One standout creation is Spicy Kimchi Ramen, which combines the bold flavors of kimchi with the comforting essence of ramen, creating a unique and unforgettable meal. The surge in popularity of this dish reflects a broader global fascination with Korean food. In this blog, we’ll delve into the history of kimchi, explore the traditional kimchi recipe, and highlight the rise of Kimchi Ramen, along with other mouth-watering dishes that incorporate this ancient delicacy.
The Origins of Kimchi: A 2,000-Year Journey
Tumblr media
One of the most celebrated traditions surrounding kimchi is "Kimjang," where families prepare large batches of kimchi during the cold months to ensure a year-round supply. This practice was key in preserving the traditional kimchi recipe, which has been passed down through generations. From its humble beginnings as a pickled side dish, kimchi has grown into a vital symbol of Korean culinary heritage and identity.
Kimchi in Modern Culture
Tumblr media
Kimchi has become a symbol of Korean pride and is one of the key reasons behind Korea's recognition as a nation of bold, flavorful food. From breakfast to dinner, kimchi is served with nearly every meal in Korea. Globally, it has gained a reputation as a superfood, celebrated for its probiotic and antioxidant properties. As more people embrace healthy, fermented foods, kimchi’s presence in the global culinary scene continues to grow, finding its way into restaurants, food trucks, and even fine dining menus.
The popularity of kimchi has also led to the rise of various fusion dishes like Kimchi Ramen Bowls, which combine traditional flavors with modern appeal. Prepare the Cabbage: Slice the napa cabbage and soak it in a saltwater solution to soften and draw out moisture.
Make the Spice Paste: Blend garlic, ginger, and gochugaru to create a spicy paste. You can adjust the spice level according to your preference for a more or less intense flavor.
Mix Ingredients: Combine the spice paste with chopped radishes, green onions, and any additional vegetables you like.
Pack and Ferment: Pack the mixture tightly into a jar, ensuring it’s submerged in its juices. It is to ferment at room temperature for several days before placing it in the refrigerator.

Woke up at 5:30a, went to bed at 10:30p, nearly perfect weather, crisp and cool low-to-mid-50s in the morning, sunny and clear mid-70s in the middle of the day, back to crisp and cool low-to-mid-50s at the end of the day. I ran, I hiked, I walked.
Started my Saturday earlier than I'd prefer because we had to leave for soccer at 8:30a and I wanted to get my run in before we got the day started.
I lingered a bit too long on the couch, drinking coffee and reading, so I felt I didn't have time for 5 miles--my minimum mileage for what a weekend "long run" is--so I only ran 4.25 mi: Ekana, left on Lockwood, left on Old Lockwood, past the back entrance of the high school, turned around and came back, 39:46, 9:19 pace, first 3 miles in the 9s, mile 4 at 8:36, final quarter mile at 8:24 pace.
At 8a I was at 7,302 steps.
We drove to Sanford for my daughter's game--call time 9:15a, game time 10a. Small sports complex, not much walking to the field from the car. We drove to Lake Mary for my son's game--call time 12:45p, game time 1:30p--stopping at Chic Fil A for lunch and Starbucks for coffee on the way. 12 grilled chicken nuggets with kale krunch and water to drink, drip coffee instead of an americano because the line was long and we were crunched for time.
At 4p I was at 12,127 steps.
My wife and daughter had plans with friends, so it was just the boys and me for Saturday evening. My younger son needed to chillax since he just played a game and he would be playing 11v11 with no subs the next day. I could tell my older son was bored--he had just hung out at home while the rest of us were having our soccer Saturday--so I asked if he wanted to go on a hike. He said yes.
We did the small loop plus the big loop at the Econ River Wilderness area, 2.8 mi, over an hour and 12 min, though we stopped to admire the scenery in a few spots, especially by the river. We talked a little about school and life, but mostly we just joked and laughed, the boy cracks me up, his improv skills are amazing. I read the parenting advice years ago that you should make sure you kids are the type people you want to be around. Never understood what that meant when they were toddlers, I get it now I have teenagers.
At 6p I was at 18,970 steps.
I thought I was done for the day. I told the boys I didn't feel like going out for dinner, I'd make them something. I hate cooking in a messy kitchen, so I had them clean it for 15 minutes or so before I got started. While I waited I watched the Man City highlights on YouTube since I missed the game while watching my kids' games earlier. I told myself I'd watch the full replay on Peacock, but it was a 5-1 win vs. Luton with a rotated lineup, I wasn't going to take much from it, watching the goals on the highlight reel was good enough for this day.
I cooked chicken tenderloin in a pan on the stove with taco seasoning. In another pan I sauteed spinach and a red pepper with everything bagel seasoning. I microwaved cilantro lime rice. I mixed it all together and served it with their choice of salsa and shredded cheese for toppings. The boys weren't enthused but they ate it. I thought it was delicious. I said they could have some chocolate if they cleaned up. I took the dog on a walk and folded laundry with my AirPods in so I didn't have to listen to them clean.
At 9p I was at 23,397 steps.
Again I thought I was done for the day. I put on my pajamas and settled in to watch the final third of Field of Dreams on Amazon, I watched the first two-thirds the night before, April also puts me in the mood for baseball movies. I miss baseball sometimes. My oldest son watched the ending with me. He was so confused, he hadn't watched any part the night before. I talked to him about how I call it "play catch" and that I'd never heard anyone say "have a catch" except in this movie or in reference to this movie. I love playing catch with the football with my boys. I told him I never really remember throwing the football with my dad, it was always baseball. Not going to lie, starting to get a little emotional.
My wife called me just after 9:30p, said she was on her way home and that she needed some steps, would I walk with her? Sure, I said, and I put on a T-shirt, shorts, a hoodie and flip flops. We walked twice around the block, one time with the dog, one time without. She thanked me for helping her stay active. It's what I do I said.
At 10:30p I went to bed with 27,949 steps.

