Wipe away your tears and stock up on breath mints as this can mean only one thing to the culinarily inclined – it’s spring allium season! So, sharpen your chef’s knife, shine up those onion cutting goggles and get ready to indulge in all things delightfully pungent and sulfuric. Alliums are a genus of grass-like flowering plants that encompasses hundreds of species, including onions, garlic, and shallots, all of which are safely edible for humans. By mid-April, several allium crops are entering peak harvesting season. Here are some of these springtime allium treats to look out for in the farmstands of your local farmers market over the course of the coming weeks. Ramps (Allium tricoccum) Once a relatively obscure wild onion native to the forests of the northeast, ramps are now so popular that ‘ramp mania’ or ‘ramp fever’ takes hold of the trendy New York food and restaurant scene every spring. Fueling this annual frenzy is the fact that this exclusive allium is only in season for a few short weeks and has become increasingly rare in the wild due to overharvesting by eager foragers. Furthermore, ramps are hard to cultivate because they are notoriously slow growing plants that require woodland habitat to thrive. However, farmers with forested land that is too shady for conventional crops can grow ramps if they are willing to wait from five to seven years to reap their first harvest. You won’t find ramps in the produce aisle of your average supermarket, but they can be discovered in farmers markets from around mid-April through early June. These much sought-after treasures resemble leafy green scallions with a thin white bulb and are edible from top to bottom. Ramps can be chopped up and added raw to salads or sprinkled as a flavorful garnish on top of different dishes. Their garlicky flavor mellows when cooked and they are delicious sauteed whole in a little olive oil and sea salt or grilled on the barbecue. Pickled ramps are a delicacy that can be enjoyed year-round, even after the fleeting ramp season is long gone. Green Garlic (Allium sativum) Unlike regular garlic that is left to grow to peak maturity then harvested and cured, green garlic is picked in its adolescence before its bulb has divided into cloves. Green garlic, also known as young, new, baby and spring garlic, is a natural result of farmers thinning out their garlic fields to make room for larger plants. A spike in popularity amongst farmers market shoppers in recent decades has turned green garlic into a crop in its own right. Freshly harvested bunches of this tender garlic can be spotted at farmers markets between late spring and early summer. Green garlic is easy to confuse for large scallions or spring onions, but its aroma is unmistakably garlicky. You can use all parts of the green garlic plant to cook with apart from stalks that have turned tough and woody. Because it is milder in flavor than the matured version, green garlic can be added liberally to a variety of dishes including salads, stir-fries, omelets, stews, casseroles, curries and roasts. Spring Onions (Allium cepa) Often confused with scallions due to their similar appearance and the different naming conventions of other countries, in the United States spring onions refer to young onions that are harvested before they are allowed to mature into full-sized storage onions. Unlike their papery skinned counterparts, spring onions can be identified by their small- to medium-sized bulbs that are either red or white in color.   Thanks to their relatively mild flavor and crisp, juicy texture, spring onions can be enjoyed raw in salads, sandwiches and relishes. They taste great when grilled, roasted whole, or used like pearl onions, while their greens are more intense in flavor than scallions. As the name suggests, spring onions are harvested in the spring which means you can find fresh, verdant bunches of them in the farmers markets now through early summer.
