Gastronomical Adventure - Sensory Evaluation
Butter Chicken
Hey everyone, today I want to share with you one of my gastronomical adventures. By now, you are probably aware of my love for food. What you are not probably aware is that I also like interacting with people from different countries and learning about their culture (specially about their food).
When I decided to move to Canada, one of my first requirements was to find the most multicultural city to live in. After some research, Toronto was on top of my list. Since I got here I had the opportunity to experience a variety of dishes from all over the world. I usually say that Toronto is a mini version of the world because you can find literally everything in here. Of course, I would love to travel the world and experiment the different cultures first hand but, as a student with a limited budget, I can not do it now but maybe one day. However, I am pretty happy to live in a multicultural country that introduced me to such diversity. I have already tried a variety of food from many ethnicities like Canadian, Mexican, Korean, Turkish, Bulgaria, Greek, Venezuelan, Chinese, Filipino, Jamaica, and Japanese. Honestly, there is a lot of good stuff for each of these cuisines and I always get amazed by its peculiarities and different flavours.
Today I am going to share my first experience trying an interesting dish, from I country I didn’t know much about when I was living in Brazil: India. I confess that I was hesitant to try this dish because I had heard that Indian dishes are very spicy and my level of tolerance is very low. So you can imagine how I was feeling about trying an Indian dish. Anyways, my roommate just loves ‘Butter Chicken’ which is a famous Indian dish and he always offers it to me. Last weekend I decided to be brave and give it a try.
First, to give you a bit of context, Butter Chicken is an Indian dish that was created in Delhi, India. This dish has the very traditional Indian spice Curry. The dish is made with tandoori chicken cooked in butter and tomato sauce and It is very creamy. You can find butter chicken served in different ways, like as a filling in wraps, rotis, rolls, pies, etc. Also, you can simply have it with rice or bread on the side. The one that I tried was with bread. My roommate and I ordered the Butter Chicken from his favourite restaurant in Toronto. When the food was delivered I noticed the peculiar and strong smell of curry and its aroma was everywhere in the house. My roommate first enlightened me on the way that this dish is usually consumed and we dig right into it. My first impressions are that butter chicken is very flavourful and you can taste the seasoned cream and the moist chicken that melts in your mouth. It's a salty dish full of seasoning and herbs. It has a brownish colour and yes! It is spicy; The bread gave a great contrast though and I loved the bread with the creamy sauce. The bread was naan, which looks like a tortilla and the taste is delicious with some garlic flavour. For some reason, this dish reminded me of the ‘Chicken Stroganoff’ dish that I usually do but without the rich combination of spices. By the way, I got a low spicy version of it, however, even the low spicy was too much for me and obviously, I could not finish the whole dish but it was a great experience. If it would have been less spicy, I would have eaten it all.
With that being said, I want to encourage you to try something new even though it is something you think you won’t like. You are just going to know if you like it or not just by try it. Furthermore, you can find yourself falling in love with a new dish. I love that I allowed myself to try the Butter Chicken and share a good time with my roommate. He loved that I tried something from his country. This was awesome! As I always say “food is connection; it is expression of love”. Definitely, I want to have it again but now I know that I have to ask for a mild one!.