Hey y’all my name is Mwila Roberts I am a athlete so it is very important for me to eat right. Today I made some Alfredo ravioli lasagna. The process is very simple. I would offer to give up the recipe but it is dear to my mom. But to make it all it takes is taco meet, Alfredo slices, peppers, onions and different types of spices my mom got for me. This is one of my favorite dishes especially before game days. #Alfredo #goodeats

What’s up guys? Today I instead of cooking my own food I went to Wings and Deli and got me some hot wings. I choose that flavor because I wanted to try something different. I usually eat lemon pepper wings which are my favorite. I really did not like the hot wings and realized I’m not a very big fan of any hot food. I don’t advise you to eat the hot wings endless you really love Hot things. But me I would much rather stay with my lemon pepper wings!! #hotwings #lemonpepperwings #thebest

Wednesday august 30th
Hey I’m back again with a new meal I cooked today. Today I decided to spice things up today. I decided to make shrimp with rice. I seasoned my shrimp then cooked it and then added my vegetable and cooked those as well. While I was cooking that my rice was boiling. I added heavy whipping cream to the shrimp, mushrooms, vegetable, and added a little more seasoning. I let that sit for a while and then put it on my plate. It was very good and something new I have not cooked before. I always see my mom cooking it so I decided to give it a chance it turned out really well and it’s now one of my favorite foods.
Thursday August 31
Hey hope everyone is doing well! I decided to cook something sweet today. I’m an athlete so I try not to eat sweet stuff as much as I can but I was really craving it today. I decided to make s’more cookies and they were so good. I used gram crackers, Hersey chocolate, huge marshmallows, and chocolate chip cookie dough. I made it like I was making a regular s’more but instead of putting the gram cracker on top I used cookie dough on top. I put it in the oven at 400 degrees and let it cook until it looked done. I took them out the over and they were humongous. I could not eat more than two because they were so sweet. You should definitely try them on your free time!

