đ LE LIMONCELLO đ
Câest une liqueur dĂ©licieuse Ă boire en digestif aprĂšs un repas, mais aussi parfaite pour ĂȘtre utilisĂ©e en cuisine dans des desserts. Le Limoncello est fait Ă partir dâĂ©corces de Citron macĂ©rĂ©es dans lâalcool.
Câest une spĂ©cialitĂ© Italienne, de la pĂ©ninsule de Sorrento pour ĂȘtre plus prĂ©cise.
Avant de se lancer dans le Limoncello maison, essayez par tous les moyens de vous procurer de lâalcool pur Ă 95°.
âïžAttention, nâutilisez pas de lâalcool Ă 90° MODIFIĂ que lâon trouve Ă la Pharmacie, celui-ci nâest pas consommable âïž
Câest ce degrĂ© dâalcool qui va vous donner le meilleur rendu pour la liqueur maison.
Si vous nâen trouvez vraiment pas, prenez de lâalcool de fruit, mais en gardant Ă lâesprit que cela sera moins bon.
đ Dilution de lâalcool
Pour 1 litre dâalcool pur Ă 95°, on compte gĂ©nĂ©ralement 1 Ă 1.3 litres dâeau en fonction de vos goĂ»ts en sachant quâ 1.2 litres dâeau pour 1 litre dâalcool Ă 95°C vous donnera un alcool Ă 45°, pour moi la dilution idĂ©ale pour une liqueur.
Si vous utilisez de lâalcool de fruits, donc un alcool Ă 40°, pas besoin de le diluer dans de lâeau car vous nâavez pas besoin de le rendre moins fort. Il vous faudra cela dit, une toute petite quantitĂ© dâeau pour dissoudre le sucre, qui ne se dissout pas seul dans lâalcool. Je conseille un demi verre dâeau pour cela, pas plus.
Selon les goĂ»ts, je recommande donc 400 g de sucre pour 1 litre dâalcool Ă 95° et seulement 250 Ă 300 pour 1 litre dâalcool Ă 45°.
đ RECETTE DU LIMONCELLO avec de l'alcool pur ou avec de l'alcool de fruits
⹠Temps de Préparation 30 minutes
âą Temps de Cuisson 5 minutes
âą Portions 2 litres
đ IngrĂ©dients
⹠1 litre d'alcool à 95° ou à défaut, d'alcool de fruits à 40°
âą 400 g de sucre ou 225 g si vous utilisez de l'alcool de fruits
⹠6 gros citrons bios non traités
âą 1.2 litres d'eau de source ou un demi verre d'eau si vous utilisez de l'alcool de fruits
đ Instructions
⹠Lavez les Citrons et prélevez l'écorce avec un économe en essayant de ne pas prélever le blanc du citron, qui est amer, et juste la partie jaune.
⹠Faites les macérer pendant un mois dans l'alcool dans un endroit frais et sec, à l'abri de la lumiÚre. Remuez la bouteille réguliÚrement pour que les arÎmes se développent bien.
⹠AprÚs un mois de macération, filtrez l'alcool. Préparez un sirop de sucre en faisant bouillir le sucre et l'eau jusqu'à ce que le sucre soit dissout. Laissez bien refroidir avant de mélanger ce sirop à l'alcool.
⹠Mettez en bouteille et laissez reposer la bouteille une dizaine de jours de préférence avant de la consommer. Conservez-la au congélateur.
Le limoncello se déguste trÚs froid, il ne gÚlera pas à cause de la forte concentration en alcool.
đ Un autre conseil ?
Jâai pu voir dans quelques recettes que certaines personnes rajoutaient un peu de jus de citron pour rĂ©hausser le goĂ»t.
Bonne idée ou pas ?
Pour avoir essayĂ© les deux, clairement, ma rĂ©ponse est non. Le jus de citron ne va pas rĂ©hausser le goĂ»t de votre liqueur, elle va juste lui donner un cĂŽtĂ© plus amer que lâon ne veut pas retrouver dans du limoncello. Si vous voulez rĂ©hausser le goĂ»t, si par exemple vous ne le trouvez pas assez citronnĂ©, rajoutez des zestes et attendez quâils macĂšrent Ă nouveau, ou faites macĂ©rer votre prochaine liqueur plus longtemps mais ne rajoutez pas du jus, cela fausserait les proportions et altĂšrerait le goĂ»t.

