As a semi-professional noodle slurper and collector, I’ve eaten hundreds of noodles in my life, but I have a particular soft spot for one type, specifically: the instant kind. You know, those hard squiggly bricks of dried, fried noodles with accompanying seasoning packets that have long been the foundation of the American collegiate diet. Since the pandemic started, I’ve been showing off my impressive collection of instant noodles to my friends on FaceTime like a YouTube beauty guru flaunting their makeup stash.
I love instant noodles for many reasons: They have a nearly indefinite shelf life; they are an easy breakfast, snack, or — with the right bolstering — a full meal; and, they come in a panoply of shapes, textures, flavors, and colorful packaging styles. But while there is nothing wrong with eating instant noodles according to the instructions, it’s their versatility that’s made me a devoted fan. Here’s how to mash-up, deconstruct, and upgrade the dorm room staple.
1. Load up on protein
Yes, many instant noodles come with their own packets of dehydrated vegetable or meat flavoring, but they rarely provide much real taste and add zero in the way of texture. Supplementing your own additional proteins will do a lot to make your instant noodles more satisfying and nutrition-rich. Try simple items like ground meat, sausage, tofu, and leftover fried chicken — or my personal favorite ramen topping, pork char siu. Meat shortage got ya down? Just crack an egg. As a semi-professional noodle slurper and collector, I’ve eaten hundreds of noodles in my life, but I have a particular soft spot for one type, specifically: the instant kind. You know, those hard squiggly bricks of dried, fried noodles with accompanying seasoning packets that have long been the foundation of the American collegiate diet. Since the pandemic started, I’ve been showing off my impressive collection of instant noodles to my friends on FaceTime like a YouTube beauty guru flaunting their makeup stash.
I love instant noodles for many reasons: They have a nearly indefinite shelf life; they are an easy breakfast, snack, or — with the right bolstering — a full meal; and, they come in a panoply of shapes, textures, flavors, and colorful packaging styles. But while there is nothing wrong with eating instant noodles according to the instructions, it’s their versatility that’s made me a devoted fan. Here’s how to mash-up, deconstruct, and upgrade the dorm room staple.
1. Load up on protein
Yes, many instant noodles come with their own packets of dehydrated vegetable or meat flavoring, but they rarely provide much real taste and add zero in the way of texture. Supplementing your own additional proteins will do a lot to make your instant noodles more satisfying and nutrition-rich. Try simple items like ground meat, sausage, tofu, and leftover fried chicken — or my personal favorite ramen topping, pork char siu. Meat shortage got ya down? Just crack an egg. You can stir it right in to create an egg-drop soup effect, or poach the egg gently in the soup broth to enjoy breaking the creamy yolk.

2. Go big with toppings
Going nuts with the add-ons at ramen restaurants can mean spending $30 on a bowl of noodles (toppings normally cost between $1 and $3 each.) But at home, you can have as many toppings as the inventory of your fridge’s produce drawer allows: scallions, corn, mushrooms, kale, you name it. Not sure about what to do with all those weird greens in your CSA farm box? Add them to your instant noodles! Fact: There is no such thing as a lousy topping for instant noodles.
3. Deconstruct everything
Each element of the instant noodle package is a multi-purpose cooking superstar. The seasoning packets add a pop to stir-fried vegetables. Broken into bits, the uncooked noodles are an excellent crunchy topping for a salad or even another non-instant pasta dish. Do yourself a favor and add some ramen seasoning to mac and cheese, or how about using those instant noodles to make buns for an at-home ramen burger?
4. Switch up the liquid
To deepen the character of the soup, try cooking the noodles in vegetable or chicken broth instead of plain water. There are plenty of wilder recipes out there, including this one I’m skeptical of that uses milk, but homemade stock is a safe jumping off point.