Friday September 1
Hey y’all !! Today I did not do as much as I usually do I went back home and went out to eat with my family at hibachi grill. I got my usual which is steak and shrimp with vegetables. This is my favorite restaurant because they are cooking it all in front of you so you get to interact with cook and also get to see how they do it. The chef is always the most entertaining part of the whole experience. They are funny and they also interact with you so it’s a very amusing time and it’s fun I got to spend it with my family. I highly recommend this restaurant because they will always make enough for later so you can save some. #habichigrill #thebest

Saturday September 2
Hey y’all back here again with a new meal. Today I cooked dip because of the South Carolina vs North Carolina game today at 7:30pm. Who are y’all going for? I am a big Carolina Gamecock fan! Anyways back to the food I made skillet dip today. I started off cooking ground beef in a skillet and then draining to grease out once it was cooked. Then I added it back into the skillet and put taco seasoning, Rotel, and Velveeta cheese in it and mixed it all together and cook. It was very good especially while watching the game.

Sunday September 3
Hello, today I went out to eat at a place I never been before. I had the courage to try something I never tried before and it was crab legs. I went to Shake Shake with a friend and he made me try a crab leg boil. I really liked it just not the part where I had to work hard just to eat my food but other than that it was very delicious. I would try it again but I would not make it a everyday thing to eat. Maybe a once a month type of food. But one thing I learned is don’t be afraid to try new things. Even though I didn’t really enjoy the food I’m proud of myself and trying something new. #newfoods #crablegs

From cucumbers to other vegetables, the pickling process infuses them with flavor and transforms them into beloved snacks. Hot pickles and sweet pickles are just two examples of the vast pickle landscape, each offering a distinct taste experience.
Hot Pickles: Fiery and Flavorful
Hot pickles are known for their fiery kick, adding a spicy element to the pickle's briny goodness. These pickles are infused with various hot peppers like jalapenos, habaneros, or chili flakes, resulting in a tantalizing blend of heat and tang. Hot pickles cater to those who crave bold flavors and enjoy the thrill of spicy sensations.
Sweet Pickles: Tangy and Delightful
On the other end of the flavor spectrum, sweet pickles offer a tangy and mildly sweet taste. These pickles are typically made with cucumbers and are infused with sugar, vinegar, and spices. The result is a delightful balance of tanginess and sweetness that pleases the palate. Sweet pickles are a hit among those who prefer milder flavors and enjoy a touch of sweetness in their pickled treats.
Versatility in Culinary Creations
Both hot pickles and sweet pickles offer versatility in the kitchen, allowing for creative culinary explorations. Their unique flavors can enhance various dishes and elevate the taste profiles. Here are a few ways to make the most of hot and sweet pickles:

Making Homemade Hot and Sweet Pickles
Making hot pickles or sweet pickles at home allows you to customize the flavors and tailor them to your preferences. Here's a simple recipe for each:
Hot Pickles:
Ingredients:
Fresh cucumbers
Hot peppers of your choice (e.g., jalapenos, habaneros)
Vinegar
Water
Pickling salt
Garlic cloves
Pickling spices (optional)
Instructions:
Wash the cucumbers thoroughly and slice them into spears or rounds.
Prepare a brine solution by combining vinegar, water, and pickling salt. Adjust the proportions based on your desired taste.
In sterilized jars, add a few garlic cloves, hot peppers, and pickling spices (if using).
Pack the sliced cucumbers tightly into the jars, leaving a small headspace.
Pour the brine solution into the jars, ensuring the cucumbers are fully submerged.

Granulated sugar
Salt
Mustard seeds
Whole cloves

Remove the pot from heat and let the mixture cool to room temperature.
Transfer the cucumbers and the pickling liquid to sterilized jars, ensuring the cucumbers are fully submerged.
Seal the jars tightly and refrigerate them for at least 24 hours to allow the flavors to meld together.
Your homemade sweet pickles are now ready to be enjoyed

