Hi Gallus, I'm doing some worldbuilding and you seem like you could be connected enough for me to find an answer to the problem of dwarven agriculture. Many problems are created by the requirement of no sunlight, as even the common response of mushrooms still need light to break down decomposing matter as a primary energy source. Currently, we're thinking that they use a special type of mushroom that breaks down rocks in an energy-producing reaction, giving them enough energy to absorb nutrients and grow - this would serve a second purpose in explaining why building a massive hollowed-out mountain fortress doesn't produce an equally large amount of gravel.
Any thoughts? We're grasping at straws kinda lol
Well, some thoughts:
There's plenty of cave systems (especially Karst Systems) that are at least partially open to Sunlight- especially the kind that have rivers running through them, which is something else that's really helpful for agriculture.
For Example: This Cool AF Sinkhole cave in china that has an entire Forest in it
Now There's a view to put outside the city Gates!
Karst specifically is a landscape where underground rivers hollow out the limestone underground and then the cave roofs fall in. This kind of landscape answers your gravel question nicely: the hollowed out mountain does produce an equal amount of gravel, but the gravel turns up as the sandy banks of the river system hundreds of miles away.
So, there's your sunlight that can be used directly, or reflected or magically transferred deeper into the cave system.
Or they just put more holes in the roof! Unless your dwarves are also vampires, there's no reason for them to not hollow out a few Skylights into the mountain too.
But let's talk some other cave ecology and agriculture!
For starters, your dwarves could be sitting on top of a literal gold mine that would allow them to trade for a lot of needed materials and crops.
And by gold mine, I mean Salt Mine.
Historically, salt comes out of hollowed-out mountains and is worth more than gold.
Also something the humans have historically fought a bunch of wars over, so there's some free political tensions if you needed that!
I can also mean the possible fucking enormous piles of bat guano that accumulates in Karst caves, which is the world's most insanely good fertilizer, and ALSO something that has been worth more than it's weight in gold.
Speaking of Gold, another thing that often lives in sinkhole caves in abundance is BEES. turns out, limestone stalactites are a terrific place to build a hive that is difficult for predators to reach, stays dry and the stone substrate means the hives can reach many tons in weight before they start having structural issues. That sweet, sweet insect-derived liquid gold is already important to Dwarves in a lot of folklore- it's really hard to have a Traditional Dwarven Mead Hall without the honey to make the mead, you know?
So you got your mushrooms, you got your sunlight-grown sinkhole crops, you got your traded goods and you got your source of alcohol- the only thing really missing from an ancient food pyramid here is a staple carbohydrate. To that end, may I propose our good Peruvian Friend: The Potato.
Grain crops aren't actually all that nutritious and were kept around in ancient societies more as legal tender that kept the peasants busy, because wheat or rice takes months to grow, an enormous amount of labor to harvest, and wheat also needs to be milled before it can be turned into food- all enormously time-consuming processes that keep peasants busy and easy to rule tyranically over.
Potatoes though? Pop one in the ground in spring and you can dig up fingerlings all summer, and if you make potato towers, you can harvest up to 40lbs of delicious, easy-to-prepare-and-store carb out of a single plant- a real space-saver for the limited sinkhole skyspace.
If your dwarves have cheese, the potato makes even more sense, because Potato+dairy is the easiest, most nutritionally complete survival food there is.
Finally, consider: Dwarven Vodka.
This post is open for anyone to comment suggestions on, but that's my take: put your dwarves in a Karst-sinkhole cave system, give them a highly in demand resource like salt or guano, bees, and taters. Boom. Whole agriculture, economy and political scheme starters.

you know what. fermentation, smoking, canning, pickling, curing, drying, and other methods of food preservation have been popular since before the invention of modern technologies. as is milling grains for rice and bread. these are things that you can do as long as you know the process and have the proper tools.
with that in mind... why is eating 200 year old pre-war food still a viable option for people of the wasteland? by 2281, there are farms. there are ranches. the ingredients are there. the know-how and tools are there. the recipes are there! it's not as easy as just going to a supermarket, but y'know, there's also trade. do you want some bighorner jerky in exchange for brahmin tallow? hey, give me some canned mutfruit and i'll cook you the most delicious deep fried giant ant with garlic and chilies and some lime juice on the side. take this sourdough loaf and firegecko menudo before you go. i just!! there are so so many interesting options and instead we get bland steaks and meat on a stick!!! why is wasteland cuisine so boring!!!

