The TSA kicked me out of the Kona airport
I've got to record this before I forget all the details. I want to send this incident to my senators and house rep, and we're thinking of retaining a travel lawyers, but I also want to stop thinking about it because it really sucked.
Background: I get the dreaded SSSS 98% of the times that I fly. I've tried the redress route on the DHS website and never heard back. We have no earthly idea what frigging list I'm on or how I got on it. I'm a middle-aged data analyst and mother of 2, from Oregon. In the beginning I was fairly good natured about it. It helped that for a long time the TSA at PDX, where I normally fly out of, were really cool people. But after years of harassment, I'm not really good natured anymore. I don't cause a scene or holler or call names, it's just clear that I'm NOT amused.
Kona Int'l Airport, Big Island, HI
I'm headed through security with my husband, 2 teenage kids (18 & 17) and another couple who are dear friends that traveled with us. I had a camera bag, purse, and shopping bag that went on the conveyor and I went through the body scanner (which I despise for already making me feel like a criminal).
Unsurprisingly, the scanner went off and I got pulled aside. When I fly I always wear really basic clothing, no belts or wire bras, and slip-on shoes, but it doesn't seem to matter. I asked if she (the agent) could tell me why I set off the scanner.
The agent replied, "no, because I don't know. Why don't you just let me do my job."
When they explain what the pat-down entails, they always ask if that's ok. (No?) I always ask if I have a choice. They always say that they can call their manger over. So I declined told her just to get it over with. Afterword, in a slightly snarky way, I asked if she found anything. She stopped and stared at me and made some sort of vague threat that I don't recall, but included the standard Hawaii TSA line of, "the only way off this island is to fly, so..."
After that was done I gathered my things off of the conveyor belt and met the rest of my party on a bench. When I was putting on my shoes, I realized that I was missing the shopping bag. Thinking I'd overlooked it and left it on the conveyor belt, I ran up to the first TSA agent I saw and, clearly agitated because the bag had over $1000 worth of jewelry, explained that I was missing a bag. The agent asked me to describe it then said not to worry because they have it. I replied, "ok, that's great, can I get it back." The TSA agent said something along the lines of me needing to calm down because they have my bag. Again, I ask for it back. Again the agent reassures me that they have it. I can't figure out why the hell I can't get my shopping bag back when he says that they found a "substance" on it and were testing it.
Why did they let me just walk away? Why didn't anyone tell me that they were holding the bag over for testing? I missed picking it up because it wasn't there.
Another agent asks me if I have any more products. I'm confused. I mean the bag is full of all the stuff we bought in the shopping district on the way to the airport. I reply, "Products? In what context?" They ask if I have any more powder. Powder? What are they talking about? Yet another agent accusingly holds up two bags of unopened Kona coffee, that I bought less than an hour before, in Kona. I'm like, "oh yeah, we bought coffee." This whole time it's pretty clear that I'm not ok with any of this. Again, I'm not yelling or cussing or anything, just really really irritated.
The agent says to come over to where they are behind plexiglass because they going to pat me down again.
I say absolutely not, because I've ALREADY been through a full body pat down. She says that I have not. I say that I have and it was that agent ,pointing to the agent who "just wants to do her job". She says that was only a targeted pat down, only in the area that set off the scanner. I say no, it was FULL BODY, thank you very much. Another agent briefly walks over to the agent who did my pat down, comes back, and says,
"I saw that pat down, I saw the whole thing. It didn't count because you were uncooperative."
I was NOT uncooperative. I put my hands and feet where she told me too. I was just pissed about it.
I told the agent that this was ridiculous.
Her and another agent say that that's it, I'm refusing to comply and that I can't fly.
They give me my carry-ons and escort me back out of the TSA area and say that I have to stay there and calm down and then they'll assess if I'm calm enough to be screened. I start texting my traveling companions.
It's pretty clear at this point that they haven't found anything that constitutes an actual threat, it's punitive.
Perhaps 20 minutes go by and a supervisor and one of the other original agents come over. He asks if I know what why I'm out here and if I know what the TSA is for. Reply that I do and I don't. He wants me elaborate on the "don't". I decline. Then he starts lecturing about what they trying to do, etc etc. I ask if I can ask a question. I figure that if I have some 1:1 time with a TSA agent, I'm going to use it to get some frigging answers.