How to Can Tomato Sauce (My Favorite All-Purpose Version)
I’ve shied away from posting a canned tomato sauce recipe forever.
Not because it’s hard…
Not because I don’t make tomato sauce…
Not because I don’t have tomatoes…
Mostly just because I’ve just been too lazy to write down my ingredients any time I make a batch.
So there you have it.
Now that’s off my chest, I feel better.
Anyway.
Of all the things I can (like peaches with honey and cinnamon, canned apple slices, home-canned poblano salsa), tomato sauce is the most important. We use our canned tomato sauce in so many recipes during the long winter months, from homemade pasta dishes, homemade pizzas, chili, and more.
If I play my cards right, I can grow enough paste tomatoes (I love Amish Paste and San Marzano the most) in my raised bed garden to keep us stocked in tomato sauce for the whole year.
Homemade tomato sauce can easily be frozen, BUT since freezer space is always at a premium on our homestead, this is absolutely a item I prefer to can.
Plus, this particular tomato sauce recipe for canning uses a waterbath canner, so it’s the perfect recipe for beginners. (And if you are a beginner to the canning world, check out my article on how to start canning with zero special equipment so you can start canning today).

Best Tips for Canning Tomato Sauce
Whether you use my personal favorite tomato sauce recipe or a different one, there are a few things to keep in mind for your tomato canning adventures:
Tip #1: Always Follow a Safe Canning Recipe
I’ve talked countless times in the past about the importance of following a safe canning recipe, because here’s the deal folks– botulism is no joke. And yes, people do indeed still get stick from improperly canned foods.
Also, tomatoes can be deceiving as they *are* an acidic food, but there are many aspects that factor into their exact acidity. To save yourself the hassle of becoming a tomato acidity detective, the simplest course of action you can take is to add a bit of lemon juice to each of your jars.
You can get the exact measurements for different sizes of jars here. Adding lemon juice or vinegar ensures your home-canned tomato recipes are acidic enough to be canned in your water bath canner– easy peasy.
Another important reason to always use an approved recipe for your tomato canning adventures is the ratio of tomatoes to other vegetables. Tomatoes are an acidic food, but many common tomato sauce additions, (like green pepper, onion, mushroom, or garlic), are not. You can safely add *some* of these non-acidic ingredients to home-canned tomato sauce, you’ll just need to watch your ratios.
Or, if you want to ditch ratios entirely, you can do that, but you’ll just want to pressure can the sauce instead. 
A good rule of thumb is to use no more than 3 cups of other vegetables per each 22 pounds of tomatoes.
My tomato sauce recipe is safe because it is based on the recipe in the Ball Blue Blue (as is any other canning recipe you’ll find here on my blog– I always stick to approved recipes as a starting point.)

Tip #2: Use Optimal Tomato Varieties for Canning
I primarily grow either Amish Paste, Roma or San Marzano plum tomatoes in our garden, since tomato sauce is the #1 way my family consumes tomatoes. These paste-type varieties are meatier and contain less juice and seeds, so you’ll spend less time simmering and reducing the sauce.
However, even though certain tomato varieties are preferred for canning, you can still use any type you want, so don’t let your tomato type stop you from enjoying some home-canned tomato sauce!
Tips #3: Plan on Canning Tomato Sauce for an Entire Day
You probably all know by now (especially if you own my cookbook) that I am a huge fan of quick and easy recipes that don’t take a lot of time. That being said, there are a couple exceptions to my rule, and tomato sauce is one of them.
If you’re canning a sizable amount of sauce (i.e. more than just a jar or two), it will very likely take you the majority of the day to process, simmer, and then can the tomatoes. However, don’t despair– not all of this is hands-on time!
The kids and I recently processed several boxes of our homegrown tomatoes that had been ripening in the shop. Naturally, I didn’t weigh them (FAIL), but there were well over 50 pounds.

