Do you love pasta but don’t like the processed, refined flour noodles? In today’s edition of #SattvikForADay we are going to Sattvi-fy your beloved pasta. For this recipe, you don’t need any fancy equipment, such as a spiralizer. All you need is a vegetable peeler or scraper that is available in every kitchen. Take two washed orange carrots, thick ones preferred. With the vegetable peeler, start peeling lengthwise ribbons of the carrots until you reach the center and can no longer peel. Chop the center and set aside for sauce. In a saucepan, boil water with salt and add the carrot noodles to boiling water. Cover for 2 minutes. Turn off the heat and let stand for 5 more minutes. Drain and your carrot pasta is ready to be used in your favorite recipe! Here, we have a chickpea sauce made with fresh tomato purée and boiled chickpeas or chhole. Season to taste.