This is really where things go completely off the rails. The highlights:
When I ask why this happens every time I fly, he says BOTH that they do a background check on passengers 72 and 48 hours before the flight, but also that "it's not like we know Nicole is coming. It's not like we make a plan to hassle Nicole because we know she's coming." (Emphasis his.) It really seemed like he was trying to make me sound like a crazy person.
He says that the TSA doesn't like doing pat downs. If he'd known he'd have to do pat downs when he applied for the job, he wouldn't have. (??? Has this brother never effing flown? He's now a supervisor. He could have quit? This makes NO sense to say).
He goes on about how the patch on his arm says that he would never lie. (Uh huh)
He says that he has a family and got into the TSA to make sure the skies were safe for his family and didn't I want safe flights for my family? I say, yes, of course. He snaps back, "no you don't!" (A really weird thing to argue about).
He goes off on how I should be telling HIM how to act, not the other way around. That my generation should be setting the example for his generation and admonishing THEM, not him out here admonishing ME. That I'M OLD ENOUGH TO BE HIS MOTHER. (Son of a bitch was 35 if he was a day, I'M 47!, JACKASS! No, I didn't say that. I was thinking it. Another weird thing to be lecturing me about.)
I asked him if the body scanners were set to indicate a false positive as a pretext for pulling aside SSSS passengers. He again says that "we don't rig up million dollar machines just to harass Nicole. And you pick which machine you go through." Which - doesn't answer my question.
He announces that I'm a conspiracy theorist, am wasting his time with all my questions, and that I'm not safe to fly. He's not going to let me on my flight with my family, but I can rebook for later in the day or the next day. (I'm not actually a conspiracy theorist, but that isn't illegal and it isn't a threat. Also, if I'm such a threat, why am I allowed to fly later, but not now with my family?)
It should be noted that at no point in this conversation did I seem agitated or raise my voice. At that point my goals were to 1) get some answers, 2) get on that plane.
So I gather my stuff and walk to the Alaska airlines desk and explain to the 2 women there what is up. The senior one comes around the desk, hooks her arm in mine and says, "I'll help you get through the TSA." These being were not actual women, they were angels. Unfortunately the same wackadoodle agent and his sidekick meet us at the entrance and they explain to her that I can't take my flight with my family, but I can rebook later in the day or the next day. She tries to get them to pay my expenses for being stuck. They say no (shocking).
We go back to the ticket desk and she starts making calls.
She gets through to the head of TSA in Kona and is told that I am actually BANNED from the airport and cannot fly, period.
She counters that they can't strand a person on the island, and that the agents told her I could rebook.
She is told, "fine", but if one thing goes wrong that I'll be arrested.
She doesn't understand why they won't just let me on the flight with my family if I can take a different flight. That I'm going to be the same person later in the day or tomorrow.
She ended up working well past the time her shift ended to get me on the same flight for the next day. Her and her coworker were both amazing.
Meanwhile, my friends who were now boarding the plane managed to use travel points to get me a room at the Marriott King Kamehameha and get deets on a Lyft. My kids want to literally burn down the airport and have to be talked down off the ceiling by husband and friends.
I'm a very flexible an easy-going (except for the TSA) but I'd lost my resilience about the time the agent was getting me re-checked in for the new flight. I was in tears. I cried while I waited for the Lyft. I cried while riding in the Lyft, I cried while getting checked in to the hotel (the receptionist, "Ooh, yeah, we don't need your phone number and all that, lets just get you checked in. Would you like a tissue?"). I had to compose myself to get dinner and ask the front desk for a toothbrush, toothpaste, a shaver and shaving cream, because while I stayed in Kona, my luggage went to Portland. I cried on and off all night.
The next day I had dinner at the overpriced buffet and ran errands. I had the settings on the jewelry we bought checked and cleaned, and I asked the people in the coffee shop if they would ship the coffee so there would be one less thing to cause problems. I went to the airport early, just in case, and I didn't even get stopped for a pat down. Sailed right through. (I did the the more junior Alaska rep tho, and she gave me a big hug and told me that she wanted to see me again, just not that day. Then when walking up the gang plank to the plane, she was coming down and we gave each other another big hug and she said she was glad I made it.
Epilogue
It's taken about 4 days to write this up because I have to do it in sprints. It's just too traumatic to relive for log periods of time. The week after I returned, I slept a lot and hardly worked.
