Finish the dish with some freshly chopped parsley or if you’ve got some dried finely chopped parsley then just use that like I did. If you like grate some Parmesan on it and serve hot. I’d really like a nice glass of wine with this pasta last night but I let it go as I have a couple of plans this morning and didn’t want to get up late.
