Risu took me out to a really, really lovely restaurant for my birthday last night - so if anyone wants to know what tasting menus are like buckle up and sorry about the blur on some of the pictures.
The place we went to is in Charleston, it’s called Zero Bar and Restaurant located at the premises of the Zero George hotel (name is from the street location, which is at 0 George St., how do you end up with the zero?).
We were early, and sat at the bar for a drink while we waited for the restaurant to open up seating. This is a tasting menu restaurant - that means you don’t really choose what to eat, and you are sitting down to experience a lot of courses. There are a few choices, but everything is determined by the chef and staff. It’s also the type of restaurant where if you tell them you are celebrating something (in this case a birthday), everyone on staff knows and knows who and makes a point of quietly acknowledging the occasion, from the point you walk in the door to the point you leave.
Risu had a vodka-based cocktail with calamansi and mint, I had a bourbon cocktail with leather and walnut syrup, and cherry.
We were seated on time at 6 and the server walked us through the menu and our options (we chose to add on the caviar service, I chose black truffle with my pasta and Risu chose to forgo the truffle, Risu chose the wagyu instead of duck for the entree), and the beverage manager checked in with us about our options for pairings (we decided not to do the full wine pairings since we weren’t spending the night, but he offered to do two half-cocktails to pair mid-meal for me with some of the dishes).
The first round of courses came out about 15 minutes after seating - I like the format they use here! Instead of a long train of singular dishes, you start off with rounds of small bites eaten in order before the main points of the menu:
The first set was 5 dishes. The first, which is not pictured, was an interactive dish. You place fresh shiso leaf on the palm of your hand and the server then gently scoops a round sphere of white, nitrogen frozen meringue perfumed with a fruity, savory interior on the leaf. As you eat it, the ‘smoke’ from the frozen meringue puffs out of your nose.
The dishes in the picture above were eaten counter clockwise starting from top-right: delicate, fresh oysters sauced and garnished with vanilla bean seed, chestnut mousse on a kelp cracker (it was a little concerning how they had to keep telling people not to eat the rocks, but I get it), a half-smoked ‘cigar’ that’s a crisp filo shell filled with beef tartare and cigar ash made from mushroom powder, and a ‘potted plant’ of young radishes rolled in butter and potted in a soil made of mixed grains and seasonings.
(Again, sorry for the blur, it was starting to get dark) The second round was 4 small dishes. In the first photo of three, these were eaten counter-clockwise starting from the top-right corner: small, dressed quail century egg served in a teaspoon, a sweet, donut fritter, and shrimp toast (I think that one was both our favorite). The fourth was a buñuelos with squid ink and passion fruit.
At this point the house manager checked in and also swept the table with a brush to clear off some of the debris from the various presentations, and to set our first round of silverware.
Not long after the plates cleared, the caviar. Service was brought out - the server portioned the caviar on our hands, at the join between thumb and index finger - this allows caviar to warm with the natural heat on your hand so that you can enjoy the briny sea flavor and creaminess - and prepared two shots of a nice Japanese vodka that was icing on the service tray - yeah I didn’t take a picture of the caviar part, since it was interactive, but the glasses were very pretty! The caviar was salty, oceany and creamy and the vodka was some of the smoothest I’ve ever tried.
The first singular dish out was a tuna tartare with crispy fried sunchokes. This was lovely and creamy, nice balance of textures and a pleasant balance between salty, sweet and fattiness.
After the setting were reset with fresh silverware, the second dish was a pasta dish - tortellini with tender, caramelized garlic bread and a sweet, citrusy cream sauce. This was the part of the meal that came with the truffle service, so you can see the plates with and without in the pictures.
(They offer both white and black truffles - personally I prefer black because they are nutty and warm in flavor, where white truffles are a bit too pungent for me)

I keep wanting to write about things currently going on in my life, so I should just write a quick catch-up post to get me current!
At the end of November, J and I went to 1) Warsaw, 2) Amsterdam, 3) Berlin, and back to Warsaw to spend Thanksgiving with his family there.