Everyone says "get TSA precheck." 1) that doesn't save you from the SSSS code, 2) does anyone really think I'm going to get precheck after all of that? However, I do have a friend. One of those friends who is really successful AND really gregarious and knows EVERYONE. I told him the short version of my story and he said that he knows people at both of the agencies that have "lists" and they can help get me through the process of getting off of any lists.

Useful and Weird HCs
Tagged By: Stole it from the lovely @lediableblanc-amoureuxdechats Tagging: Be Fae, steal memes The Nurse Shark || Beth Riley
1. Can they use chopsticks?
Beth learned to use chopsticks the same time she learned how to use a fork and spoon. As a small child, she preferred to use them to stab at food in barbaric fashion and the rare occasion the Admiral joined the family for dinner, there was a lot of over-correction. Beth’s table manners are now immaculate but when she’s on her own or with deeply close friends or family, she’ll ditch utensils entirely and use her fingers. 2. What do they do if they cannot sleep?
Beth has been a lifelong chronic insomniac; partially due to sleep paralysis and night terrors, and partly a strange need to constantly move, which will actually wake her up even if she can get to sleep. She might spend the time awake in bed reading or catching up on paperwork. If she can’t get comfortable in bed, she might pad her way to the couch and try to watch something on the television {captions on} or listen to music, and knitting with either other activity. And if she has too much energy, she will paint or dance. The only times Beth really gets sleep is when she literally passes out from exhaustion. 3. What would they impulse buy at the grocery store? Beth does not cook; some sort of curse afflicts her and everything she tries tends to burn or come out raw, or too salty… She's a wreck. The only thing she can make is an irish stew in the crockpot, and it’s usually way too much for just one person. She allows her personal chef to plan menus and order groceries. She does enjoy going to farmer’s markets for the fresh fruits and vegetables that make up her primary diet, or specialty stores when she goes in search of comfort food from home: snack-nori, spam, li hui ming powder, hurricane popcorn. She will also go out of her way to procure passion fruit, guavas, and oranges, to make POG since she doesn’t see it produced in the mainland. Beth also doesn’t really eat much or with any regularity, despite having a high metabolism. 4. What order do they wash things in the shower?
Beth starts with washing her hair, back to the showerhead, before turning around and conditioning it, leaving it in for the duration of her shower. Next she washes and exfoliates her face and neck. Her arms and torso, her intimate bits, and finally legs and feet. If she’s running short on time, she’ll also brush her teeth in the shower. She doesn’t bother with shaving; she’s never been particularly hairy below from the neck down, and what little there is she waxes. She typically takes thirty minutes to shower, dry, and dress. She never skips the moisturising step because the mainland is entirely too dry for her tastes. When she has the time to indulge, she will take the longest most luxurious baths humanly possible, often submerging completely for long minutes. 5. What is their go-to coffee order?
Considering her best friend in the world owns a coffee shop, Beth typically begins her day with a quad-shot “Konachino” which is a signature drink Jay makes. It’s a coconut milk latte with four shots of espresso made from finely ground Kona coffee harvested from the slopes of her beloved Mauna Kea. It’s finished with macadamia nut syrup, whipped coconut cream, and four packets of sugar-in-the-raw. If she can’t get to Jay’s and she has to go to some other shop, she keeps it simple with a vanilla soy quad-shot latte. On hour ten or more at work, she’ll drink whatever caffeine is available so she doesn’t actually die on shift. 6. What sort of apps do they have on their smartphone?
Beth actually doesn’t have a lot of useful things on her phone as she genuinely isn’t interested in most things people can’t live without. She still has CitySourced Honolulu 311 ~where one can report broken streetlights, cracked sidewalks, abandoned automobiles and the like~ as well as GoAkamai which is traffic info for the island of O’ahu. She has all her important stored numbers, Words with Friends, and finally Reef Defender, an educational mobile game in which the good guy is a shark. She specifically does not have her instagram on there, nor does she have Tinder or any other dating app, and she absolutely doesn’t keep her phone on her when she’s on the floor. Tik-tok, especially Nurse-Tok drives her absolutely batty. 7. How do they act around children? Beth absolutely loves children, from newborns to teenagers. She treats them with love and kindness, with the same dignity and respect she would give to adults. She has vast stores of patients and will listen to them go on for as long as they are interested in interacting. She would give anything to have children of her own, even if that’s only a fantasy. She often keeps hand-knitted sea creatures or other little tokens for those who have to come through the ER and often spends what little breaktime she might get down in Pediatrics or specifically the NICU. People tend to say Beth would make an excellent mother. 8. What do they watch on TV if they’re bored and nothing they really like is on? Beth has never missed a single episode of Shark Week, and will even book vacation time to stay home and watch it, even if a lot of the time she disagrees with the information presented. She will go back and rewatch old episodes over and over again. She will also watch Forensic Crime documentaries, medical documentaries and fictional shows {{She loved how ridiculous House was, and thinks Scrubs is one of the greatest shows ever made}} but for the most part, she doesn’t really bother with television.

