Wipe away your tears and stock up on breath mints as this can mean only one thing to the culinarily inclined – it’s spring allium season! So, sharpen your chef’s knife, shine up those onion cutting goggles and get ready to indulge in all things delightfully pungent and sulfuric. Alliums are a genus of grass-like flowering plants that encompasses hundreds of species, including onions, garlic, and shallots, all of which are safely edible for humans. By mid-April, several allium crops are entering peak harvesting season. Here are some of these springtime allium treats to look out for in the farmstands of your local farmers market over the course of the coming weeks. Ramps (Allium tricoccum) Once a relatively obscure wild onion native to the forests of the northeast, ramps are now so popular that ‘ramp mania’ or ‘ramp fever’ takes hold of the trendy New York food and restaurant scene every spring. Fueling this annual frenzy is the fact that this exclusive allium is only in season for a few short weeks and has become increasingly rare in the wild due to overharvesting by eager foragers. Furthermore, ramps are hard to cultivate because they are notoriously slow growing plants that require woodland habitat to thrive. However, farmers with forested land that is too shady for conventional crops can grow ramps if they are willing to wait from five to seven years to reap their first harvest. You won’t find ramps in the produce aisle of your average supermarket, but they can be discovered in farmers markets from around mid-April through early June. These much sought-after treasures resemble leafy green scallions with a thin white bulb and are edible from top to bottom. Ramps can be chopped up and added raw to salads or sprinkled as a flavorful garnish on top of different dishes. Their garlicky flavor mellows when cooked and they are delicious sauteed whole in a little olive oil and sea salt or grilled on the barbecue. Pickled ramps are a delicacy that can be enjoyed year-round, even after the fleeting ramp season is long gone. Green Garlic (Allium sativum) Unlike regular garlic that is left to grow to peak maturity then harvested and cured, green garlic is picked in its adolescence before its bulb has divided into cloves. Green garlic, also known as young, new, baby and spring garlic, is a natural result of farmers thinning out their garlic fields to make room for larger plants. A spike in popularity amongst farmers market shoppers in recent decades has turned green garlic into a crop in its own right. Freshly harvested bunches of this tender garlic can be spotted at farmers markets between late spring and early summer. Green garlic is easy to confuse for large scallions or spring onions, but its aroma is unmistakably garlicky. You can use all parts of the green garlic plant to cook with apart from stalks that have turned tough and woody. Because it is milder in flavor than the matured version, green garlic can be added liberally to a variety of dishes including salads, stir-fries, omelets, stews, casseroles, curries and roasts. Spring Onions (Allium cepa) Often confused with scallions due to their similar appearance and the different naming conventions of other countries, in the United States spring onions refer to young onions that are harvested before they are allowed to mature into full-sized storage onions. Unlike their papery skinned counterparts, spring onions can be identified by their small- to medium-sized bulbs that are either red or white in color. Thanks to their relatively mild flavor and crisp, juicy texture, spring onions can be enjoyed raw in salads, sandwiches and relishes. They taste great when grilled, roasted whole, or used like pearl onions, while their greens are more intense in flavor than scallions. As the name suggests, spring onions are harvested in the spring which means you can find fresh, verdant bunches of them in the farmers markets now through early summer.

You know what? Today was a day of indulging into some delicious treats, and there was a cooking advice post in my queue! Let the food questions come in! And thank you for joining the game. (^∀^●)ノシ
🍽️ Are you craving any particular food right now? Not at the moment, yet a restaurant I really like is currently very creative with their pasta dishes, and I can't wait to treat myself with them after mock exams. 🍔 What's your ideal burger? After the absolute gourmet feast @bigre-fichtre presented, it's hard to come up with anything equally delicious. But let's try: Lye bread bun, medium rare beef patty spiced with minimally with caraway and red pepper, Gorgonzola sauce, fried mushrooms (either button mushroom or chanterelle) mixed with finely sliced springonions, and crispy bacon stripes.
🥧 Favourite pie? Savoury: Hare pie, with mushrooms if possible, with golden crust. Sweet: Lemon pie, Italian Chestnut cream pie
🍦 Top picks for a 3 scoop ice cream cone? Alright, please note that I pass at least 3 ice cream shops from my way from work to home. If I'd take a detour I'd pass 6. All of them are either in hands of Italian ice cream makers or ambitious hipster cooks. Hence, this answer is poisoned with spoiled rotten, pretentious city citizen pretentiousness: Raspberry, Pistachio, Early Grey.
🍳 What do you like to do for breakfast? On work days: Usually something I prepared before hand, and can easily be reheated like porridge, misosoup, or spiced fruit salad. If I've time, Shakshuka or Bánh Tráng Nướng (the latter I highly recommend as it's quick, easy, and tasty!) On free days (would love to have one of those someday...): Usually something egg based like scrambled eggs, or if I'm feeling fancy: Pancakes. My partner has some remarkably peculiar cooking skills which do include a perfect poached egg and omurice.