4) We then went to Napa because I had to be in San Francisco for work for a minute, and we ate at Casey Thompson from Top Chef’s restaurant and 5) did a bunch of wine tastings, including at the two vineyards where we have memberships! 6) Then we came back to NYC for two weeks to see my favorite band on their farewell tour and 7) spend a bunch of time with our NYC friends! 8) Then we drove down to Charleston, South Carolina, to meet up with my BFF and her husband for a couple of days including New Year’s Eve and 9) to see my favorite band since the year NINETEEN NINETY-EIGHT play their last show ever. It was so sad and so beautiful, and I don’t mean this as a slight to anyone else, but I felt so absolutely blessed that we were able to travel there together because we all work remotely and have so few responsibilities. We don’t have kids, and they have a trusted cat sitter, and it just made me feel really lucky. 🙂

One thing that Black people know how to do is cook. Over the years, the look of the culinary industry has drastically changed. From the traditional eating standards to Instagram chefs, the chefs in the aprons share one thing in common: being the best at what they do. For National Cooking Day on Sept. 25, Black Enterprise highlights five chefs killing the game in their respective lanes.
According to National Today, National Cooking Day was set up to encourage and inspire food lovers to try something new and explore the true beauty of the kitchen. From finger-licking good barbecue to fine-dining sous chefs, these five culinary artists have created a lane of their own.
Rodney Scott – South Carolina
Scott is known to make your mouth water with his traditional barbecue recipes and is often referred to as one of the U.S.’s master pit masters; the chef and business owner has made his mark as one of the industry’s favorites. His popular restaurant, Rodney Scott’s Whole Hog BBQ, is a staple in the Charleston community, serving fried chicken, pit-cooked chicken, mac and cheese, and, oh yeah, whole pigs.
He gives his feedback to those coming up behind him as a judge on Food Network’s BBQ Brawl.
Ayo Adeyemi – London
Chef Adeyemi has brought West Africa to the U.K. As head chef of London’s Michelin-star restaurant, Akoko, Adeyemi has changed how traditional African food is celebrated.
“When I was growing up in the industry as a young chef, restaurants like this weren’t around,” Adeyemi said, according to SCMP. “So I was forced to have to learn the modern British culture, the modern Asian culture, the modern French culture.”
Under the chef’s leadership, the menu now hosts an interesting take on jollof rice, served with BBQ, native blue lobster, and smoked goat with mustard seeds.
Nyesha Arrington – California
Her multiracial upbringing has made her keen sense of taste a powerful force in the industry. Arrington, who grew up with a Korean and Black background, trained with top cooks to pick up a spatula and has served as the head chef at Wilshire in Santa Monica, California. Arrington prides herself on concurring many food lanes, including “that path of France and nouvelle cuisine,” she told The New York Times, but she says the main thing she loves is finding the common denominator in food.
While she has made appearances in the Los Angeles Times and GQ, she currently stars as a judge on the cooking competition show Next Level Chef.
Jerrelle Guy – Florida
If you have a sweet tooth, make sure you’re following Jerrelle Guy. Her mouth-watering treats come with a unique spin, ranging from black bean brownies to brown sugar strawberry jalapeno lime pie. Her different recipes have given her a reputation to be proud of, catching the eye of fellow Black girl chefs like Carla Hall, and she was even nominated for a prestigious James Beard Award.
The cookbook author has also been featured on the Netflix series High on the Hog.

can I grind your dick up in a cheese grader and serve it to you as a substitute for cheese on your spaghetti?
ummmmm i thought very long and hard about this and i think my answer is very clear. while some believe that simply grinding my dick and serving it as cheese is a suitable alternative for a trip to the grocery store, this is not the case.
first, we must take into account the angle of my own penile erection when faced with a cheese grinder. according to years of study and observation, i have calculated that my erection stands at a 87 degree angle to my thighs and six pack. now, the average cheese grater is created in a trapezoid-shape that, when used correctly, can shred a block of cheese to grains in seconds. while this may be ideal when faced with blocks, the angle of my penis compared with the shape of a cheese grater would make grating conceivably impossible. any attempts to grate it will simply result in my erection slipping and sliding all over the place.
you may say, "hold it in place, and try again." to that, i must bring up yet another point of interest. many are unaware, but during excitement my penis has been known to get wet and slippery, essentially eliminating any dreams of holding it. many have tried in the past, to no avail.