So both my parents drink coffee, but I have to say- it was probably my father’s fault. My dad used to buy that instant cappuccino/Frappuccino powder stuff- you know, the “vanilla” flavor or whatever. Now, he drank it occasionally, but the whole container was really for me tbh- he had his fancy Kona coffee, I got the instant sugar stuff, it worked out. Mind, I was like 11 when I started so uhh. Yeah.
Anyways, man didn’t want to buy hot chocolate but he did buy me coffee, and since I was freezing all the goddamn time, horrible at mornings, but also needed to be up at ungodly times (5am wakeups my beloathed), I would drink the coffee. The caffeine addiction didn’t really set in until 7th grade tho, because there was a McDonald’s on my way to school. So, if I was running late, or I just wanted the sugary drink, I would pop in for some breakfast/lunch and inevitably get one large McDonald’s “Frappuccino” monstrosity, absolutely loaded with whip cream, syrups, and sugar.
Anyways, it took me until last year to realize that I actually don’t even like coffee tbh- caffeine gives me migraines, and I’m very sensitive to the stuff. Turns out, I just really like vanilla drinks and those spiced (chai/“pumpkin”) drinks, so I thought I liked coffee ¯\_(ツ)_/¯
People who drink coffee: why did you start?
I don't drink coffee and I've never wanted to, but that's obviously ~not normal~, so I'm curious why most people do start drinking it.
#me things#caffeine#the pain of drinking coffee when you are not only lactose sensitive but also highly sensitive to caffeine#tbh sometimes even hot chocolate feels like too much#saddest part of the sensitivity was having to stop drinking#i love black teas#saddest part of the sensitivity was having to stop drinking assam tea#milk tea is awesome but also painful#can’t have anything anymore ueueue#can’t eat shrimp can’t eat li hing mui can’t have high caffeine drinks#can’t drink chai tea either tbh#I love it and drink it anyways#but my god do I suffer later

Jul. 11—Three people accused by the U.S. Department of Justice of supplying fatal doses of fentanyl to two Hawaii men who died last month at a Waikiki hotel pleaded not guilty Monday.
Three people accused by the U.S. Department of Justice of supplying fatal doses of fentanyl to two Hawaii men who died last month at a Waikiki hotel pleaded not guilty Monday.
Keina Breit Drageset, 26, and Avery James Garrard, 31, are accused of smuggling drugs into the state through the mail and providing them to Jeffrey P. Waz, 63.
"As we see fentanyl increasingly showing up in our investigations, we can expect more users to suffer death or serious bodily injury from fentanyl overdoses, " U.S. Attorney Clare E. Connors told the Honolulu Star-Advertiser. "We will continue to work with our state and county law enforcement partners to coordinate the collection of evidence and to bring criminal charges that address the seriousness of the criminal conduct, including charges that come with a mandatory minimum sentence of 20 years and a potential life sentence without parole."
All three entered not-guilty pleas Monday before U.S. Magistrate Judge Kenneth J. Mansfield.
"Ms. Drageset has entered a plea of not guilty regarding the tragic deaths associated with the abuse of illegal recreational drugs, " her attorney, Myles S. Breiner, told the Star-Advertiser.
Waz's attorney, Andrew M. Kennedy, and Garrard's attorney, Neal J. Kugiya, declined comment. Assistant U.S. Attorney Marshall H. Silverberg is prosecuting the case.
Authorities allege Waz gave the drugs to a fourth person, Joseph Alvin Hamil, 57, the street-side dealer of the operation. Hamil is accused of giving the victims fentanyl by mistake and is scheduled to make his initial appearance and enter a plea Wednesday in Mansfield's court. Both Waz and Hamil are reportedly cooperating with the investigation being run by Honolulu police, the U.S. Drug Enforcement Administration and the Federal Bureau of Investigation.