top ten bites of 2022
10. 2825 day aged Mole - pujol
On the eve of our last night in Mexico City, Jason and I snagged a last minute (very difficult to get) reservation at the $$$$ restaurant Pujol. We had been laying in bed all day trying to regain our appetite from a bout of food poisoning and spent most of this meal running to the bathroom between courses. Our (hilarious) pain aside, it was a spectacular meal. This mole had been continuously cooking for over seven years and had such a depth of flavor (fermented fruit, chiles, and chocolate). The only reason I have it ranked lower on this list is because it was just a plate of sauce and would’ve tasted better on some chicken.
Tumblr media
9. Seafood Beef Stew - Lighthouse Tofu
I usually don’t order Korean stews and opt for a stir fry dish at Korean restaurants, but this stew really changed my mind. The seafood added such a depth of flavor and I loved all the side dishes. Maybe I was biased from not having good Korean food since I moved to DC but I’m still thinking about this meal (and the side of galbi).
Tumblr media
8. Fava Bean Dip and Pita Bread - Andros Taverna
This was the starter for my April 4 birthday meal and it set up a spectacular four courses. Andros Taverna puts pretty much all other dip/pita based cuisine to shame (topping Chicago’s Galit and really any Mediterranean restaurant from here to New York). The sauces had incredible flavor (I love dill) and the oven baked pita is some of the fluffiest, most flavorful bread I’ve ever tasted. My grandma used to cook a lot of fava beans in chinese dishes growing up so this dip in particular had something familiar and something new to it.
Tumblr media
7. Rolled Lasagna - Ciccio Mio
I won’t deny that this pick might be slightly influenced by the scenery. Ciccio Mio has a stunning interior (highly recommend for date night) and my college roommate + I went right before a night at the ballet. This rolled lasagna is probably influenced by the Don Angie one but it’s much cheaper (at only $24 vs $60) and absolutely mindblowing. It’s a perfectly cooked pasta on the inside, crispy on top, and the sauce is full of basil flavor. Finish with an espresso and pavlova and it’s a perfect Chicago meal.
Tumblr media Tumblr media
6. Naem Khao salad - Thip Khao
The only DC meal to make it on this list this year, Thip Khao has been known for this salad for years now. It’s absolutely worth the hype and a perfect combination of textures and flavor. I love the lime, sour pork, and peanuts in this dish. Wrapped in lettuce? Perfection. I’ve honestly never had anything like it and am thankful everyday that I don’t have a nut allergy.
Tumblr media
5. suadero tacos with grilled mexican green onions - Tacos Tony
This was the second taco we ate in Mexico City upon landing and it’s convinced me that al pastor tacos aren’t the best ones on the block. This taco was incredibly flavorful but the highlight was a whole sweet mexican green onion that had been grilled on top of the meat juices. It had a perfect char and tasted delicious on top of the taco. I’ve been buying them from the grocery store lately and charring them myself. I really love how traveling introduces you to new ways of cooking your daily meals.
Tumblr media
4. any slice of pizza - Jimmy’s Pizza
Everything after this is from Mexico City, but a slice of Jimmy’s Pizza is sneaking in at #4. My old coworker once said that his New York born and raised wife claimed Jimmy’s Pizza was better than any slice she had ever had in New York. That might be sacrilegious to say but this stuff has some secret drug in it. I’ve honestly just never tasted anything quite as addicting. I used to get tacos every Friday night in Chicago as a “end of work week” treat but I switched over to Jimmy’s Pizza after discovering it.
Tumblr media
3. pastor con queso taco - Taqueria Los Parados
This was probably the source of our stomach clutching food poisoning. Would I eat it again if I had the chance? Probably. It’s cheese cooked with vegetables, al pastor, and mushrooms topped with the freshest green sauce and pico. Shoutout to Lena for randomly picking this off the menu, we ordered a second round.
Tumblr media
2. tuna ceviche - Paramo
Cheers to Jason’s coworker Diego for suggesting this place. There were so many great drinks (one of my favorite sips of sangria ever) and dishes (boar uni taco? yes) but the tuna ceviche really topped my list. It was simple (tuna, cucumbers, avocado and onions on a tostada) but the fresh fish, bright sauce, and crunchy tostada really made it a perfect dish. (apologies for the dark pic)
Tumblr media Tumblr media
1. snail ceviche - pujol
And topping the list at #1 is another seafood dish - this time at the famed Pujol (as mentioned in #10). This was the dish that shocked me most in the tasting menu. The snail is incredibly fresh and delicate, I drank all the sauce, and it tasted incredible on a taro chip. If it’s not obvious now, I love contrast in dishes (something with a softer texture + something crunchy, lots of acidity, some fattiness) and this dish executed that perfectly.
Tumblr media Tumblr media
honorable mentions: blanco colima’s lemon dessert, pho 75′s pho, chicken milanese torta from la esquina del chilaquiles, steak chilaquiles from el cardinal, every other pujol dish, oyster taco from mi tocaya, the octopus okonomiyaki from gaijin, seolleongtang from han bat.
Best drinks
4. Mexican beer - i don’t remember the name it came in a yellow can but way better than the beer i’ve had before
3. Floral white sangria from Yunnan by Potomac
2. Sangria from Paramo
1. Belle’s punch from Succotash

