My squash casserole made with fresh yellow crookneck squash I bought from Teresa Champion. It’s made like “Cooking with Brenda Gantt” Alabama Squash Casserole, but here in Alabama, we all make it that way. Hoy estreno mi nuevo bol de 3 litros y medio. Es de @pyrexhome y con tapa, para hacer las verduras en el microondas en su propia agua, como siempre recomienda Cristina Galiano @cristinagalianoramos. Sordough Bread: 75% hydration dough. . 📌 RECIPE - One Bread 440 g wheat flour type 0 (proteins 14,5 %) 150g sourdough (hydration 100%) 4 g diastatic malt powder 314 g water 12 g salt . 📌 Mix water, diastatic malt, sourdough and flour with a fork for 1 minute, then with a tablespoon for other 2 minutes. Let it rest covered eith cling film at room temperature for about 30 minutes.  . 📌 Add salt and incorporate until the dough is nice and smooth. Let rest for 15 min . 📌 Bulk fermentation ~ 2 hrs. with folds 30 min . 📌 Put the dough into the fridge 3-4°C for about 10 hrs . 📌 Pre-shape, let rest 20-30 min, followed by final shaping . 📌 Final shaping: put in banneton and put it into the fridge 3-4°C for cold retardment over night (about 10 hrs) . Next day: 📌 Take the dough out of the fridge, do some scorings  .   📌 Bake the dough at 230 °C with a lid (according to me Pyrex Bowl is simply perfect) on creates steam, it allows the dough to rise and opens up while baking. The dough will need to be baked for 60 minutes. After 30 minutes, remove the lid from the dish and continue to bake for a further 30 minutes at 180 °C .   📌 Once baked, remove the bread from the dish and allow it to cool Enjoy! Chicken burritos enchilada style served with black beans. Excellent meal! The chicken was seasoned with @albukirkybbq Green Chile Rub and grilled to temp and sliced. The sliced chicken was added to a skillet with a puréed mixture of jalapeño, garlic, lime juice, lime zest, salt, pepper, olive oil and water. After the mix cooked down for about 5-6 min I stirred in some thawed spinach. This will be the filling. The burritos were made with the filling and some marble jack cheese. Eight burritos fit in the 9x13 @pyrexhome pan. These were topped with @lavictoriabrand green enchilada sauce and @kraft.naturalcheese Monterey Jack cheese and baked covered with foil in the @kamadojoe for 20 min. I decided to make egg bites today. No sous vide here though. Just my convection oven and a water bath. I had whipped up all of the ingredients and realized my muffin pans are still packed in a box somewhere in the garage since I moved from NJ. I quickly decided to use some small @pyrexhome bowls I had on hand. Bigger than a ramekin though, so it was like a double egg bite in each bowl. Oh well. We always eat two at a time anyway right? I think I prefer cooking these in glass vs metal anyway. I posted a pic of mine in my stories. This kitchen is not mine, but I love how cute and homey it is.