Hamil is accused of providing the fentanyl to 53-year-old Steven Berengue and 44-year-old Joseph Iseke, who both died after overdosing at a hotel party June 3. Iseke, of Kailua, was pronounced dead at the scene after emergency personnel responded to a call at the Outrigger Reef Waikiki Beach Resort. Be rengue, of Kailua-Kona, was taken to a hospital, where died within 24 hours of being found.
Three other victims, who survived, told authorities they thought Iseke was chopping up "cocaine and /or molly and all three snorted the substances allegedly not knowing they contained fentanyl, " according to federal court records. The term "molly " refers to the powdered form of MDMA, a stimulant that alters mood and perception.
Waz, Garrard and Drageset are accused of a controlled -substance conspiracy resulting in death and serious bodily injury, according to an eight-count indictment handed down Thursday by a federal grand jury.
On May 10 and 18, Waz allegedly joined the conspiracy by selling between one and five ounces of fentanyl that he obtained from Garrard.
On June 3, Hamil planned to sell "a ball " of meth, or 3.5 grams, to Iseke but mistakenly gave him one gram of fentanyl that he allegedly got from Waz, and one gram of heroin, according to federal court documents.
Additionally, Waz, Garrard and Hamil are charged with distribution of a controlled substance resulting in death and serious bodily injury. Waz and Drageset are also accused of possession with intent to distribute a controlled substance.
Drageset, a former model who allegedly led the drug trafficking organization, was also charged with attempted possession with intent to distribute of a controlled substance for trying to get fentanyl through the U.S. Postal Service on June 23, and with possession with intent to distribute a controlled substance after authorities allegedly found fentanyl during a search of her white Tesla.
On June 4 at about 6 :22 a.m., HPD and Emergency Medical Services responded to a 911 call from one of the surviving victims, who woke up at the resort after blacking out from partying.
HPD found five victims in a hotel room who were either unresponsive or needed medical attention. Authorities said substances found at the scene tested positive for methamphetamine and fentanyl. Police said "multiple types of drugs were found at the scene, " including a small baggie with a white crystalline substance, along with a glass pipe, and black-tar heroin.
During the investigation, DEA agents obtained hotel records for the room where the overdoses occurred and spoke to the person who had booked the room and who had been taken to the hospital in critical condition.
Agents also spoke with another victim, who described Berengue as an old friend and said the group had run into him coming back to the hotel from a concert. According to the criminal complaint, Berengue said he had consumed alcohol earlier and "may have used methamphetamine that day, but could not recall."
Berengue claimed that Iseke brought crystal methamphetamine to the room "but was not sure what the other drugs were."
The victim who had described Berengue as an old friend said he snorted a white powder in the hotel room, which he allegedly got from Iseke, and "within a few minutes " blacked out.
Investigators found text message exchanges on Iseke's phone that occurred between June 3 and 4. Iseke allegedly texted Hamil asking about the "pinkish purple powder " that was included in his drug order, according to federal court documents.
Hamil allegedly replied, "Exactly what I've been looking for all night. Hope you still have it. Should be a bag with brown and one with purple. I have to return that stuff. Call me in the morning please ? Big, big mistake. Running around like an idiot today and went all different directions at once. Anyways call me in the morning if can so I can run by. Thanks bro "
According to USPS business records, since March 20 five parcels have been sent from Los Angeles, San Diego and Palm Desert, Calif., to Drageset's apartment in the 800 block of Kapiolani Boulevard.
On June 23, DEA and FBI agents with a warrant to search the home found multiple baggies of suspected controlled substances in plain view on the kitchen table, along with paraphernalia for distribution. Investigators also found about $150, 219 in a safe "along with controlled substances that tested positive for the presence of fentanyl."
A laptop that was logged on to the "dark web, " with multiple online marketplaces saved for ordering illegal drugs, was also found, according to the complaint.

