Made some grilled chicken and shredded some of it for chicken soup later, used the bones to make stock. The stock also has rotisserie chicken bones i froze because, and i am being so serious, rotisserie chicken makes the best stock and broth. I like to make a lot so i have some for when i inevitably get sick. Also, made some simple hot chocolate with cinnamon on top!
I also found a fuck load of chicken of the woods and will post recipes when i get to cooking it.

🍗 Lost the post so here’s my top five ways to prepare chicken (in no particular order) 🍗
My go-to: Seared in avocado oil with garlic and herb chicken spice blend. Served with rice and broccoli seasoned with the same blend.
A family cookout STAPLE at my house: Thighs and drumsticks grilled outside (with propane) until just charred. Served with refried beans and flour tortillas.
Leftover chicken: shredded finely and mixed with kewpie mayo, siracha, salt, pepper, garlic, peas and carrots. Served on robust toast with tomatoes and lettuce. Classic chicken salad sandwich
Party Fave: a whole rotisserie chicken that has been stripped of meat and mixed with cream cheese, buffalo sauce, chives, and sharp cheddar cheese. Baked in the oven until bubbling. Served with Tostitos corn scoops.
Easy breakfast/brunch: small chunks stir fried with rice, veggies (whatever’s in the fridge lol), ketchup, and siracha. Topped with an underdone egg omelet. Omurice, my beloved <3

Food is such a motivator for me. For example, tescos and sainsburys used to have hot meat counters, where you could get such things as bbq chicken wings, gammon shanks, rotisserie chickens, pizzas etc. Now all sadly discontinued because of 'changing customer habits' (ie we could continue because we make boatload of profit anyway but we won't because not as many people were buying it).
My absolute obsession was their chinese marinade chicken thighs. These things tasted like I think god would taste, if they were a juicy, perfectly seasoned piece of meat. But long before the shops announced they'd be discontinuing the hot meat counters, I couldn't find them anymore. Maybe I was slow off the mark each time, maybe they weren't as cost efficient to make.
I am not a good cook, but frustration at being denied these things drove to to try and learn. Consequently I can now make ten of them for the price of four off the hot meat counter.
Recipe:
Bone in chicken thighs (this recipe presumes 8)
Salt and pepper
Honey (2tsp)
Soy sauce (2tbsp)
Ginger paste (1tbsp)
Rice vinegar (1tbsp)
Tomato puree (1tsp)
Five spice (2tbsp)
Preheat oven to 200c fan, 220c reg oven Season the chicken with salt and pepper first. Mix all the marinade ingredients together in a single bowl, then cover the thighs using a pastry brush. Any leftover sauce, pour over the top. Put in a greaseproof lined tray and pop in the oven for 40 mins. At the 20 min mark, look in on them and use the runoff to baste. If you have a grill that doesn't set off your smoke alarm, switch to the grill for a few minutes afterwards to get a nice crispness to the skin. (This step is optional).
If you have a airfryer you can chuck them in there instead.

