Do you see those little green specks in this bar? This is our Samphire bar in 67% Palo Blanco Dark Chocolate. The bright green specks you can see in the chocolate is locally grown samphire. Samphire is a succulent that naturally contains a higher amount of salt, which makes a lovely addition to this chocolate without actually using salt. The background is a smugglers’ beach here in Dorset where hundreds of years ago many famous smugglers spent time. There is still part of an old shipwreck sticking out of the water near the coast (not on photo). The beach is also scattered with an enormous amount of fossils, so so many fossils. Impossible to take a step without stepping on many fossils. Not called the Jurassic Coast for nothing. We’re delighted to be working with such a high quality, organic, ingredient that is grown on our doorstep! Samphire, for those of you that don’t know, it is a small succulent plant that likes to absorb the salt from the soil. This means that without adding extra salt to the chocolate, the samphire brings its own salty edge. We realize samphire is a unusual inclusion in chocolate, but we love it paired together with our award winning 67% Palo Blanco chocolate and it’s one of those bars that we keep nibbling on.