More Delicious Recipes You Will Love: - Cinnamon Glazed Almonds – Disney Parks - Coconut Rice - Boma Cola Barbecue Sauce Recipe: African-Inspired Dish I wasn’t sure about this recipe. It was certainly unique, but I was worried it wouldn’t taste very coco-nutty (is that even a word?), and I thought there was no way on earth that the breading would stick. Was I happily surprised to find out that this is an amazing recipe that came together almost perfectly. The taste was so different, but crunchy and delicious that I wish I’d made more. I will say that my big flub with the dish is that I forgot to serve it with the mango puree when I made it and took the pictures… Which is funny, because when I was eating it I thought that the crust was a little dry and would have done really well with a fruit sauce or squeeze of lemon… I did have the puree with the leftovers, however, and while it certainly wasn’t photogenic, it did bump up the level of tastiness a lot and resolved any issues of dryness in the crust. Truthfully, I felt kind of dumb forgetting it the first time. This is my week for dumb mistakes, apparently. Other then the accidental omission above, I did do everything exactly according to the recipe and the tips and tricks to this are fairly simple. I used sliced almonds and crushed them, giving me both a fine powder, and some rather large bits. Had it to do over, I may have crushed the almonds a bit more, though the crunchiness that the larger pieces definitely added a wonderful touch to the dish. I just found that the larger bits of almond didn’t stick as well and tended to fall off during the pan frying. They also tended to brown faster, though even the ones that looked a tad, well, burned on my sample chicken didn’t taste burned in the slightest (though it did make a little less photogenic). As for the coconut, doing the recipe over, I’d chop them a bit finer then I did for the same burning reason as the almonds. I also used the thin-cut chicken available at my grocery store as opposed to pounding out a breast. That allowed me to really have complete control of how long I needed to cook everything without having to worry about the chicken being unable to hold up to a heavy bread coating, a fry, then a bake. And since we’re on the subject of frying, I found that frying it until it was just slightly golden, enough to make sure the coating was really stuck to the chicken, then putting it in the oven yielded the most wonderful results. I have to say, though, that this will go down as one of my favorite chicken dishes. I just love the crunchiness and the unique flavor. The pop of the mango chutney really set it all apart… Just make sure you don’t forget to use it. Wheat flours (小麦粉/komugiko)
In Japan, white wheat flours are mainly divided into three different categories and differ only in the first character so you can be confident that you are buying wheat flour if you see either of these sets of 力粉 (riki ko) or 力小麦粉 (riki komugi ko).
Bread Flour:強力粉 (kyou riki ko)
Japanese bread flour has a high gluten content with at least 12% protein content. Use this coarse flour for breads, noodles, and dumpling wrappers.
All Purpose flour:中力粉 (haku riki ko)
All purpose flour is likely the least common of the three flour categories in Japan. This flour has around a 9% protein content and moderate gluten viscosity making it suitable for udon noodles and day to day confections.
Cake Flour:薄力粉 (chyuu riki ko)
Cake flour has less than 8.5% protein content and, like its counterparts around the world, has low gluten content. Use this flour for everything from cakes, okonomiyaki (see our recipe here) to tempura!
Whole Wheat Flour: 全粒粉 (zenn ryuu funn)
As in any country, whole-wheat flour weighs more by volume than regular white wheat flours. If you would like to substitute regular flour with whole wheat to get more whole grains/fiber, try substituting half the totalvolume with whole-wheat.
Rice Flours (米粉/komeko)
Rice flours are very common in Japan and you will find many varieties at grocery stores. The most common uses are all for wagashi (Japanese sweets) but the texture of a final product differs depending on the variety of rice flour that is used. Rice flours in Japan are either made of non-glutinous rice (the rice used for dishes such as sushi and oyakodon) and glutinous rice (used for mochi in Japanese cooking and often seen in the US as the main ingredient for mango sticky rice at Thai restaurants).
Fine Rice Flour: 上新粉 (jyoushinko)
Jyoushinko is a fine powder created from polished non-glutinous rice flour. Because it is made of ordinary rice rather than glutinous rice, jyoushinko creates dishes that have a harder texture and are less sticky. The most common uses for jyoshinko are for kashiwa-mochi (red bean rice cake wrapped in oak leaves) and uiro (a sweet rice jelly). Contemporary bakers often also use jyoushinko for baked goods such as cakes.
Sweet Rice Flour: 白玉粉 (shiratamako)
Shiratamako is made up of polished glutinous rice ground into coarse granules. Shiratamako is unique because of its absorbent nature which allows for a smooth and elastic dough. Activate shiratamako by mixing it with cold water and use it to make all types of wagashi (Japanese desserts) such as daifuku and shiratama dumplings.
Glutinous Rice Flour: もち粉 (mochiko)
Mochiko is made of glutinous rice flour and is coarser than shiratamako. Compared to shiratamako, mochiko creates a softer and chewier dumpling. The primary use for mochiko is to add sugar in order to create gyuhi, a primary ingredient for wagashi.