Hiiiii. I really wanted to be able to do this for you; please forgive me for this not being my strongest of pieces. I did have to add Gordon to get Kayo to speak to me, and the lemons are there even if the tree is not. <3. They are siblings, and peers, and they respect each other. Hopefully it shows. Thanks so much for the ask and the support.
I like the headcanon of Gordon calling Kayo "Tin" so I borrowed that from Nutty with her permission. :D

âHey, Tin?â Gordon quickly plopped into his mouth a sardine from the charcuterie display heâd ordered as his antipasto and, as Kayo grimaced at his manners, he at least had the good graces to swallow before he continued. âIïżœïżœïżœm going to need you to relax.â
âI really donât understand how you can eat that.â
âThey are a bit salty,â he mused, swirling on the flavor still in his mouth. âBut I canât just leave the little fishies there uneaten. Itâs inhumane.â
âYeah, ok.â She turned back away from his feast of fish, gazing out to the expanse of ultramarine beside them.
It was to be his home the next few days â the Gulf of Naples that is, beautiful waters in Mediterranean blue, watched over by what was left of the towering Mt. Vesuvio visible in the distance. For Gordonâs experience in the depths of the sea, the bay was a relatively shallow estuary. But it wasnât about how deep the body of water went. He was more concerned with what creatures called the place home, in this instance which fin whales â and one razorback in particular heâd been tracking as part of his research dissertation. (D.Sc. meet Gordon Tracy!)
Gordon called it a âsurface tripâ which didnât mean surface at all really, just that heâd be arriving by boat instead of submarine and diving within the capabilities of standard research tech instead of the Brainsâ tested and certified deep-sea gadgets of International Rescue. It would be enough for him to listen to the whale song, and if he was lucky, maybe heâd get to see his boyo.
Since the excursion was to depart tomorrow out of a little town in the outskirts of Sorrento, arriving a day early gave Gordon the time to reorient himself to the normal sleep schedule of the time-zone and decompress from being constantly on call as they were. Heâd been in Italy for only a few hours, but the warm wind and the friendly lapping of blue on the shore calmed him, so his spirits were high despite the nerves around the importance of this trip.
His companion was less thrilled by the break. Virgil had been unavailable, Scott was busy with Tracy Industries reports, and Alan could hardly fly him over in a space rocket, so Kayo had offered to drop him off. It had taken some heavy pleading, a bit of chore reallocation, and eventually Kayo agreed to stay and leave the next morning.
A worthy exchange. His siblings deserved a holiday. And once he saw an opportunity unfolding to spend some time with his sister, he couldnât let go of the idea. They didnât call him a master of pranks for nothing â though this was less of a prank and more of a gentle coercion.
Their first of their entrĂ©es arrived, for the traditional trattoria included two within the standard four-course meal, and Kayo nodded kindly in thanks. Gordon beamed, a âGrazie!â while he moved his plate of fish to the side to make room for his pasta. Â
âIâm relaxed,â she told him after a while only once theyâd dug into their meals. âReally.â Â
Gordon eyed her deliberately, mindlessly twirling his pasta with his fork and watching peridot scanning the room even as she said it. âI think you think that. I can tell you are still on look out.â He saw her start to panic and added, âI can only tell because I know you.â
She frowned, shrugging. âMaybe I am. Someone has to do it.â
âIt doesnât have to be you all the time. We are safe; promise.â
âYeah?â
The skepticism was evident. He was almost offended. Almost. Â âYeah.â It had been a long time since his brief service in WASP, but the training gave him lessons for a lifetime. âClosest exit is that oneâ â he gestured his fork towards the wall to their left â âthereâs a gentleman behind me that obviously knows who we are but wonât dare approach because you keep giving him the stink eye, our server is oblivious which is kindaâ nice actually, and the owner has come by twice. Dice is out on that one, but heâs harmless. Now, agree to get some limoncello with me.â
âGordon- â
âWeâre in Italy; itâs required.â
âItâs a digestivo. That means after the meal.â
âItâs alcohol,â he challenged, grinning. âThat means when the mood strikes. I wonât push if you donât want any, but lemons, Kayo. Lemons.â
âYeah, yeah. You make lemonade.â
âNuh-uh. You make limoncello!â He was pleased to see her laughing, even if it was at his expense. Kayo was good at her job, too good, and she took after workaholic Scott in ways Gordon didnât necessarily believe were the healthiest of habits. He knew what it was like to be âonâ all the time. It would cause burn out. Always did.
They placed their additional drink order and the bottle was brought out with the timing of their second entrée as they requested, with minimal questioning. The locals were kind about the whims of their tourists.
âSo where did you stash Shadow again?â
Kayo swirled the narrow glass to twirl the liquid neon, and she narrowed her eyes at him with a gleam. âWouldnât you like to know?â

