Follow the steps closely, and you will ace the taste! Ingredients • 1 kg desi ghee (best ghee brands in India)• 1 kg ground green moong sabut dal• 1 kg atta• Bowl full of ground foxnuts, coconut (cut into pieces or desiccated), almonds, cashew nuts• Half kg jaggery (or more as per taste) Recipe: 1. Take 1 kg desi ghee first, and melt it in a huge cooking pot. 2. Once the ghee melts, add the ground green moong sabut dal to it. You can easily procure the ground dal from the market. 3. Keep cooking and roasting the dal in the ghee on low flame for 30-45 minutes until it turns slightly brown and the raw fragrance reduces. 4. Once the dal turns brown, add 1 kg flour to the mixture. Cook the mixture on low flame for another 30 minutes until it turns brown. 5. After some time, add the bowl full of ground foxnuts, coconut and all the dry fruits you like into the mix, and roast it for 10-15 minutes, Make sure all ingredients mix up well. 6. Turn off the flame, and let the Panjiri mix cool down for 15-20 minutes. 7. Now, add half a kg of jaggery to the Panjiri, and mix it well. Make sure your mix is not very hot when you add the jaggery or it will melt, making it a sticky mix. Maintain the grainy texture for the perfect Panjiri. 8. Your panjiri is ready! Polished vs Unpolished Dal
It’s no secret that the aroma of a well-cooked Arhar dal can make our mouth water at any time. We all have drooled over delicious Dals at some point or the other. Be it any part of the country, the Indian meal is incomplete without this super-nutritious food. India is the largest producer of pulses in the world and has Dal as its staple food, which is eaten with zeal in all parts. There are several reasons as to why unpolished dal is preferred over polished dal.
a.The first and most important reason is the nutritional content. The more untouched the produce, the more nutritional it is for health. Polished dal loses most of its nutritional content, either by getting washed away or by getting replaced by chemicals. This is harmful to health too.  Unpolished Dal being natural has high protein, fibre, and essential micro-nutrients.
b. Polished dal usually loses its outer surface and as a result, also lose their natural taste. The replacing chemicals whilst polishing not only cause a bland taste in the Dal but has adverse effects on our health too. Unpolished Dal has better taste and flavour than polished ones.
c.  As compared to unpolished Dal, polished dal takes longer to cook, hence consuming more fuel in the long run.
d. Absurd as it may sound, polished dal is priced at a higher value as compared to the unpolished ones. This is because the polishing process incurs costs and materials. Charging for improving the quality of something can be justified. But charging for degrading the value is unethical. For example, Nourish’s unpolished Malka sabut costs Rs.102/kg whereas the polished one costs Rs.107/kg
e. Polishing of Dal adds unnecessary calories into the dal, which might be troublesome if we are on a strict weight-loss process.
f. The use of leather to polish the Dal might irk vegetarians, since leather is manufactured using animal skin.
The main reason the manufacturers prefer polished dal is its high life. A polished Dal can be stored for 6 to 8 months, whereas an unpolished one, like Moong Sabut, lasts a maximum of six months. This makes polished dal ideal for business purposes.  Another reason why Dal is polished is its shiny texture that comes from polishing. And most customers, in general, get attracted to these polished exteriors, undermining the adverse effects that they carry. Many manufacturers argue in support of polished dal, saying that polishing the Dal washes away the residual pesticides that were added on the farm, hence reducing chemical-related health risks. This, however, should not be an issue since we have an option to switch to an organic variety of unpolished dal. Also, pesticides and other similar chemicals that are present in the Dal can be minimized by washing the Dal properly and cooking it under pressure. The husk removed from the unpolished Dal is later processed to make protein supplements. From this, we can imagine the importance of these husks that get washed away while polishing.