Every day, Bug gets a bowl of fresh foods, alongside the dry chow and whole grain mixes she has free access to during waking hours. Her bowls contents often include fruits like blueberries, blackberries, raspberries, apples, oranges, bananas, tomatoes, various melons, and pomegranates, and we try new fruits when we can. The bowls also contain veggies like chopped eggplant, sweet potato, pumpkin, squashes, peas, cucumber, chickpeas, frozen or fresh corn, carrots, celery, and occasionally cooked regular potato. There's also other stuff- cooked pasta or rice, raw shrimp or fish, canned tuna, cooked poultry or venison, scrambled or hard boiled eggs, cooked beans, and sometimes leftover "people" food she can have in small quantity, like a veggie straw or a cracker or something. She does get bird treats, too, but they're fatty so that's limited.
She doesn't eat everything every day (sometimes she does sometimes she doesn't), so whatever she doesn't eat goes to the other birds in the evening when I close them up. She sometimes gets a few bites of our dinner if it's bird-safe, and we do a lot of bird safe cooking so we don't waste leftovers much. We'll also, weather permitting, go outside for a little bit and forage for grass and whatever else she wants to eat (leaves, bugs, flowers etc). (Which is where I'm writing this from because I'm bored as hell outside in the cold right now but she's loving it)
With all of that open to her daily, she still chooses to eat mostly her dry chow. My birds have all been on Belstra chow for years now, and they all seem to genuinely enjoy eating it, compared to some of the others I've tried that felt more like they would eat it if they HAD to, but they didn't enjoy the process. I'm glad to see that it compares even when there are other, seemingly more tasty, options. On top of that, my avian vet highly approved of it as well when we were searching around. So if you're keeping fowl and you have the ability to give this brand a try, they've got a bunch of different feeds, and all of them look great. You can usually ask your local mill about ordering, or becoming a retailer if your birds like it. If nothing else, as far as I've been able to tell, it gets you out from under Purina's crappy boot.

Happy anniversary to calmingpi, i made a calming pie again (this time with more lavender)
Good news is that it tastes pretty good. Bad news is that i believe i messed up my starch amount, so it's a lot more runny than it was the last time i made this. Its all a process, i suppose. It SHOULD come out not exactly firm, but not liquid either. Kind of pull-apart jammy, i guess
Anyway
Im afraid im not very good at precise cooking, but its about time i recorded my findings better. So heres my best attempt to write down the calming pie recipe. You know, for science (note: calming properties of said pie are still largely untested)
Ingredients:*
Bag of frozen blueberries (size big)
Lemon or lime juice (at least 2 shot glasses)
Honey (1/4 of a cup) (for any extra sweetener, use more honey, or white sugar)
Tapioca starch (I used the incorrect amount this time. Learn from my mistake and use about 4 or 5 tablespoons) (you can also use corn or potato starch. Maybe even rice starch. I used potato last time and it worked quite well)
Chamomile tea (2 bags) (get one thats only chamomile. Maybe sleepy time would work? Never tried that one. But i try to keep it just chamomile)
Dried or fresh lavender (I dont know. Eyeball it)
Ground cinnamon (????) (Eyeball it i guess. I put in a puff)
*blueberries, honey, chamomile, and lavender supposedly have calming properties. Starch is to thicken it, juice is for taste, and cinnamon is because blueberry pie apparently has cinnamon usually. And im sure the blueberry pie sparks have a good idea of what theyre doing
Instructions:
Make a pie crust (I used Bob's Red Mill gluten free pie crust mix. It comes with instructions)
Dump all of this into a pot and cook it on the stove at high heat. The blueberries will turn liquid and everything will just come together. Stir frequently. The most important thing is to constantly taste test the mixture to make sure its the right amount of sweet and tangy
I usually only use 1/4th of a cup of honey, which takes a little while to melt, because im of the opinion that blueberries are actually very sweet. The lemon or lime juice should also balance that out, so use less juice and more honey/sugar if you want it sweeter, or the other way around if you want it more tangy
Eventually itll start bubbling like some sort of witch's brew. Leave it like that for a few minutes and stir sometimes. When its been a few minutes, transfer it to a big mixing bowl, and let it cool. Make sure you take the chamomile bags out! They are funny to poke at but not so great to eat
Transfer pie to pie tin (which should already have crust in it), and add more crust to the top. Add an eggwash on it if you want (its just half egg/half water, and honestly it kind of wastes an egg but it does come out a little nicer looking)
Cook at 425°F for roughly an hour. I highly recommend putting a baking pan underneath the pie as its in the oven, because it tends to spill over the top as its cooking
Let it cool, and then eat the thang ding