Dango Flour: 団子粉 (dango-ko)
Dangoko is a blend of glutinous and non-glutinous rice. By soaking and drying the two types of rice together and then grinding them, manufacturers are able to create a more chewy texture compared to mochiko and shiratamako. As its name suggests, use this flour to make dango (Japanese dumpling balls).
Other “flours” (粉/kona)
These “flours” are actually often starches and are made from the root of plants native to Japan.
Warabi Starch: わらび粉 (Warabi-ko)
Warabiko is the starch made from the ground roots of the Japanese Warabi plant, also known as bracken. This fiddlehead fern creates a distinctive starch which is mild in sweetness, transparency, and has a jelly-like texture. The most popular use for it is to make warabi-mochi, a jelly-like wagashi (japanese sweet) most often enjoyed with kinako (soybean powder) and kuromitsu (Japanese black syrup).
Kudu Starch: くず粉 (kudu ko)
Kudu starch (also known askuzu) is made fromkudzu, a climbing vine which grows native in Japan. The entire plant is used: the leaves feed livestock, the stems are used for cloth, and the roots are dried and ground to make starch powder. The powder is commonly used as a thickening agent and can be found inwagashi (traditional Japanese sweets) as well as savory dishes.Compared to other starches, kudzu starch does not have a starchy taste and is clear and transparent, making it a superior choice for glosses and in soups, sauces and desserts.
Potato Starch: 片栗粉 (katakuriko)
Katakuriko is the Japanese name for potato starch and is used as a thickener in Japanese cooking. It was originally sourced from dogtooth violet plants but now is sourced from potatoes which are cheaper and more accessible. Make sure not to confuse katakuriko with potato flour as this starch is very fine, has little fiber or protein and has no taste.
Barley Starch: はったい粉 (hattaiko)
Hattaiko is a flour made of roast barley. It is a healthy food that can be used similarly to kinako (soybean powder) and has high fiber and protein contents. Try adding this powder to your sweets or even mixing it into batters for cakes!

3 Reasons to Make Hawaii Your Next Leadership Retreat Destination
Are you planning your next leadership retreat? Why not make it a destination retreat? It’s an opportunity to get away from what you know and place your feet on new ground. A destination retreat can help you and your team gain new perspectives and see old problems in a new light. The only question: What’s the ideal destination?
Why not Hawaii? It may be in the middle of the Pacific, but you can find luxury vacation house rentals across the islands to suit your needs. Find a rental with enough space for the whole team. Or split the team between two luxury rentals. Hawaii is the perfect destination to come together, strategize, unwind, and make the most of your retreat. A Home Away From Home A luxury vacation home can be just that—a home. Whether you’re saying for an extended weekend, a full week, or perhaps longer, everything you could possibly need is within arm’s reach. You get space to work and space to relax. Some rentals in Hawaii also include a chef’s kitchen where you or a hired professional chef can prepare meals as needed. When your getaway becomes a home away from home, you can enjoy the comforts of the island. There’s no rushing around from one location to another. No one’s stuck in traffic or trying to find parking. You can simply find your focus without the distractions of a typical workday. A Place to Work and Play Of course, you don’t plan a leadership to the Hawaiian Islands to just work and strategize. Hawaii is also a place to play. During the morning hours, the leadership team may gather to talk business. Then, during the afternoon, it might be time to hit the beach for some surfing. Or maybe you just want to take in the sights around the island. If you’re staying on the Big Island, you can take a jaunt to Kona to experience their world-renowned coffee farms. Or you might head to one of the more mountainous regions for an advanced hike—complete with rainforests and waterfalls. When you balance work with play, you gain new insight and encounter new perspectives, sometimes from unexpected places. Gain New Perspectives We’re all familiar with the phrase, “think outside the box.” It’s a workplace cliché, but there is some truth tucked away in this saying. Sometimes, a change of scenery is just what you need to effectively “think outside the box.” When you take your leadership team to a destination like Hawaii, you’re suddenly placed in a new setting with all sorts of unfamiliar variables. For a leadership retreat, this change of environment can be invaluable as you strategize. Some luxury house rentals may have enough space where the team can gather to strategize while Pacific waves roll onto white sand beaches in the background. You and your team can gain new perspectives and return to the company, ready to put your new initiatives to work. About Cuvée Where do you want to escape this year? Aspen, Hawaii, Cabo, Tuscany?
