Sourdough improves the digestibility of wheat by reducing phytic acid, breaking down gluten, and unlocking some nutrients. - If you use sprouted flour, you can further reduce the phytic acid content of the wheat, and more complex carbohydrates are turn into simple sugar and more nutrients become available. - It comes with the cost of weakened dough strength and structure, and this is what I had to experience in making this potato sourdough bread with sprouted organic Irish wheat and sprouted einkorn (50:50). What made is worse: I mashed the roasted potato with the levain so the whole dough was extremely sticky to work with 😱. - I also had 3 hours of autolyse (mixing of flour and water to make it easier to work with), but apparently sprouted flour contains a lot more enzymes so they broke down more gluten than I wanted, and I just could not work with it properly. The dough just broke instead of stretching!!! - at the end I still managed to put this wet thing into the banetton, let us do the final proof and froze for 40 minutes before baking it with lots of steam. - The result - not bad! The bread is actually delicious, sweeter than bread made with normal flour. Christmas roast for my family except me! 🤣 I have an issue with chicken since I was four... but able to cook chicken dishes is convenient to serve multiple people on the table. Tandoori “whole” chicken worked very well this time, they all enjoyed it very much! 😚 Tomorrow I will take the meat off the bones and make tortillas or something! - But naan bread!!! OMG it was so good! It was quite easy as well. Used only organic I bleached flour, water, sea salt and dried yeast... no oven necessary. I made a plain one and garlic naan, both with some melted, home-made fermented butter and it was like eating it at the restaurant. Before I have tried to make it but I think the yeast didn’t work well... it would be better to have it when I cook masala curry though! - As for me, I had no time to cook my meal so I just had some natto with an egg yolk, nori seaweed, some grass-fed beef jerky, grapes, glass of milk, and a bit of coconut jelly (made with yak bone gelatin). Yesterday I performed in my friend’s memorial concert. Lots of tearful moments, but it was lovely meeting old friends! - But being in downtown Bangkok is always super stressful especially if you have been under a lot of stress! I am glad we live in a very quiet place. It really makes a huge difference with the level of stress hormones. - Last night I had a very good recovery sleep - I never had so much REM!!! - Bad news: Noa woke up with high fever and some coughs. Fortunately he fell in sleep again so I have been trying to eat well to optimize my milk production!! I need to get more Vitamin C!!! I have a week until my next concert but tomorrow is the first rehearsal.... Perfect snack for Noa! Rich in calcium, protein and other micronutrients! You just have to cut cheese into small cubes and let them dry until they lose almost all the fat and become super hard. Then bake them in the oven for 8 mins or so at 209 degrees Celsius. Since we stopped eating massive amount of leafy greens (I.e. cellulose), our gut feels so much better. Less bloating, no heavy feeling after a meal. Imagine these vegetables go through our digestive system and starts to ferment - it would eventually produce endotoxin. - Rather, extract the minerals from the leaves by cooking them for few hours with some vinegar, and drink it. No digestive stress, no oxalates, just good stuff. We mix this veggie broth with yak bone broth and cook mushroom for a couple of hours for extra nutrients. Add some oyster essence for zinc. We often drop an egg into it, too. Now that’s a good meal 👍🏻. Am I crazy to order 20kg of pasture-raised pork rind to make healthy #chicharrón for Noa?? 😚. - In Thailand deep-fried pork rind is popular but they are all fried in harmful vegetable oils. Pigs come most probably from commercial farms. We just got these skin pieces from a pasture-raised pork farm from Chiang Mai, which makes a huge difference in quality. I intend to remove as much fat as possible from the skin , which will be then dehydrated. The dry skin can be stored frozen and I want to fry them in coconut oil to replace it with polyunsaturated fat. Baking is also possible but I think frying it in coconut oil quickly would be better to minimize oxidation. The results will be low-pufa, collagen-rich snacks which taste yummy! - I remember reading an article from Dr Ray Peat that pigs who live in a cold climate tend to have more polyunsaturated fat under the skin to protect itself from the cold, so by giving them some pullovers, they will have less PUFAs!
