It always seems a bit unbalanced on The Great Food Truck Race when there will be multiple teams who are cooking a wide variety of complex dishes with 10 different components and a bunch of prep work, and then there's that one team who like... exclusively serves plain crepes with some premade nutella on them, or plain waffles with just some whipped cream and cut up strawberries lol...

I wonder how its possible that they can get#more dishes out faster than the other teams... hrrmm.... lol#Not that they aren't still doing work like. obviously it's still hard and there's still a sales component and other stuff to be done#but It's just kind of unbalanced seeming when one group is serving like grilled shrimp sandwich with 3 homemade sauces and a#slaw and two sides and the other people are like... slicing fruit and drizzling a bottle of hersheys chocolate syrup on top of some thing#they just threw in a waffle maker for a few minutes#You see the footage of the teams cooking and everyone is like prepping a ton of different things and meat and vegetables and they have#boiling pots and pans and fryers going and tossing stuff in bowls and compiling these multi component dishes#and then That One Team is always just casually slicing bananas or doing some whipped cream in a bowl gbjhbhj#They usually dont even make their own caramel or chocolate sauces or anything. Nutella out of a jar babey!#So all you're really Making is like... whipped cream. and some sort of batter (waffle. crepe. etc)#If I got placed in a competition like that and I found out one of my opponents just sold waffles or pancake sticks or etc#like that I would just be like... okay.. I'm out then. bye. OR I would pivot and be like.. right I shall remove all complexity from my menu#whatsoever and just start selling plain balls of fried dough with powdered sugar or plain fries with nothing on them or something lol#update: OH my god.. one of these teams on a newer season is selling a 'bonus add on' where you can add#cinnamon sugar and caramel syrup (possibly not even home made by them???? just from a bottle) for $5 extra on your order#If I bought a $12 waffle from a food truck and they were like 'hey do you want to upgrade? for only $5 we'll drizzle a teaspoon#of caramel and sprinkle a little sugar and cinnamon on there!' I feel like I would cancel my order and walk away.#that is a $1 add on at MOST.. for a freaking DRIZZLE of caramel sauce LOL#and of course this team is in the top 3... squirrel.... come ON...#Which I know all these shows are fake and bad and whatever. I dont watch them seriously. I think I liked the first few seasons#but then anything past like season 4 (or whenever they started having established people who already ran food trucks on there#instead of taking a bunch of peope who had never run a food truck before and giving them one - which is a much more equal footing#premise to me) I have just been increasingly annoyed at and I really just have the show on for background noise#whilst doing chores or something and am not genuinely paying that much attention but... my god.. At least try to pretend its fair lol#WHICH I KNOWW... you can say 'well the other teams could do similar if they wanted.' or blah blah. tehcnically it's THEIR choice to#make stuff from scratch and not sell a bunch of packaged frozen chicken wings dropped into a fryer over a shitty 6min waffle or etc.#but... I will never respect a $5 for 1tbsp of caramel sauce type of situation.. even if they win.. you will always be losers in my heart#So many teams with real cooking skill & good concepts go home to the 'slap nutella on fried dough' people... how...

