Canon sapphic (most likely cis) gals who I canon-compliantly headcanon as lesbians:

Angela and Siobhan Cruz (whether 1 of them took the other's surname upon marriage or they chose together a new surname is unknown);

Piper McLean (and her girlfriend Shel who isn't shown here); and,

Vaggie (who I wish had been named Valencia Cortéz instead).
