Fried ‘Rice’…NOT! This is a Low- Carb ‘fried rice’ made with:
2 eggs, 1 table spoon macadamia nuts, 100g bamboo shoots, 6 baby corn, 1/4 cup cooked quinoa, 1/4 cup peas, 1/4 cup corn, little garlic, ginger, coriander and a splash of soy sauce! Serves 2.
This dish substitutes the traditional rice with a lot more protein! Inspired by this recipe: http://www.cookingforkeeps.com/2013/03/27/quinoa-fried-rice/ but I have altered it to be more low carb - what a fantastic dish - so satisfying! Only 150cal per serving.

Vegan Pineapple Fried Rice -- well, Quinoa.
I have an obsession with food. This is well noted. But, I have a serious obsession with International cuisine. Specifically, Greek, Ethiopian, Afghan, Indian, Japanese, Thai...you get the idea. I think my introduction to International cuisine was Thai food, so it's no surprise that staples like Pad Thai and Pineapple Fried Rice call my name from time to time.
Last week, I brought home two pineapples after visiting my folks in New York (Aldi's had them at a great price). As they ripened, I would walk by wondering what I could do with them (other than eat them raw of course). What magical experiments could I cook up to take advantage of having pineapples in my home? So, I came up with a Pineapple Gluten Free Cake (post coming soon) and Vegan Pineapple Fried Quinoa!

Here's my interpretation of the recipes I found:
1-2 cups fresh pineapple chunks (the amount depends on just how much pineapple you like to find in your meal)
2 cups cooked quinoa
1/4 cup vegetable broth (I used Trader Joe's low sodium)
2 tbsp sunflower oil (or any other cooking oil)
2 shallots, finely sliced
3 cloves of garlic, minced
1 tsp chili powder
1/2 cup fresh broccoli, chopped (I love broccoli)
1/4 cup carrots shredded or chopped
1/2 cup cashews
3 spring onions/scallions, sliced (I used my kitchen scissors -- so easy)
1/3 cup of cilantro
1/2 of a fresh lemon or lime
Stir Fry Sauce:
3 tbsp soy sauce
2 tsp curry powder
1/2 tsp sugar
My recipe changes:
- Fresh broccoli instead of frozen peas
- No raisins (because I didn't have any and don't like them enough to buy a whole bag)
- Soy sauce, curry powder, and sugar instead of fish sauce
- Cilantro instead of coriander (because I couldn't find any in Trader Joe's)
- Chili powder instead of fresh red or green chili (couldn't find that either)
- Whole roasted unsalted cashews were substituted with slightly salted roasted cashew pieces (way cheaper option at Trader Joe's)
Note: All of the sites I found preferred to use day old rice. They said that if the rice was fresh, it should be refrigerated for about an hour before cooking. I made my quinoa fresh, so I tossed mine in the fridge as recommended.
Process:
In a cup, combine soy sauce, curry powder and sugar. Put cup to the side for later.
Place the oil in a pan/wok over medium-high heat. Add shallots, garlic and chili (powder or the real thing). Stir fry this for about a minute or so and enjoy the amazing aroma that will begin to fill your kitchen! Whenever the pan/wok becomes dry, add a little veggie broth (a little bit at a time). Next, add the carrots and the broccoli. Stir fry for a few minutes and add more vegetable broth as needed (to keep the pan wet).
Add the quinoa, pineapple, cashews and raisins (if you have them on hand). Continue to stir fry all ingredients and gradually drizzle in your stir fry sauce (soy sauce mixture). Continue to stir fry over medium-high heat for about 5 minutes. If you feel like your rice is a little dry you can add just a tad bit more veggie stock here but not too much. Also, you can add a little more oil to the pan and continue to stir fry for another minute or so (do not add the oil to the rice, add it to the pan).
Once the rice is cooked to your liking, you can turn off the flame and taste test it. Add additional salt or spice to taste. If the rice tastes too salty, squeeze some fresh lemon or lime over it (I enjoy doing this no matter what).
Top with spring onions (these look like scallions but are a little bit bigger and the taste is slightly different, so if you can't find spring onions, just use scallions) and cilantro (or coriander). I also lined my bowl with fresh cucumber slices because I think when eaten with the "rice", they add a deliciously clean taste.