Dirk Gently's Holistic Detective Agency Milkshake Aesthetic
To celebrate season two of Dirk Gently's Holistic Detective Agency I've gone mad and assigned a milkshake to characters from the first series. There's not a lot of food in the first series, but they do sometimes get together in a cafe where half-empty milkshake glasses can be seen. If I was a holistic detective I'd probably turn to milkshakes for fortification too. These all pretty much follow a standard recipe, all you have to do it put everything in the blender. I have put cream in the recipes but I don't add it myself. A scoop of ice cream is about 70g.
Dirk - Banana Cardamom Milkshake I really struggled to choose one for Dirk. I knew it had to be banana because his yellow jacket is my favourite, but I couldn't decide whether to put caramel with this rather than cardamom. But I figured his other jacket is greenish and cardamom is greenish so... (I put the pods on for decoration, please don't eat the pods!) 250ml semi-skimmed milk 1 scoop vanilla ice cream 2 small-medium bananas 1/2 tsp ground cardamom, plus extra for sprinkling whipped cream Blend the milk, ice cream, bananas and cardamom. Add more milk if it's a bit thicker than you'd like. Put into your chosen receptacle and add some whipped cream and some more cardamom.
Todd - Coffee and Blackcurrant Milkshake (this one looks a bit yuck, soz - it was good I promise!) A surprising combination that works, which is a lot like Todd. I feel as though he's constantly at odds with himself but this milkshake should give him a bit of a boost (quite literally, blackcurrants have loads of iron) 250ml milk 2 scoops coffee ice cream 1 tbsp blackcurrants from a tin (drained of the juice) Blend the milk, coffee and ice cream. If you like you can brush some of the blackcurrants onto the sides on the jar/glass to create a pretty look. Put the mixture into your chosen receptacle and swirl in the blackcurrants.
Farah - Lemon Cheesecake Milkshake "Farah, you kicked everyone's ass and saved me. It was so...you. Ever since I was little you were the most inspiring person ever. But you always try to hide from what a freak you are. And then when my dad died, and I was a dog and everything was hopeless, there you are with an army of weirdos saving the day. It was perfect. You are perfect." Well I think that sums things up pretty nicely. 3 McVities lemon cheesecake biscuits, plus extra for sprinkling 65 full-fat cream cheese 2 tbsp lemon curd 250ml milk whipped cream Blend the 3 biscuits, cream cheese, lemon curd and milk. Put into your chosen receptacle and top with whipped cream.
Amanda - Chocolate and Cherry Milkshake Amanda is a fantastic character and I love her friendship with the Rowdy 3. I wanted something deeper to match her style, so chocolate and cherry was obvious. 250ml semi-skimmed milk 2 scoops chocolate ice cream whipped cream 1 tbsp cherries from black cherry fruit filling can Blend the milk and chocolate ice cream. Put the blended mixture into the glass/jar. Top with whipped cream and the cherries.
Estevez - Pecan Pie Milkshake I don't know if it's his adorable suits or what, but I can really imagine Estevez sitting down to a big family dinner, complete with pecan pie for pudding. And that is TOTALLY WHAT HE IS DOING RIGHT NOW NOHEISNOTDEADNOPE. 250ml semi-skimmed milk 1 scoop vanilla ice cream 1 maple and pecan plait pastry whiskey (if desired) maple syrup whipped cream Blend the milk, vanilla ice cream, pecan plait and whiskey (if using). Put into your chosen receptacle and top with cream. Drizzle over some maple syrup. You could add some chopped pecans if you like, that would be cool.
Friedkin - Raspberry and White Chocolate Milkshake Because he's an absolute fucking nutcase but also a princess. 150g raspberries 2 tbsp sugar 250ml semi-skimmed milk 2 scoops vanilla ice cream 25g melted white chocolate In a saucepan put the raspberries and sugar and gently heat until the berries break down and it becomes thicker. Sieve this to remove the seeds and leave to cool. Melt the chocolate. Blend the ice cream, milk and white chocolate. Pour into your chosen receptacle. Put the remaining raspberry sauce into the glass and swirl through.
The Rowdy 3 - Peanut Butter Pretzel Milkshake I'd quite like to join the Rowdy 3. How do you apply? 250ml semi-skimmed milk 2 scoops vanilla ice cream 2 tbsp smooth peanut butter 25g crushed salted pretzels Blend the milk, vanilla ice cream, peanut butter and pretzels. Put into your chosen receptacle.
Bart - Orange Creamsicle Milkshake Because she wants to eat the shampoo and I think something fruity would suit her. I was toying with the idea of doing something like a peach melba milkshake, but I had the orange sorbet and threw it in and I have no regrets. 250ml milk 2 scoops vanilla ice cream 1 - 2 scoops orange sorbet (could use another flavour if you can't find orange - mango would be nice) Blend everything and put into your chosen receptacle. You can top it with cream if you like but I haven't because I quite like the creamy orange ice cream. It tastes like a Solero.
Ken - Cinnamon Bun Milkshake Ken is the most cinnamon bun ever to cinnamon. He is scared and clever and kind and we all love him. I wasn't sure how blending a cinnamon pastry into a milkshake would work but it's surprisingly good. 250ml semi-skimmed milk 1 scoop vanilla ice cream 1 cinnamon swirl pastry whipped cream Blend the milk, vanilla ice cream and cinnamon swirl pastry. You may need to add more milk to loosen it. Put into your chosen receptacle and top with cream.