It took us about a 90 minutes to wash, trim, and process the tomatoes into puree with our Victorio Food Mill (p.s. the best investment EVER if you are planning on doing a lot of tomato or applesauce). Yes, I do employ child labor here (they actually think it’s fun– for real).
The simmering process took 4-5 hours (I was in and out of the house while this was happening), and then I finally canned it later in the day.
It wasn’t hard work, but it did stretch throughout the day.
However, if you’re looking for a ‘quick and easy’ tomato sauce recipe for supper tonight, don’t worry– I’ve got you covered! This FAST tomato sauce recipe can be ready in 20 minutes or less. It’s not a recipe you’d want to can, but if you need some quick sauce for supper, it’s golden.
Canned All-Purpose Tomato Sauce Recipe
Yield: About 7 Quarts
Ingredients:
45 pounds of tomatoes
6 cups chopped onions (I use a food processor for this)
12 cloves of garlic, minced
1/4 cup olive oil
1 tablespoon ground black pepper
2 tablespoons brown sugar (more to taste)
¼ cup coarse sea salt (more to taste)
Bottled lemon juice (2 tablespoons per quart jar)
A water bath canner
Instructions:
Wash the tomatoes and remove the ends and any damaged spots. Quarter them and deseed them by running your fingers down the middle and scraping out the bulk of the seeds and juice. Puree the tomatoes in a food processor or blender.
(OR, you can run the tomatoes through a food mill and save yourself a lot of time! When I’m using my food mill, I wash them, remove any bad spots, and that’s it– the machine does the rest.)
Sauté the onions and garlic in the olive oil in a large pot. Add the tomatoes, pepper, sugar, and salt. Bring to a simmer and allow to reduce by about one-half. If you are using very juicy tomatoes, this can take 3-5 hours.
The most important part of homemade tomato sauce is the tasting! Tomatoes greatly differ from variety to variety, so you must taste as you go.
In order to keep the ratios of high acid to low acid foods at a safe level in this recipe, you cannot increase the amount of onions or garlic you use, but you CAN increase the herbs, sugar, or salt.
Once the sauce has reduced by half and the flavor is where you want it to be, add 1 tablespoon of lemon juice to each pint jar and 2 tablespoons of lemon juice to each quart jar.
Ladle the sauce into the jars, leaving 1/2-inch headspace.
Process pints for 35 minutes and quarts for 40 minutes in a hot water bath canner. (Keep in mind that you may have to adjust your processing time according to your altitude.)
REMEMBER: Don’t start timing until the water has returned to a boil with the filled jars inside.
Store your sealed jars in a cool, dark place. I use this all-purpose sauce in all sorts of recipes- add basil and oregano to give it an Italian twist, or add chili powder and cumin for Mexican food.
Homemade Tomato Sauce Notes:
Most recipes will suggest that you peel the tomatoes before you puree them. Since I despise peeling tomatoes (it’s ok for a handful, but when you’re dealing with 60 pounds of small tomatoes, it’s an utter nightmare), I always just run mine through my food mill instead. In the past when I didn’t have a food mill, I would deseed and then puree them (with the skin on). Sometimes you’ll find a bit of peel in your finished sauce, but I absolutely do not think it’s offensive at all. It’s a small price to pay to avoid the monotony of peeling a million tomatoes.
To make this more of an Italian-style sauce, add 3 tablespoons dried oregano and 3 tablespoons dried basil (or to taste)
If you prefer, you can completely omit and onion and garlic from this recipe. Technically, you can can straight tomato puree, if you wish. However, I prefer to give mine a bit more flavor to start out.
Sugar is important in tomato sauce recipes to help cut the acidity. However, you can leave it out if you  wish.
DRIED herbs and spices won’t effect the ratios of this recipe at all, so you can safely remove or add them, according to your own taste.
My favorite tomatoes to grow for making canned tomato sauce are Roma or San Marzanos.

My tried-and-true canning tomato sauce recipe, perfect for pasta dishes, homemade pizza, and more.

