While stocking up on a truffle quad* at the farmer’s market for the holidays, my chocolatier asked me about my saffron mentor, Jim, as she had not seen him with any saffron at the market this past autumn, and I related the sad story of how the deer got his corms last winter. Then she asked if I would consider selling her any of my saffron. I showed her pictures of the bottled crop and said yes I would consider it but only if she also let me show her how to get the most from the spice so that she could make more than one batch using a small amount of spice. Spice dealing and saffron preparation discussion will take place after we get through the holidays. She did some phenomenally gorgeous things with saffron in white chocolate last year. *Truffles shown clockwise: cranberry-orange with white chocolate, caramel ouzo, Tahitian vanilla and matcha tea.

Chocolate truffles by Trevani Truffles, saffron grown by me. 

 If interested, Trevani sells at the University District and Ballard farmer’s markets on weekends in Seattle. 

 This is a white chocolate ganache with saffron. I taught Annie, the owner/chocolatier, how to grind her saffron and make liquid saffron. We made some with gin and some with vodka, using half the gram of spice I sold her. (I sold her half my 2017 harvest.) One of the remaining quarter grams will most likely get infused into oil, which can be added to chocolate for dipping. 

 Imagine a dark chocolate ganache enrobed in this fabulous golden yellow....