Together is more than a cookbook. This is a tale of friendship, and a story of togetherness. It is a homage to the power of cooking as a community, and the recipes that allow us to connect, share and look forward.
In January 2018, as I was settling in to my new home of London, it was important to me to get to know organisations working in the local community. I made a quiet trip to Al-Manaar, a mosque close to the Grenfell community.
In 2017, I had watched the Grenfell Tower tragedy unfold on the news; I was in Canada at the time, sharing the global sentiment of shock and sympathy for what this community was enduring, while also deeply wanting to help. Fast-forward seven months, and I was set to meet some of the women affected by the fire, at a community kitchen in Al-Manaar.
The kitchen was opened after the Grenfell tragedy, offering women who had been displaced and the community around them a space to cook food for their families.
Their roles as matriarchs united them across their cultures; the kitchen provided an opportunity to cook what they knew and to taste the memory of home, albeit homes some had recently lost.
The kitchen buzzes with women of all ages; women who have lived and seen life; laughing, chatting, sharing a cup of tea and a story, while children play on the floor or are rocked to sleep in their strollers.
Now I have come to know these women and this place well, here are a few things to note about the community kitchen:
It is cosy and brightly lit, with scents of cardamom, curry and ginger dancing through the air.
It will take you about fifteen minutes to enter the room, as you will be joyfully greeted by kisses (cheek x 3) by each of the incredible women there.
You will find yourself in a melting pot of cultures and personalities, who have roots in Uganda, Iraq, Morocco, India, Russia and at least ten other countries.
You should undoubtedly arrive on an empty stomach because upon departure you will have been stuffed to the gills with samosas flecked with cinnamon, chapatis flavoured with carrots and onion, Russian Semolina cake, Persian teas and my very favourite avocado dip that I now make at home.
You will feel joyful in their company, and you will leave counting the days until you go back.
On my first visit, I asked Munira, the resident chef de cuisine (so to speak), how I could help. An apron was quickly wrapped around me, I pushed up my sleeves, and I found myself washing the rice for lunch.
Munira’s sister-in-law, who had flown in from Egypt after Grenfell to help the family, helped me divide the correct amount of butter and fresh thyme to pour into the pot of rice bubbling away on the stovetop. All the aromas percolating in a kitchen filled with countless languages aflutter, remains one of my most treasured memories from my first visit to the kitchen.
I have a lifelong interest in the story of food – where it comes from, why we embrace it and how it brings us together: the universal connection to community through the breaking of bread. Within this kitchen’s walls, there exists not only the communal bond of togetherness through sharing food, but also a cultural diversity that creates what I would describe as a passport on a plate: the power of a meal to take you to places you’ve never been, or transport you right back to where you came from.
One of my own favourite meals is collard greens, black-eyed peas and cornbread – a meal I would look forward to throughout my childhood: the smell of yellow onions simmering amongst a slow-cooked pot of greens from my grandma’s back garden; the earthy texture of peas; and a golden loaf of cornbread puff-puffing away to a browned peak in the warmth of the oven.
This was always eaten on New Year’s Day, a tradition steeped in ancestral history where each component has a meaning:
the black-eyed peas for prosperity, the greens for wealth, the cornbread for health and nourishment. It wasn’t a new year’s resolution; it was a wish. It wasn’t simply a meal; it was a story.
I’ve spent many years away from my birthplace of Los Angeles and have found that travelling far from home highlights the power of personally meaningful recipes. During my time at university in Chicago I would wait with bated breath to return to LA for the winter break and have a bowl of my mother’s gumbo.
And while living in Toronto (seven years of being adopted by that beautiful place for work), I embraced poutine and several other Canadian culinary favourites, but the Southern California girl in me always craved fish tacos, and the memory of eating hometown fare infused with a strong Mexican influence.
We’ve all had that experience where you have a bite of food, close your eyes, and taste, remember and even feel the first time you enjoyed it. There is good reason that chicken soup is often credited with healing not just a cold, but the soul. There is something quintessentially restorative about a taste of something meaningful.
I  immediately felt connected to this community kitchen; it is a place for women to laugh, grieve, cry and cook together. Melding cultural identities under a shared roof, it creates a space to feel a sense
of normalcy – in its simplest form, the universal need to connect, nurture and commune through food, through crisis or joy – something we can all relate to.
During my visit I met Zahira, a working mum who oversees much of the coordination at Al-Manaar and whose infectious smile is enough to make you forget any troubles. Upon learning the kitchen was only open on Tuesdays and Thursdays I asked, ‘Why isn’t this open seven days a week?’
Her response: ‘Funding.’
And now just a few months later, here we are... Together.
Through this charitable endeavour, the proceeds will allow the kitchen to thrive and keep the global spirit of community alive. With the support of dynamic women from all walks of life, we have come together with a united vision to empower other women to share their stories through food.
This cookbook is a celebration of life, community and the impact of coming together.
Our hope is that within these pages you will find new recipes and family favourites that you can enjoy in your own homes, because these recipes aren’t simply meals; they are stories of family, love, of survival and of connection. From a Thanksgiving supper to a Shabbat dinner or a Sunday roast, the meals that bring us together are the meals that allow us to grow, to listen, to engage and to be present. We invite you to do the same, together, in your home, communities and beyond.

Did you know India has its record for the tallest pyramid cake in the world? I wish it was for me, but no, it was a birthday treat for Narendra Modi. On his 66th birthday, Atul bakery based in surat prepared a 7-foot tall cake that weighed almost a total of 3750 kilograms in just 48 hours. What a delicious way to wish a prime minister.
The largest number of layers in a cake
The Watkins Company, a leading global brand that provides natural, gourmet food flavoring products, created this record. They created a 260 layered cake to celebrate their 150th anniversary in Winona, Minnesota breaking the previous record of 230 layers. It stood approximately 73 inches tall and with a base of 32 inches. To construct the cake, it took 145 hours respectively. Kudos to them.
Record for longest cake
The latest record for the longest cake was achieved by Jiangxi Bakery Association in Zixi, Jiangxi (China) in 2018. The cake measured unbelievably  3188.621 meters (10461 feet 4.26 inches). That's approximately 2 kilometers. The fruit cake took 23 hours and 60 professional cake makers and 120 assistants to get ready. It was for the country's 3rd Bread International Tourism Festival, and later the cake was cut and distributed among the people of a remote village.
Most numbers of cakes displayed at once
That's another record under India’s name. In 2017, as a part of Christmas celebration, a culinary academy of India displayed a total of 506 different cakes setting a new world record of most number of different cakes displayed at a single venue. The students of the academy told that they planned for one whole month for this record.
Who sold the most cakes in eight hours
The record for most cakes sold in eight hours is 14,534 and was recorded by Maria Michel, Chris Mintz and the Running Rarebits (all three from Canada) in 2014 at The Boardwalk, in Kitchener, Ontario, Canada. They earned a profit of $14,390.75 and 100% of the money collected was donated to the Rotary Club of Kitchener Grand River. Cakes for a noble cause.
Largest wedding cake

We all love weddings and especially when it has a cake. The world’s largest wedding cake ever displayed weighed 6.818 tonnes (15,032 lb) according to Guinness book of world records and was prepared by a chef named Lynn Mansel and a team of 57 other chefs and pastry artisans at the Mohegan Sun Hotel and Casino, Uncasville, Connecticut, the USA on 8th February 2004. It was pulled with seven tiers and weighed more than an elephant.
Record for largest strawberry cake
Prepared to be stunned by this enormous beauty. The record for the largest strawberry cake was displayed during an event in Scanzano Jonico in 2019. It took 300 hours to master bakers Salvatore Di Trani, Dolce Voglia di Dartizio/Rapanaro, Dolci Privilege di Angelo Corbino, Vincenzo Mastropierro to finish the cake. The task included 3500 eggs, 100 kilos of sugar, 103 kilos of wheat flour, and most importantly 800 kgs of strawberries. The supercake was  60.48 meters long breaking the previous record of 32.24 meters and weighed around 1100 kgs.
