A traditional South Indian breakfast or brunch dish made with rice and lentils is called Ven Pongal, or Savory Pongal. Its flavor is deep and comforting, enhanced by the addition of ghee and spices.
Ingredients: 1 cup rice. 1/4 cup split yellow moong dal yellow lentils. 2 tablespoons ghee clarified butter. 1 teaspoon cumin seeds. 1 teaspoon black pepper, crushed. 2-3 green chilies, chopped. 1 inch ginger, grated. 10-12 curry leaves. 2-3 tablespoons cashew nuts. Salt to taste. 4 cups water.
Instructions: After giving the rice and moong dal a thorough wash, remove the water. Heat the ghee in a pressure cooker over medium heat. Stir in the cashew nuts, curry leaves, chopped green chilies, grated ginger, cumin seeds, and crushed black pepper. Saut the cashews until they become golden brown. Fill the pressure cooker with moong dal and rinsed rice. Saute for two to three minutes. Add water and salt. Mix thoroughly. Once the rice and dal are thoroughly cooked, close the pressure cooker lid and cook on medium heat for four to five whistles. Open the lid and give the Ven Pongal a gentle stir after the pressure releases naturally. Serve hot with sambar or coconut chutney.

Cook Time: 20 minutes