secondly, we must bring in a comparison between the taste of my ground penis-flakes, and the average spaghetti cheese. in a 2017 survey amongst people of all demographics living in the cities: charleston, chicago, boston, and portland, researchers found that the strongest majority of people prefer cheddar cheese on their spaghetti. in my own experiences with cheddar cheese, i have found it to be salty, fresh, and chewy, working within itself to create a sort of party in my mouth. now, while very few have tasted the skin of my penis, i have heard from many that the taste is more akin to that of a cooked salmon, or a can of tuna. please, if you may, consider the image of a delicious bowl of spaghetti, sparkling with spices and delights, topped with a wondrous meat sauce and 4 slimy meat balls. your mouth waters as you see a waiter approach, one hand behind his back and one outstretched, holding a cheese grater. now picture your face as he reveals his other hand, not unveiling a delicious block of cheddar, but rather a FISH! he drops it unceremoniously onto your plate, a mischievous smile tickling his lips. you leap from your chair, outraged. how dare he! a man such as himself, bearing you such disrespect in front of your family, friends, and peers. the fish flaps wetly on the plate below you, splashing your chest with spaghetti sauce. at the look of anger you level towards him, the waiters smile melts slowly to horror. he backs away slowly, insisting that it was all a joke. oh, please mr johnson! it was merely a prank. just a yank on the old crank. i swear! haha! you look him in the eyes. "haha," you answer back, before grabbing a bread knife from the table and charging him. by this point, the waiter had backed himself half way to the kitchen, but as he turns and runs it becomes apparent that his submissive, unathletic build is no match for your perfectly toned thighs. you chase him into the kitchens, jumping just as you reach the doors. you grab his shirt from behind and haul him to the ground, straddling yourself over him and flipping him to look you in the eyes. "not so funny now, is it?!" you scream, plunging the knife into his chest. he screams loudly, blood gurgling from his throat and splashing your face. you pull your knife out and plunge it back in, repeating and repeating until his screams turn hoarse. from behind, another man, a chef 👨🍳 , grabs your arms and attempts to pull you off. you waste no time in turning to the side and plunging your knife into the full meat of his calf. a manic laugh escapes your lips as you yank the knife sideways, cracking bone and splattering blood across the kitchen floors. the chef falls to the ground with a scream, and you leap into the air. at this point, kitchen staff has gathered all around, keeping a far proximity from the flailing men on the floor. you straighten your collar, wiping blood down your shirt and removing any wrinkles. you rebutton your cuff links, bearing one curt goodbye to the kitchen staff before walking out of the kitchen. you walk slowly back to your table, where your family and colleagues are enjoying their meal as normal. as you approach your wife, you lay a hand on her shoulder and lean down to plant a kiss on her cheek. "sorry about that darling," you whisper. "ready to eat?" she nods and you take your seat next to her. the fish still lies on your plate, no longer flopping but still sullying your meal. you look around, eyes settling on a waitress taking a drink to another table. you wave for her attention then beckon her over. "excuse me. is there anyway i could get a new plate of spaghetti? this one has a fish on it." she smiles and nods. "of course sir." she flashes her teeth before turning away. "and waitress?" she turns back. "with cheese, this time." she laughs, and turns towards the kitchens. you survey your table, filled with friends, lovers, and family. these are the people you will spend the rest of your life with. your interactions among them will determine your days from now until the end of time. you look around, and you smile.
for these reasons, i would have to give a resounding NO to your proposition. my cock is not suitable to be used as a replacement for cheese on spaghetti. pleases keep this in mind for future reference. thank you very much.

For 15 years, I embarked on a journey of travel and culinary exploration, and continues today.
Driven by an unwavering passion for food, I began my culinary journey in New York City, working alongside renowned Chef David Bouley, who had recently won "Best Chef" and "Best Restaurant" from the James Beard Foundation and the coveted 4 stars from the New York Times.
After graduating from culinary school in Portland, Oregon, I was fortunate to be trained in some of the world's most respected kitchens, including Bouley, Jean Georges, Petrosian, and San Domenico in Imola, Italy.
Through my travels over that time to 8 countries and a month on the train from NYC to San Francisco, I developed an approach to cooking, that is constantly striving to create dishes that not only satisfied the palate but also stirred the soul.
Despite the bragging rights that came with working in prestigious kitchens, I found that nothing provided me with greater gratitude and excitement than teaching and preparing meals for people in a more intimate setting. Whether it's a small family gathering or a quiet dinner with friends, the ability to share my passion for food with others has been the ultimate reward for all of the hard work and sacrifice that has led me to this point.
Today, I continue to be driven by the same passion and dedication that has defined my career thus far. From the bustling kitchens of New York City to the serene town of Imola, Italy, my journey has been one of constant learning and growth, always pushing the boundaries of what's possible in the world of food. And while the path ahead may be uncertain, I am excited to see where my passion for food will take me next.