Get to Know Me Tag
Hey, hi, hello! Thanks for the tag @emelkae!
Relationship Status: single :) Favorite Color(s): uhhh ... pink, purple, orange, yellow? Favorite Food: hate this question!! what is food? ummm. bread, honestly, but you can never go wrong with tacos. xP Song Stuck in My Head: Gentleman Soldier (& the drums they go ratatatat & the fifes still loudly play, say, fare thee well polly my dear I must be going away) Last Thing You Googled: ...amphetamine salts vs dextroamphetamine salts bc ADHD meds! my starting dose was useless but I swear I felt more of an effect from those than I am from my new dosage & I'm half convinced it's bc I got a different kind of pill this time for some reason >.> Time: 9:05pm Dream Trip: ummm.... Ireland, Scotland ... oh! someone told me about a thing in Greece (real life River Styx, hell yeah) so I wanna check that out. xP Last Thing You Read: like, finished reading? shit, I think that was You've Reached Sam (I was very disappointed). Unfinished ... um. Mean Baby by Selma Blair (memoir, have only stopped reading bc book is Too Big for my bag xP) The Invisible Life of Addie LaRue by VE Schwab (enjoying a lot, but it's also too big for my bag) & I'm currently reading Carmilla by Sheridan Le Fanu (on page 109/156, totally meant to finish it tonight & start another book tomorrow but I took a 'nap' instead, whoops.) Last Book You Enjoyed Reading: again, finished? bc I'm enjoying Addie LaRue, but for a finished book .... Loveless by Alice Oseman! I swear I have at least half the book underlined bc it made me laugh, or bc I related so hard... I was maybe 50 pages in & raving to my sister just like 'if you still don't really understand asexuality after hearing me talk about it for 4 years, read this book omg'. It's so good, y'all. Favorite Thing to Cook/Bake: ummm.... I ... don't cook. >.> & I haven't baked in a minute. grilled cheese, maybe? Favorite Craft to Do in Your Free Time: .....I'm saying um a lot, but. ummmm. I ... don't? Like, I got into knitting for a hot second, but all that's been in a drawer/box/on a shelf for at least a year and 3/4 at this point. (Oh no, longer! I was still in AZ when we did the knitting thing! It's been 3 years!) I tried crochet but couldn't get the hook to do the thing. I honestly can't think of any other crafty thing I've tried, sooo. Yeah, no. I don't. Dx Most Niche Dislike: ummm. okay, actually? the zebra printer on my desk at work. I am the only one that hears the high-pitched whine/hum it makes all day but my god I hate it. Opinion on Circuses: I misread that as 'citruses' earlier. xP Um. I wanna go to one - I think I maybe have a vague memory of going to one? But all I really remember is noise & cotton candy & that it was nighttime, so maybe it was a very vivid dream or just a fair. I dunno. Do You Have Any Sense of Direction: Nope! None! Do not ask me where I am or how to get anywhere bc I don't know!
xP Okay, soooo. Open tag! bc I dunno who to tag for this. it has been days since I was tagged & I know I saw a few people do it & now I can't remember who. so! If this shows up on your dash & you wanna play, have at it! (Do it. @ me; you read my rambling, I'll read yours xP)