Restaurants across the state have slowly started to reopen, and close, and reopen again over the past few months. It can be a lot to keep up with, and there’s still a large degree of uncertainty around the safety of dining out. Want to know what’s safe? Eating at home. And if you’re as bored of canned tuna as we are by now, here are a few great meals we’ve had recently that you can get for takeout or delivery.

Week Of August 24

We recently wrote about the lechon asado loaded fries from Cuba512 in our best loaded fries in Austin guide, but if you’re not feeling potato-inclined, there’s a number of other great Cuban dishes you can get here, including the classic El Cubano that we really enjoyed. It’s filled with roasted pork, ham, Swiss cheese, pickles, and mustard - all on pressed Cuban bread. No fancy tricks or ingredients here, just a simple, classic sandwich done well. Their downtown location is currently closed, but their South Austin location off William Cannon and West Gate is open for takeout. Bring it home, make yourself a nice rum cocktail, open up all the windows, and pretend you’re on vacation somewhere tropical.

As you might guess from the name, Artipasta serves fresh pasta, and it’s possibly some of the best in town. We got the tagliatelle with the house meat sauce as well as the casarecce with basil pesto. It’s located in the spacious Thicket Food Park in South Austin - it was so chill and tranquil that we sat down at one of the picnic tables and just ate our takeout there. Pair it with a San Pellegrino and pretend like you’re in Italy - it’s not like we’ll be allowed to travel there anytime soon.

Thai Thani is easy to miss. It’s a food trailer behind another food trailer behind a gas station on Manor Rd. But if you manage to find your way there, you’ll be greeted with some really great Thai food. We went with a chicken pad thai this time around, and the portion was enough to last us a couple of meals. But if you’re looking to round out your meal a little more, we also really like their pad see ew and stir-fried basil beef. And if they have their mango with sticky rice dessert, it’s the perfect closer.

On the northwest corner of Republic Square in downtown Austin is Salt & Time Cafe, a new all-day cafe with outdoor seating from the people behind the popular East Side butcher shop and restaurant, Salt & Time. We picked up some sandwiches, including the Jambon Beurre, featuring mezcal-glazed ham, dill pickles, and a very French amount of salted butter, all on a demi-baguette. It’s enough to make you do things like wear a beret, smoke Gauloises cigarettes, and go on strike (for more sandwiches like this).

Paprika opened up relatively quietly back in late 2019 and has been slinging out great tacos and tortas ever since. We enjoyed the taco de carnitas and taco de nopalitos, the latter of which comes packed full of well-seasoned prickly pear cactus and refried lentils. Every taco gets paired with a specific salsa - a really nice touch that elevates the experience a bit. The menu changes a bit depending on the time and day, so take a look at their website for the most up-to-date menu information before heading over.

Usta Kababgy opened just last year on Lamar just north of Rundberg, and the restaurant is turning out some really great Middle Eastern/Halal food. The charcoal-grilled kebabs were excellent, including the Iraqi and chicken ones. The tabbouleh was bright, and the pizza-like flatbread - we got the one that’s half zaatar, half feta cheese - was fantastic. But what stole the show was the fluffy and tender house-made bread. Order extra.

Ordering takeout from Franklin Barbecue is one of the absolute best things you can do for yourself and for the lucky people you like enough to share with. We can also confirm that this barbecue tastes just as good without the usual five-hour wait/tailgate. To order, you just select a day and time (lunch hours only) up to one week in advance on their site, pick your meats (in 1 lb increments, except for links of sausage), and remind yourself that spending this kind of money is worth it when you get to eat this brisket. The pick-up situation is easy, too - staffers will bring your order right to your trunk. Get it home as quickly as you can, have the lunch spread you deserve, and spend the rest of the day knowing you made excellent decisions.

The dining room at Charm BBQ Chicken in north Austin is closed, so they’re not doing barbecue at the moment. But as the name suggests, their other focus is fried chicken. You can get all of the meats by the pound, in combo-plates, or as a sandwich.

