Rolling With My Homies

There is nothing I love more then hosting a dinner party…scratch that. There is nothing I love more then hosting a themed dinner party.  A sushi making party is so much fun because it is hands on for all your guests.  Not only will you eat well, you will also find hilarity in Karam trying to stuff every ingredient in one roll, and Michael being an undercover master sushi roller.  In order to host a good sushi making party some prep work is needed.  

First, decide what ingredients you want to roll.  Anything you like in sushi you can put out for your guests.  My sushi making spread had the following:

Sushi rice Nori Spicy tuna Smoked salmon Panko Avocado Mango Cucumber Carrot Red bell pepper Cream cheese Cilantro Crushed wasabi peas White and black sesame seeds Sriracha mayo

I have shared recipes for the rice, spicy tuna, and Sriracha mayo at the bottom of this post.  First, to start a party right you need to have a signature cocktail and appetizers.  We had saketinis garnished with pickled ginger to start and I made steamed shrimp dumplings and fried pork gyoza.  

Saketini

2 oz of your favorite vodka 1 oz sake Stirred, not shaken

Steamed Shrimp Dumplings

1 egg white 1 tsp sesame oil ½ tsp cornstarch ¼ cup diced red bell pepper ¼ cup diced carrot ¼ cup frozen peas 2 tsp minced ginger 1/4 tsp salt ¼ lb raw shrimp diced 8 wonton wrappers

In a bowl whisk egg white, sesame oil, and cornstarch.  Add bell pepper, carrot, peas, ginger, salt and shrimp.  Put ½ of the mixture into a food processor and blend until a paste forms.  Add paste to bowl and stir.  Spoon 1 tablespoon of the mixture into the middle of a wonton wrapper.  Wet your finger with water and spread it across the border of the wrapper.  Gather the sides of the wrapper and crimp leaving the top of the filling peaking out.  

Spray the bottom of a steamer with cooking spray and place the dumplings in the steamer.  Steam for about 6 minutes.  Serve with dipping sauce.

Dipping Sauce

2 parts soy sauce 1 part rice vinegar 1 part honey

Fried Pork Gyoza

¼ lb ground pork 2 scallions chopped 1 clove of garlic minced 1 tsp minced ginger 10 wonton wrappers 2 Tbsp vegetable oil

Ever wonder how pot stickers have that super crunchy bottom?  Well wonder no more and follow these directions and you’ll have crunchy gyozas!

Combine pork, scallions, garlic and ginger in a bowl.  Wet the edge of a wonton wrapper.  Put heaping teaspoon filling in center of wrapper and gather ends together, crimping to stick together.  Add vegetable oil to a pan on medium high heat.  Add gyoza and fry until bottom is brown and crisp.  Add about ½ cup of water to pan and cover loosely with foil.  Steam dumplings about 4-5 minutes until water has evaporated and filling is cooked.  Serve with dipping sauce.

Dipping Sauce

3 parts soy sauce 1 part sesame oil chopped scallions

Now that your guests have a drink in hand and appetizers in belly, give a demonstration on how to roll a sushi roll (I learned by watching videos on YouTube).  I showed how to make a maki roll and an inside out roll.  For this you will need two sushi bamboo mats, the one for the inside out roll should be coved in plastic wrap.  Include a bowl of water for your guests to wet their hands so the rice does not stick.  

Sushi Rice

1 ¾ cup sushi rice 3 Tbsp rice vinegar 2 ½ Tbsp sugar 1 tsp salt

Put rice in a large bowl and wash it, changing the water several times until water is clear.  Drain and leave in strainer for 1 hour.  Transfer to a saucepan and add 2 cups water.  Cover and bring to a boil on high heat.  Lower the heat and simmer, covered for 10 minutes.  Remove from heat and leave covered for 15 minutes.  

Mix vinegar, sugar and salt.  Transfer the cooked rice to a shallow dish and sprinkle with vinegar dressing.  Fold the dressing into the rice (do not stir it).  Let rice cool to room temp.

Spicy Tuna

½ lb sushi grade tuna cubed 1 Tbsp mayonnaise 2 Tbsp Sriracha 2 scallions chopped

Mix ingredients, that’s it!

Sriracha mayo

1 part mayonnaise 2 parts Sriracha

Mix ingredients and put in piping bag.  If you do not have a piping bag (like me) put in a Ziploc bag and cut the corner.  This will allow you to pipe onto sushi rolls!

Now that you have all ingredients prepped, get rolling!  Spread the rough side of the nori with rice.  For a maki roll, add chosen ingredients and roll.  For an inside out roll, flip the nori and fill the shiny side with chosen ingredients. Encourage your guests to decorate the outside of the rolls too, you can pile on more fish, sprinkle with panko crunch or wasabi peas, or decorate with Sriracha mayo.

For dessert I got the ice cream mochi from Whole Foods.  A variety of flavors fit my theme and meant I did not have to bake anything☺
