I spotted these beautiful Brassica oleracea var. botrytis ‘Romanesco’ (Romaneso, Romanesco broccoli, Roman cauliflower, broccolo Romanesco, Romanesque cauliflower) in a greengrocers display. The edible flower bud displays a distinctive, fractal growth pattern that endlessly repeats itself. The flavour is similar to that of cauliflower, but is milder, nuttier and has a crunchier texture. This cultivar was first documented in Italy.

There is something quite magickal about Romanesco Cauliflowers. I have to admit they are my bestest favourites of the brassicas. . . I think maybe because they are so different but also so logical and beautiful. They remind me of me a strange cross section of things that don’t seem to fit together but in reality make perfect logical sense. . . This one is the first I’ve picked from our garden this year and it is the biggest I’ve managed to grow and I’m so proud of it. . . U suradnji s Dukatom: Zimski quiche 

Čekala sam da padne prvi snijeg da podijelim sa vama ovaj tematski recept. :)

U quicheu je uz sezonsko povrće glavna zvijezda fina Galbani mozzarella.

 Sastojci (za tijesto):

300 g brašna

150 g Dukat maslaca

malo soli

2 žlice hladne vode

Sastojci (za punjenje):

125 g Galbani mozzarelle

150 g poriluka

150 g špinata

250 g šenona

4 jaja

2 dl Brzo & Fino vrhnja za kuhanje

 Hladni Dukat maslac nasjeckamo na kockice i stavimo u multipraktik s brašnom i malo soli. Pulsiramo par puta dok se sav maslac ne izmiješa s brašnom te dodamo jako hladnu vodu. Pulsiramo dok se tijesto ne skupi u grubu kuglu. Potom rukama oblikujemo disk, umotamo ga u foliju za svježinu i ostavimo u hladnjaku barem pola sata.

Nakon što je tijesto odstajalo izvaljamo ga (lakše će ići uz pomoć brašna ili folije za svježinu) na debljinu od pola centimetra i utisnemo u kalup. Obložimo i stranice kalupa. Nabodemo tijesto vilicom i pečemo na slijepo 15 min na 180-200°C. Prvo 10 minuta prekriveno papirom za pečenje i nekim utegom poput riže.

Za to vrijeme pripremimo nadjev. Šenon podijelimo na malena stabalca i blanširamo 2 minute te procijedimo. Poriluk narežemo na tanke polumjesece, posolimo i dinstamo sa špinatom na malo ulja da puste višak tekućine.

Galbani mozzarellu narežemo na tanke kolutove. Jaja i vrhnje posolimo i izmiješamo pjenjačom ili električnim mikserom.

Izvadimo tijesto iz pećnice i na dno posložimo dinstano povrće. Prekrijemo mozzarellom i prelijemo smjesom vrhnja i jaja. Na vrh složimo blanširane šenon boriće tako da sve izgleda kao snijegom prekrivena šuma.

Pečemo 30 - ak minuta na istoj temperaturi.