Caribbean Jerk Shrimp with Cauliflower Rice

And yes this recipe is a total winner. The weather has been absolutely GORGEOUS lately which means it was finally time to break out our grill. I don’t know what it is, but anything thrown on top of a grill just tastes 1,000x better and these skewers certainly did not disappoint. Caribbean jerk flavors are one of my favorites – sweet, spicy with a lot of kick! – so I was really excited to try out this combination on some shrimp skewers! You guys this couldn’t have been easier to throw together and the cauliflower rice was the perfect addition!
If you’re not a fan of shrimp that’s okay too because this marinade would taste absolutely amazing with chicken so I highly suggest bookmarking this recipe to make soon! I mean how can you go wrong when mixing your favorite citrus flavors with spice?! This dish is healthy, flavorful and deliciously filling!
When making shrimp (or really anything) I always prefer it on the grill so skewers were definitely the way to go. I marinated the shrimp for about 30 minutes and used a combination of fresh squeezed orange juice, soy sauce, chopped jalapeño, green onions, jerk seasoning and a touch of brown sugar. You could easily substitute honey in place of the brown sugar if you’d like, but I really wanted to incorporate it in with the jerk seasoning because they just work so well together.
If you’re using chicken in place of the shrimp I would highly suggest marinating the chicken for much longer, anywhere from 4 hours to overnight so that you can really taste ALL the flavors as well as have really juicy chicken!
While the shrimp are marinating, this is when I like to make the cauliflower rice. And ohh is it delicious you guys! I always like to purchase pre-riced cauliflower simply to cut that step of blending the cauliflower florets yourself which makes meal prep a whole lot easier. Trader Joes is usually my go-to place for this, but most grocery stores offer cauliflower rice so definitely check that out! Then I just sautéed the fresh chopped pineapple, bell pepper and jalapeño with a little olive oil before adding in the cauliflower rice and additional spices. I also added some fresh squeezed orange juice for even more flavor!
Also right before adding the shrimp to the grill I like to make a glaze with the leftover marinade to brush over top of the shrimp which can easily be done by just bringing it to a boil and allowing it to simmer for about 10 minutes or so. The glaze really makes a nice caramelization which tastes so delicious over top of the shrimp!
OH and don’t freak out over the amount of ingredients you see listed! This is really two recipes (one for the shrimp and the other for the cauliflower rice) and while you could easily just buy your own pre-made jerk seasoning, this particular combination was absolutely delicious and just too good not to share!

Caribbean Jerk Shrimp with Cauliflower Rice

Serves: 4 Servings
Ingredients
10 oz. large shrimp, peeled and deveined
2 Tbsp olive oil
2 Tbsp red wine vinegar
2 Tbsp fresh squeezed orange juice
1 Tbsp brown sugar, packed
1 Tbsp reduced-sodium soy sauce (green top)
2 Tbsp green onions, chopped
1 Tbsp jalapeño, seeded and finely chopped
Lime wedges, if desired
For the Jerk Seasoning:
½ tsp. garlic powder
¼ tsp. onion powder
¼ tsp. dried thyme
½ tsp. paprika
⅛ tsp. allspice
⅛ tsp. nutmeg
¼ tsp. cayenne pepper
⅛ tsp. sea salt
For the Cauliflower Rice:
1 Tbsp olive oil
1 green bell pepper, chopped
1 jalapeño, seeded and finely chopped
1 cup fresh pineapple, chopped
4 cups cauliflower rice
1 tsp. garlic powder
¼ tsp. sea salt
¼ tsp. pepper
⅛ tsp. cinnamon
¼ cup fresh squeezed orange juice
1 (15 oz) can no-salt-added red kidney beans
2 Tbsp cilantro, chopped
Instructions
To make the marinade, in a medium bowl whisk together olive oil, red wine vinegar, orange juice, brown sugar, soy sauce, green onions, jalapeño and jerk seasoning. Add shrimp to the bowl and allow them to marinate for about 30 minutes.
*Note: if using wooden skewers for the shrimp make sure they soak in water for about 30 minutes as well.
To make the cauliflower rice, heat a large skillet over medium heat and drizzle in olive oil. Add bell pepper, jalapeño and pineapple and sauté until tender, about 3 to 5 minutes. Then add cauliflower rice and stir in garlic powder, salt/pepper, cinnamon, orange juice. Cook for about 5 minutes then add the kidney beans, cooking an additional 2 minutes. Remove from heat and mix in chopped cilantro.
Thread shrimp onto soaked wooden skewers (reserving the marinade) and grill, covered, over medium heat for about 4 to 6 minutes until shrimp are opaque and cooked through, turning once.
In a small bowl, bring the reserved marinade to a boil over medium-high heat. Reduce heat and simmer, uncovered, for about 10 minutes.
Brush glaze over top of the grilled shrimp skewers and serve over cauliflower rice with lime wedges. Enjoy!
