This!!!! I've had a rough relationship with food as a larger individual, and to have a piece of media that not only encourages healthy eating in this way, but also showcases a variety of body types is so good!
One of the things Senshi tries to do is cater the meal towards the party; nutritionally balanced, and in some cases making multiple different dishes so that if someone isn't fond of something, they can just eat other things and still get full. This is much clearer with the addition of Izutsumi.
With Izutsumi being a picky eater, he wants to encourage her to try new things at her own pace. He still has to work with what he has, but he caters it to her needs when they first team up.
The first meal they have with her is risotto with mushrooms and cheese. Something fairly simple, with things she can eat around if she really wants to. The only reason he gets upset with her during this is because instead of offering the stuff she doesn't like to someone else, she dumps it on the floor, effectively wasting it. He's still getting a gauge on her needs and likes, but cannot stand wasting food!
Unfortunately for the second meal, nightmare shellfish, we don't get to see Izutsumi try it, but it's assumed that she enjoys it being part cat and all.
The third thing they have is also fairly tame compared to what they've had before, as it's all pretty regular ingredients: fish (which Izutsumi loves, clearly), eggs, shellfish, and mushrooms. Another thing where, if Izutsumi wants to pick around the mushrooms she can! The next thing he serves her is also really tame, as it's essentially just lamb meat!
The only time we see Izutsumi being pressured to try something is when she's given the candied mandrakes. She doesn't want them, but she's learned from her initial encounter with Senshi, and gives it to the person she thinks is most likely to take it: Laios. She can see that Marcille intially won't take it, and Chilchuck is rather indifferent. She can't give it back to Senshi, she's learned her lesson in how scary he can be when it comes to food. Laios however shows great interest in eating these creatures, so surely he'll take it no questions asked, right? Unfortunately for her, he loves to share his special interests with others and can't fathom not wanting to at least give it a try. He also already knows the mandrakes are tasty, so to him this is a very normal and delicious snack! But to Izutsumi it's strange, and she doesn't like the push back she gets from Laios, however it's better than facing Senshi's wrath when she wastes food. During this whole encounter, Senshi isn't even on screen! He doesn't really care if she eats it or not, but he gave her the option to.
Senshi caters to Izutsumi while also encouraging her to try new things. He's giving her options that are more "normal" while also making sure things are nutritionally balanced. He knows that his party will eat practically whatever he cooks, but he doesn't know about Izutsumi yet. He's still figuring out where her limits are, and since she's a picky eater he has to do so slowly and within her comfort zone. He offers her things that he can guess she won't want to try, but in a way that doesn't pressure her to eat it because it's the only thing for the meal.
I could talk forever about how Dungeon Meshi is changing relationships with food through it's portrayals of mealtimes, balancing nutrients, and giving options. It's probably the healthiest outlook on food in media I've seen in a long time, and it actually encourages me to eat better as well! I've learned to listen to my body better, trying to gauge what my body actually needs when it comes to food. Whenever I have a meal these days I think about what food groups I'm hitting: "is there enough protein? enough fats? enough of a balance of what I'm eating so that I will have the energy I need? How can I add something to meet those needs rather than taking away something I like?"
I've got quite the sweet tooth, but by listening to my "Inner Senshi" as folks have been saying, I've been able to balance things better. I still eat plenty of sweets, but I look at it more like "What is it my body actually wants right now? Is it sweets or do I need more water or protein?"
TLDR; Dungeon Meshi has the most healthy outlook on food I've seen in media, and the way Senshi has affected everyone he comes into contact with, fictional and non-fictional, is a positive one. The "Inner Senshi" encourages balanced eating whilst not shaming you for any of your eating habits. Eating is supposed to be a positive refueling of your body and a chance to bond with others.
The secret Dungeon Meshi sauce that's getting people to eat better is that it's so non-judgmental. Senshi and the rest of the gang never talk about what not to eat besides things that taste bad and literal poison. They don't even talk about "health" that much besides the importance of a balanced diet. It's so much easier to eat well when you think of food simply as something your body needs, and that it's often worth the extra effort to make it taste good, especially when you understand how to connect "things your body needs" with "things that taste good"
