Soft Chocolate Cake
With custard sauce or vanilla ice cream
Ingredients lists
Chocolate cake
7 egg whites, 3 egg yolks, 1 whole egg (total of 8 eggs).
150g 70% cocoa chocolate
150g butter
150g sugar
35g wheat flour
1 table spoon of cocoa powder
Custard sauce/Vanilla icecream (optional)
3 egg yolks
100g sugar
250ml milk
125ml heavy cream
1 vanilla bean or 1 table spoon vanilla extract
NB: The custard sauce can be served warm/hot with the chocolate cake, or put in an ice cream machine to make vanilla ice cream.
Instructions
Chocolate cake
Melt the butter and chocolate together.
Seperate the egg whites and yolks. In one bowl, put 7 egg whites, in another bowl put 3 yolks and 1 whole egg. This should leave you with 3 egg yolks. Keep those for the custard sauce.
Put half of the sugar in the bowl with egg yolks & the whole egg.
Beat the egg whites with an electric whisk. When the whites are getting foamy, add 1/3 of the remaining sugar. Continue whisking until they are firm, and add 1/3 of the sugar again. Whisk for 1min and add the remaining sugar and whisk another minute. Refer to picture below to see the texture it must have.
Take a sauce pan, put water in it and heat up the water. The water must be steaming, but not boiling.
Put the bowl with the yolks, whole egg & sugar on top of it, and whisk it with the electric whisk in this bain-marie. Whisk until the mix has whitened a lot and increased a lot in volume. Refer to picture below to see the desired texture.
Mix all the ingredients together in the following manner: First mix the yolks with the chocolate. Second mix the yolk-chocolate with the egg whites, and the sieved flour & cocoa powder.
Mix until homogeneous, but do not overwork the mix, and we want to keep the mix as airy as possible.
Preheat the oven at 170°C.
Pour the mix in a buttered and floured cake pan, and bake for 25-35min (use the toothpick/knife method to check if it's cooked).
Take it out the oven, wait until it cools down, and remove the cake from the cake pan. Cover with powdered sugar.
Custard sauce/Vanilla icecream (optional)
Cut the vanilla in half, take all the seeds out, and put the seeds and the bean shell in the milk, and half the sugar.
Put the milk to a boil, then stop and let it infuse.
Whisk the yolks and the rest of the sugar until it whitens and become fluffy (it'll be less airy than what we did for the cake, and it is not done in a bain-marie).
Pour the milk over the yolks, mix well, and put back in the sauce pan.
Cook & stir until it reaches 83°C.
Add the heavy cream to stop the cooking.
Either serve it as is as a sauce for the cake, or put in an ice cream machine to make vanilla ice cream.
NB: This cake is named "moelleux" in french, meaning "soft", refering to how airy and soft the cake is.

joy's custard ice cream base recipe
this is a modified version of dana cree's "blank slate custard ice cream" from her fantastic book hello, my name is ice cream. makes 1 to 1.5 quarts of ice cream.
ingredients:
150g white sugar
40g inulin fiber (you can omit this, but it does improve the texture)
15g skim milk powder
1.5g guar gum (can be substituted with xanthan gum, in which case i would recommend using a little less, more like 1g to 1.3g)
400g whole milk
300g heavy whipping cream
50g glucose powder (can be replaced with an equal amount of corn syrup, but the ice cream will be much sweeter)
70g egg yolks (around 4-5 egg yolks)
2g salt
directions:
mix the white sugar, milk powder, inulin fiber, and guar gum in a bowl.
place the milk, cream, and glucose in a medium heavy-bottomed saucepan over medium-high heat.
whisk in the milk powder mixture.
cook, whisking occasionally, until it comes to a full rolling boil. remove the pot from heat.
in a medium bowl, whisk the yolks. add 1/2 cup of the hot dairy mixture to the yolks while whisking so the hot milk doesnt scramble the yolks.
pour the tempered yolks back into the pot of hot milk while whisking. place the pot over medium-low heat and cook, stirring and scraping the bottom of the pot constantly to avoid curdling.
blend the mixture with a stick blender (or a regular blender if yours can handle hot liquids) for about 30 seconds to one minute.
pour the ice cream base into a heat safe bowl. working quickly, fill a large container two-thirds of the way with very icy ice water. nest the hot bowl into this ice bath, stirring occasionally until it cools down. add the salt now if you havent already.
when the base is cool to the touch (50f/10c or below), strain it through a fine mesh sieve.
transfer the base to the refrigerator to cure for 4-12 hours.
churn the ice cream according to your ice cream makers instructions (20 minutes for my machine).*
eat now as soft serve, or transfer the churned ice cream into an appropriate container (i like the kind of deli containers you can get at takeout places) and stick in your freezer to harden (it takes about 4-12 hours for it to harden)

Sink past dreariest dungeons and discern the gruesome machinations: organs harvested from twisted junky cadavers, hormones siphoned to synthesize new compounds for fresh generations of victims. Sallow survivors wander aimless corridors until their time arrives. At the behest of the Pharmacyst, ghoulish orderlies squeeze jellied brains into pillcaps, sieve amber pus into hypodermic needles, and crush bone into dust to cut with cocaine—the customers may be right, but they never know any better.
You spot skin, hard as petrified bark. Fauna gives birth to flora and fungi. Three bodies hang from ceiling hooks, intertwined via splintered twig arms. Leaves and flowers, reeking of odious rot, unfold between their fingers. Mushroom caps sprout from gnarled toenails, ripe for the plucking.
An undercooked fetus elongates into a symbiotic vine, enwrapping its parents’ trunks. The perverse family unit bears physical fruit; a jaundiced mesocarp drips sweet juices from splitting tumescent flesh. One subject tastes this pome, and feels a figwasp ovum rapidly developing in her belly. Parasitic visitors from innermost realms burst into our sliver of reality, celebrating the open-ended orgy that is All Creation.
Near the bottom, we find a ward housing xeno-amphibious forms, formerly human. The transfiguration left them with skin akin to earthly frogs. This gelatinous surface breathes Earth’s air, metabolizes various gasses, and secretes fluid coveted by only the most perverse addicts. Emitting froglike croaks, the tsathögguans must be kept in tanks tuned to binaural beats. Any naked eardrum that absorbs its vibration begins transmuting the surrounding skin to an exogenetic structure matching the source. Word is Virus.
Things get darker. Woven cocoons quiver in the grimiest guts of the citadel. Furtive nostrils ponder our astral scent as we pass their cells. Chitinous hairs chitter in anticipation of a meal. Instructions: Add the whole milk and heavy cream to a saucepan. Place the saucepan over medium-low heat. Take it off the heat. The sugar, egg yolks, cocoa powder, instant coffee granules, vanilla extract, and salt should all be mixed together well in a different bowl. Slowly add the hot cream mixture to the egg yolk mixture while whisking all the time to temper the eggs. Put the mixture back in the saucepan. Cook over low heat, stirring all the time, for about 5 to 7 minutes, or until it gets thick enough to coat the back of a spoon. Do not let it get too hot. Cover and put in the fridge until it's completely cold, preferably overnight. Once the mixture is cold, use an ice cream maker and follow the directions on the box until it has the consistency of soft serve. Get the ice cream out of the machine and put it in a container. Freeze it for at least 4 hours, or until it is firm. Enjoy chocolate coffee bavarois ice cream with scoops.