I made stir fry and it turned out great! So here’s the recipe because why not.
Quick note, I cut all of my meat and vegetables before hand because it makes the cooking process go faster. I also use pre cooked meat (usually whatever my dad had grilled earlier in the week that didn’t get eaten. I also use whatever veggies are on hand. But I digress. A lot of what I do is based on preference
• 1/2 onion (I use yellow) diced
I like to do diced or strips. Use your preference!
• 2-3 medium to large carrots (peel them first) cut on the bias
Again, your preference for cuts. If you just want to cut them as simple rounds do that. If you like match sticks do that
• 1-2 celery stalks
Cut it how you like it! Whatever is easiest for you!
• meat of your choice. Tonight I used a leftover pork tenderloin. London broil is good. Heck, a shredded rotisserie chicken is good.
A note about your decision for how you cut the meat and vegetables. Smaller cuts for more dextrous utensils. So if you want to eat with a spoon use a small cut/dice. If you want to eat with chopsticks, make it a large cut, possibly skinnier too.
You can use whatever you want in it. Tonight I also added cabbage. If you’re using a canned vegetable make sure you drain it.
The sauce (make this around the time you’re preparing your vegetables and meat. BEFORE you cook!)
• 1 1/2 cup of broth (go based off your protein)
I used beef base and hot water to make my broth.
• 1/4-1/2 cup of soy sauce
• 1/8th to 1/4 cup of rice wine vinegar
• tablespoon of minced garlic
• 1/2 - 1 teaspoon of minced ginger
• 1 tablespoon of slap ya mama
• 1/2-1 tablespoon of red pepper flakes
Combine these and then add a cornstarch slurry (alternatively you can also make a slurry with tapioca powder) Do NOT add it straight to the sauce. MAKE THE SLURRY
Now that you have everything prepped we can get cooking
Heat up your wok on medium-high heat. 7-8 on the scale. Make sure you have a heat safe bowl or the lid to your wok on the side. We’re going to put the vegetables in it after we finish cooking. This is stir fry. It goes fast at a high heat. We don’t want to burn our food.
Once your wok is heated add 1-2 tablespoons of oil (I used avocado oil)
Add your first vegetable. STIR CONSTANTLY! And cook it until it’s browned and softened. It doesn’t have to be perfect. Just preferably not burned.
When the veggie is finished cooking put it in the heat safe bowl/lid you have on the side.
Add you next veggie to the now empty wok. STIR CONSTANTLY! Until it is browned and a little softens before dumping it in your heat safe bowl.
Around now you might need to add more oil.
Repeat until everything is cooked.
I cook meat last. It’s a habit I got from my dad. Probably because when he makes stir fry he tends to use raw chicken instead of pre cooked meat.
Now that everything has been stir -fried we can make it yummy.
Add everything back into the wok and pour the sauce over it. Let it come to a boil before dropping it down to low so it can simmer. Let it simmer until the sauce has thickened.
Eat on its own or over rice, udon, or (as I tried tonight) Korean glass noodles

For Christmas, here is the best sandwich I can think of:
Mix about 3 parts mayo with one part Tabasco sauce. Spread that on the inside of your focaccia bread, not too thick. Optional fresh basil may be added at this stage.
Next you add some rotisserie chicken, gouda cheese, avocado, and 1 or 2 peppadew peppers.
You may carefully grill your sandwich to crisp up the bread and melt the cheese, and then enjoy with a lemonade!
Ingredients: Mayo and tabasco sauce mix, fresh basil (optional), rotisserie Torchic, gouda cheese, acacado, and peppadew peppers on focaccia bread.
Smell: Mostly the cheese and Torchic, with a little bit of spice from the tabasco sauce. Very good. 5/5
Taste: All of these ingredients go well together. Everything has a purpose flavor wise, I have no complaints. 5/5
Texture: The avocado added a nice bit of texture to it, I have no complaints. 5/5
Would Chunk Eat It?: Yes. 5:5

i actually hate cooking lol but i love food! i live in socal so there’s so much good food here. my wife is punjabi so we eat a lot of chana & dal as staples, which are easy to make a big pot of & have all week for lunch. i just got a grill for our house so we had filet mignon the other night as a treat which was great. i’m from new mexico so i live & die by green chile. an easy thing i like to do is just buy a rotisserie chicken & eat it in various easy meals all week (quinoa bowls, taco bowls etc). we like to order ramen & greek food often? big fan of wings when i go to the brewery, just had a jamaican jerk dry rub that slapped. but yah usually we’ll make some bigger dishes on monday & tuesday so we have lunches. we plan meals on saturday & then i get groceries, lots of what’s in season, & we go to the farmers market every week. we live p close to this v highly rated peruvian sushi place which is like some of the best food i’ve ever had so that’s my fav currently
