✿ バルブーニャ・サヴォロ | Μπαρμπούνια Σαβόρο ・サヴォロ(サボロ)の語源は多分ヴェネツィア料理のsaor(主に揚げ魚で作られるマリネ) だと思うのですが、歴史的にヴェネツィアの影響を受けたイオニア諸島、ペロポネソス半島、ドデカニサ諸島などで特によく作られるようです。これも地方によってさまざまなバリエーションが見られ、レーズンや玉ねぎ・ベイリーフの入ったもの、トマトの入ったものなど。食べ方も揚げたてをマリネ液にさっとくぐらせただけのものから、保存食として薄めてないビネガーにしっかり漬けられたものまでいろいろあります。日本の南蛮漬けやスペインのエスカベチェにも似てます。 ・バルブーニャはギリシャではとてもポピュラーな魚、ヒメジの一種(Mullus barbatus又はMullus surmuletus)。

lunch is served: Γοπεσ/Bougue/BoopsBoops ala Savoro style. This economical and delicious fish is best dredged in seasoned flour and fried. To make it savoro style you fry branches of fresh rosemary then add slices of garlic to the oil and finally red wine viniegar and reduce til just slightly tart. ✿ エスカベシュ | Escabeche ・エスカベシュ(escabeche)とはスペインなど地中海沿岸の地域で良く食べられている、魚を揚げて酢漬けにした料理のことである。日本の 南蛮漬 がほぼ同じもので、これはイベリア半島で食べられていたエスカベシュが、南蛮貿易やキリスト宣教師によって伝えられ定着した為である。 ・エスカベシュという料理名はカタロニア語の「escabetx」に由来しており、そもそもこの料理の源流には中世のペルシアで食べられていた シクバージ(sikbāj) ��いう料理にあることが定説となっている。この料理が伝搬する過程のなかで「sikbāj」というアラビア語が「iskebech」のように聞こえるため、やがてイベリア半島では「escabetx」または「escabeche」という名前で定着するようになったものと考えられている。 ・ジャマイカでは escoveitch または escoveech という伝統的な朝食になっており、酢、タマネギ、ハヤトウリ、ニンジン、スコッチ・ボンネット(唐辛子)を用いたソースに一晩漬けて作られる。また、イタリアでは escabecio, scapece, savoro, ギリシア(特にイオニア諸島)では savoro, 北アフリカでは scabetche と呼ばれる。なお、ブラジルには鶏、タマネギ、スパイスから作る escabeche と呼ばれるスープがあるが、別の料理である。