First Lines
Thanks for tagging me @the-lincyclopedia!
Rules: List the first lines of your last 5-20 stories.  See if there are any patterns. Choose your favorite opening line. Then tag others!
1. “Um, River? You have something in your hair, do you want me to get it out?” - Drops of Jupiter in His Hair
2. “Will is crawling around inside one of the oldest jaegers, Obsidian Star, when he hears one of the other techs say his name.” - Drift Compatible
3. “Will is on his bed, trying desperately to make his code work, when he’s interrupted by a banging on his door.” - I See Your Point
4. “Dex knows how hard being a team manager can be.” - Post Game
5. “Oh fuck this.” - None of Us Deserve Caitlin Farmer
6. “Caitlin couldn’t remember a time when Beth, her older sister wasn’t there; playing with her, protecting her from the monsters in the closet, braiding her hair.” - Holly and Honeysuckle
7. “Heartflowers tend to be private things.” -  Chives and Marigolds
8. “How seriously should we be taking the whole grill thing?” - Needed: Grill Dad
9. “Dear George,
The reading went great, Thirdy was a big help setting everything up with the venue, you should give that helpful, handsome, and caring man a raise.” - How Delightful If That Were True
10. “Great job guys, good work today. Take tomorrow off and get ready for classes to start, and then regular practices start tomorrow night,” Dex says. - More Cheese Than a Dairy Farm
11. “Ransom loves Samwell, even if he can only make it down for Alumni Weekend.” - Alumni Weekend
12. “Normally, Nursey loves living in the Haus.” - Frog Pile #37, In B Major
13. “Derek was pretty good at making friends. Usually.” - Oh, wouldn’t it be Andoverly?
14. “Uhhh, Nurse? What’s that you’ve got there?” - (Chain) Mail Call
15. “Nursey’s day had been shitty.” - Trade Deadline
16. “In Nursey’s opinion, there was no worse time to realize you were in love with someone you weren’t dating than in the last semester of college.” - Over Tacos, With Love
17. “Derek looked around his room and sighed.” -  Portrait of a Writer as a Young Man
18. “Jane Kennedy loves her job.” - ASL 101 - J. Kennedy - MWF 10:00 AM - 11:15 AM - Chandler Building Room 203
I knew I wrote mostly nurseydex stuff, but it is a lot seeing all of them in a row. And I think I am exactly balanced at using actual names vs nicknames for nursey and dex, which is interesting.
I think my favorite opening line is a tie between, “In Nursey’s opinion, there was no worse time to realize you were in love with someone you weren’t dating than in the last semester of college,”  and “Oh fuck this.”
Edit: I forgot to tag people but literally whoever wants to should do it :D

Tag Game
Rules: Tag 15 people you want to get to know better!
I was tagged by @dwindledownthesidewalk
So let's get started!
1. Relationship Status: Single! (I've been wanting to start another relationship with a guy but I don't know how one goes about doing that)
2. Lipstick or Chapstick: I actually love flavored Chapsticks! Grape and Orange Cream Pop being my current favorites.
3. Favorite Foods: I like chicken and cheese tacos, grilled chicken, and also pomegranates. But I can't live without Apples.
4. Song that's stuck in your head: Fifth Perriot by MOTHY. I really like the Evilious series!
5. Last film you watched: That one is hard to remember but this morning I was watching Ice Age: The Meltdown. I didn't get to finish it but I love that movie.
6. Top three favorite TV shows: I like Steven Universe, Star VS. The Forces of Evil, and Blue Bloods.
7. Book you are currently reading: I just finished reading The Epic of Gilgamesh for school and I loved it! I plan on reading the Illiad and the Odessey next!
8. Last thing you googled: "Dark pink shorts." I want to cosplay Pink Diamond wearing heelys and being a total meme so I'm gathering an outfit for her plus I want to cosplay a Female Arin from Game Grumps.
9. What's the time?: It's 8:31pm! It's also raining so we are losing the TV signal.
10. Dream trip: I would love to go to Greece or Italy! My great grandfather came from Italy so it would be interesting to see if I have any family over there! I'm also a huge nerd for Greek mythology especially Hades and Persephone so it would be amazing to see the temples dedicated to the Gods of Goddesses.
11. Anything you want: I would love to have a paid trip to college so I can become an anthropologist for a musuem! I would also love to have any family debt paid off and a house in a nice state full of trees where my family can move and live near me in a close house nearby. I would love to meet the friends I have overseas and in the states.