🍩 Hottest food to see somebody else eat? Well, my Vietnamese colleague once poured Sriracha over his Buldak-instant soup, so...
🧑🍳 Do you have a food or cooking (or eating) tip for us?
Not much of a secret but some savoury dishes sincerely flourish from sweet pinches: Add a pinch of cinnamon in your meat, no sugar, to you meat to give it a more tender aroma. A teaspoon of sugar or honey in your tomatoe sauce sooth the sour aspects of the tomatoes.
Oh, and if you've any vegetables containing a lost of water, let them leak first. Cut them, put them aside at a safe spot (board, plate, bowl, anything goes), add a pinch of salt, stir them a bit, so they can leak excess water. It helps to prevent certain dishes to become runny or soggy.
🍿 Best movie snack? In cinema: Could do without, although during action movies (sweet) popcorn is nice. At the home screen: Chickenwings (with mint dip), or pizza. ;)

Every silly game had to end once – and though this one had felt so private, the call for Aerith brought Somnus back to reality. They were in a part of that castle, where they were relatively secluded. And yet they had to keep in mind that Aerith’s maids were around a lot probably.
Grinning, he raised an eyebrow while finally carrying her back out to the corridor.
“Princess Springblossom? And springonion? You really make yourself quite the collection of names. I see a thread there.”, he commented on her nicknames. Spring. It really suited her. And yet there was something… adorable about all these names. No doubt she was loved by all who used these.
Of course he would not toss her. Somnus just carried her back to where the bath was, across the door’s threshold and only then did he let her down. Slowly. Making sure her feet were planted firmly on the ground before he let go of her back.
He could see the older lady maid standing by one of the foggy milk glass windows, eyeing him a little warily. And he could not even blame her. But Somnus was in such a good and riled up mood from all the pampering, kindness and laughter he had just experienced, that all he could do was bow to her and then to Aerith once more.
“I will leave you in the hands of this sweet lady.”, he announced while coming up from his bow again.
Taking his leave, this time there were no hurried steps back to their chambers. He felt like there was more of a spring in his gait. Maybe this here really was a new start to all… even if there were dark clouds looming at the horizon. At least for today they could pretend.
The time when Aerith was occupied with her bath, Somnus used to dress himself finely in a long toga, wrapped with another deep blue cloth and adorned with some golden embroidery. This was his first evening here after all. He had to make a good impression. Even if it was just for her family once more.
Then his curiosity won over. Returning to behind the privacy screen, Somnus tried to figure out what oils Aerith had used. Carrying the basin back towards the corridor, he finally found a servant, who – by the looks of it – froze and tried to flee when he suddenly found the Prince there. But now was relegated to getting new hot water.
Somnus wanted to return a kind of gesture. One that was very old in Lucis, barely remembered. But he hoped she would appreciate it, as he stirred the flowery oils into the hot water using his fingers to comb through the water.
That laugh coaxed a bright smile from Aerith, one that split into a grin when he teased at her nose. "Heyyyy." she raised her hands as if in surrender. "I'm a walking bouquet, you have to be more loud if you want me to notice these things."
It was a silly little defence. Honestly? The times when she had gotten close to him... there was a small reason she picked the citrus. He probably knew that, and was far too nice to simply call her out.
Clasping her hands behind her back she nodded to Somnus in kind. "You're welcome!" It was bright and cheerful.
She had a mind to leave him to his privacy then. Though no sooner had that thought sprouted, she gasped a little breath as he cheekily dabbed at her cheeks with his chosen oil. Her opened mouth shaped into a smile as he cupped her face.
"Oh? I don't think the bath- uah!" That comical little startle bled into a laugh as she reached for him. He did something rare. His action managed to silence her, even if it were only temporary.
Though Aerith did relax a little into his arms. He was clearly capable of carrying her, and the sudden feeling of weightlessness was quickly replaced by a giddy kind of feeling. Like she were a teenager again and the cute boy she glanced happened to glance at her too.
Her head tipped back with an open laugh, one that wasn't restrained behind her hand, it echoed down the hall with its melodic tune. She made a little show of cupping and patting both her cheeks with her hands.
"Mmmh. I feel the same? You said doors, maybe you have to do it again." It was a silly little game. Part of her was coaxing him to save his modesty in case any staff came across them in the hall, though another part of her was simply feeling playful. He pulled that from her. She didn't feel like she had to stand straighter and act a certain way with him, she could just be... her.
Good thing she urged him to try the magic again. His leisurely pace brought them in a magnificent loop, here, there, everywhere, eventually back into their room again when a distant voice called "Princess Springblossom, the bath is prepared!" It was the voice of her mother's lady's maid, an older woman. No doubt the younger ladies had scurried and asked her for this favour, too nervous yet to make such announcements while the Princess was with the Prince. In his arms. Being a little silly.
"Thankyou!~" the 'Springblossom' in question called back, her cheeks practically aching with how much she was smiling at him. "Ah! You know what, that luck is finally working. You did it right after all. Now you can see how far you can toss me, maybe you'll even land me in the tub?"