Day 2 - Lemon Frenzy đ

Lemons spotted: all of them.
Drugs are great. We took some to sleep and it enabled us to get thru the night and wake up comfortable in the morning, ready to face the day.
Our B&B host, Dino, chided us for not telling him ahead of time that we are both vegano, that he could have plant milks for us, and that his wife is vegan. (Of course not as strict now they have a kid because kids make everything harder, he says. âWait til you have kids,â to which I got to reply with delight âOh no Iâm sterile.â) He was hilariously Italian as he went on and on about mozzarella, erculano, and how weâre going too fast and we go to bed too early.
We escaped long enough to trek thru Pompei to get to a cafe that allegedly had vegan-as-is croissants (unlabeled). If you know anything about me, you know I canât resist a vegan croissant. We booked it thru town with a minor detour due to some big church thing for Madonna (I canât believe she tours in Pompei!) to get our croissants where Google translate helped mediate the exchange. We got two citrus croissants that were not labeled anywhere as vegan but the guy didnât correct us when we asked âvegano?â three or four times.
We checked out and leisurely made our way to the train station - another long walk - only to arrive at the platform at the same time as the train to Sorrento. How perfect! Except we donât have tickets yet⊠so we buy our tickets, the train leaves, and weâre forced to wait forty minutes for the next train, only to discover no one ever asked for our tickets and no entry required them. We could have totally gotten on the first train without paying and we wouldnât have had to wait. Crime does pay, as it turns out.
âTwas a crowded train ride to the end of the line, where we then had to trudge for nearly half an hour with our bags on cobbled streets and unreliable sidewalks to get to our hotel. (Side note: i wonder why no one ever talks about all the vespas and scooters in Italy. There are so many! I just figured I would have heard about it before this.*)
We checked in to our hotel around lunchtime, ate our croissants illicitly on the balcony (no food allowed in our hotel room), and headed back out. Naturally, all the stuff we wanted to visit was back in the direction of the train station, but a 25 minute walk goes much easier without two backpacks and a roll-y bag with dysfunctional wheels.
To paint the scene, all these walks are lined with more citrus trees than youâve ever seen in your life and drivers who might not actually run you down but you probably shouldnât test that theory.
We grabbed a quick lunch at a family owned Italian restaurant and had some tasty food including âthe best tomato pie [Dan has] ever hadâ then continued on my lemon quest.
Walking on our way to a limoncello Lemon grove we passed another one that we were able to walk around in. It was so pretty. A lovely garden with lemon trees, orange trees, olive trees, squash plants, tomato plants, and peppers. They also had a restaurant but we were so full we decided weâd come back for dinner.
On to I Giardini di Cataldo where we had hoped to have a tour and a limoncello workshop but they didnât have any available for the day. Womp womp. We tasted some limoncello and got lemon sorbet and ate it in their lemon garden before continuing to meander in the direction of shops.
Fortunately I had set a limit as to how many Lemon things I could get for myself and I immediately met that limit so I guess Iâm done shopping for the⊠trip. Except I still need a Leonardo souvenir, I mean letâs not get crazy.
Here I am casually showing off all my lemons.
Another 25 minute walk to the hotel to drop off our stuff. By this point, I can confirm we had already exceeded yesterdays step count.
Just before sunset we walked to a dock overlooking the coast and watched the last rays of orange sunlight disappear behind the horizon. The coast is a steep cliff face that drops off into the ocean, but in the distance you can actually see Napoli looking like an island, in reality just more of the Italian coast. Then Danâs eagle eyes spotted a bat. Then another. And sure enough within a nook of the cliff, at least half a dozen bats had roused and were feasting. It was awesome. We watched them for a little bit. I think a few more even joined them as we watched. It certainly felt like there were more bats there when we left.
And the days recurring themes of walking and lemons continued as we headed back to La Limonaia, the lovely lemon grove where we had decided to dine. Our wonderful server was very confident about our âveganoâ requests and he had the chef prepare dishes for us. For Dan, a lemon vegan cream sauce on linguini and for me, a salad made with fresh veggies from their garden. Those same veggies we had seen in the afternoon as we wandered around the grove. So fresh! And I could totally tell. I slathered my tomatoes in balsamic glaze and enjoyed some of the best tomatoes Iâve ever had. (Also a hilarious thing weâve noticed here is when they bring you bread it comes in a little paper bag as opposed to a bowl or a plate. Itâs so funny.) We drank, we ate, we were merry, all under the lemon trees. âTwas in general a near perfect dinner experience and we happened upon it by happenstance. Not only a great way to celebrate Jimmy Carterâs birthday but our 12 year anniversary. Six years of marriage. I canât believe Iâm old enough for that but there it is.
After dinner we met Carol at her hotel which was thankfully in the same direction as our hotel so we wouldnât have to backtrack anymore. She got us drinks, gave us a lemon souvenir sheâd gotten in Capri that day, and she and her group regaled us with stories from their trip. As ours is still near the beginning, theirs is coming to an end. We chatted until we noticed the bartender was waiting for us to be done to leave so we wrapped it up and Dan and I walked back to our hotel to gratefully rest.

Eccoci finalmente a Sorrento. Preparatevi ad iniziare un viaggio 𧳠colorato, vitaminico (come i đ di questa terra), gustoso, raffinato e molto speciale. Tutto inizia proprio qui al @mediterraneosorrento đš, il posto perfetto per un soggiorno da sogno, mentre si scopre (o riscopre, come nel mio caso) la Costiera Sorrentina e Amalfitana. Per lo staff di questa struttura alberghiera non ci sono clienti, bensĂŹ ospiti. Qui mi vedete nella zona piscina, a pochi passi del giardino di agrumi privato. A bordo della piscina trovate lâAqua Pool Lounge, ideale per un pranzo delizioso o una cena informale. Vi consiglio di provare la famosa pizza mimosa (con quelle note di limone đ che vi sembrerĂ di assaggiare Sorrento) del super pizzaiolo Benito.
