Salad is something I don’t enjoy making it. But I have made my best salads when I am most pressed for time. And this is one of them. I first started scalloping the lettuce around the edge of the salad plate, then layered the bottom center with chopped lettuce, topped it with diced apple, pear and avocado. Then bordered it with diced tomato and cucumber slices. Finally drizzled over it a sweet lemony salad dressing made with olive oil, lemon juice, dijon mustard, salt, pepper and honey.