The dining room at DipDipDip Tatsu-Ya, the Japanese shabu-shabu place from the Ramen Tatsu-ya team, has been closed since the pandemic hit. But they did what people do these days, and pivoted. They transformed the restaurant into a takeout-only pop-up serving sandwiches that mash up the French dip and shabu-shabu, with excellent results. Our favorite is the beef sandwich with a wasabi ranch and the pork sandwich with kimchi and a curry cabbage slaw. For dipping, you can choose between an umami jus and a spicy miso (they recommend which dipping sauce to get for each sandwich). Make sure to get an order of the aptly named “Pow!tato” - a side dish with some of the most impossibly crispy smashed potato chunks we’ve ever had.

Ever since they originally opened, Ramen Tatsu-Ya has been vehemently anti-takeout. But then the pandemic hit, and they pivoted to takeout-only (and have stayed that way ever since). We recently picked up some of their ramen and it tasted just like how we remembered it at the restaurant. The toppings and noodles come in their own container (that way the noodles don’t get soggy), and the broth is packed in a deli pint container that’s thoroughly wrapped in plastic wrap to prevent in-car disasters. The instructions are clear: heat the broth, do not boil, then add the broth to the noodles and toppings. And with three locations in Austin - north, east, and south - ramen is never too far away.

Island Fork in Pflugerville specializes in Caribbean food, like jerk chicken, curry goat, and escovitch fish (fried fish topped with pickled vegetables). As a semi-professional noodle slurper and collector, I’ve eaten hundreds of noodles in my life, but I have a particular soft spot for one type, specifically: the instant kind. You know, those hard squiggly bricks of dried, fried noodles with accompanying seasoning packets that have long been the foundation of the American collegiate diet. Since the pandemic started, I’ve been showing off my impressive collection of instant noodles to my friends on FaceTime like a YouTube beauty guru flaunting their makeup stash.
I love instant noodles for many reasons: They have a nearly indefinite shelf life; they are an easy breakfast, snack, or — with the right bolstering — a full meal; and, they come in a panoply of shapes, textures, flavors, and colorful packaging styles. But while there is nothing wrong with eating instant noodles according to the instructions, it’s their versatility that’s made me a devoted fan. Here’s how to mash-up, deconstruct, and upgrade the dorm room staple.
1. Load up on protein
Yes, many instant noodles come with their own packets of dehydrated vegetable or meat flavoring, but they rarely provide much real taste and add zero in the way of texture. Supplementing your own additional proteins will do a lot to make your instant noodles more satisfying and nutrition-rich. Try simple items like ground meat, sausage, tofu, and leftover fried chicken — or my personal favorite ramen topping, pork char siu. Meat shortage got ya down? Just crack an egg. You can stir it right in to create an egg-drop soup effect, or poach the egg gently in the soup broth to enjoy breaking the creamy yolk.

2. Go big with toppings
Going nuts with the add-ons at ramen restaurants can mean spending $30 on a bowl of noodles (toppings normally cost between $1 and $3 each.) But at home, you can have as many toppings as the inventory of your fridge’s produce drawer allows: scallions, corn, mushrooms, kale, you name it. Not sure about what to do with all those weird greens in your CSA farm box? Add them to your instant noodles! Fact: There is no such thing as a lousy topping for instant noodles.
3. Deconstruct everything
Each element of the instant noodle package is a multi-purpose cooking superstar. The seasoning packets add a pop to stir-fried vegetables. Broken into bits, the uncooked noodles are an excellent crunchy topping for a salad or even another non-instant pasta dish. Do yourself a favor and add some ramen seasoning to mac and cheese, or how about using those instant noodles to make buns for an at-home ramen burger?
4. Switch up the liquid
To deepen the character of the soup, try cooking the noodles in vegetable or chicken broth instead of plain water. There are plenty of wilder recipes out there, including this one I’m skeptical of that uses milk, but homemade stock is a safe jumping off point.
