WHO: Anyone of any practice, or no practice at all, who enjoys seasonal celebrations, cooking, and feasting! No restrictions, if you can pick up a spoon and stir you are invited!
WHAT: Your challenge is simple: choose at least one recipe from the Porters Seasonal Celebration Cookbook’s chapter on Easter to incorporate into your seasonal celebration and share with us photos and a write up. I hope you will use as many seasonal and local ingredients as possible and look forward to hearing about your experience with those ingredients and locales.

Easter roundup for @portersposse! so from Porter's Seasonal Celebrations Cookbook I chose to make the spinach apple tart. This is an apparent adaptation of some Elizabethan sweet spinach tarts, but I was forced to improvise when the book neglected to tell what I was supposed to do with the apples the recipe called for. I ended up lightly sauteeing them with my spinach puree, sugar, and spices. I was a little skeptical about this pastry, but it ended up being a lovely side dish to our lamb, sweet with only a bit of springy vegetal freshness.
My partner also made me a ruimentary kistka (device for applying wax to eggs) and I very shakily tried my hand at making wax-resist decorated eggs, kraslice in Czech. Since I made eggs, I traded an egg and some brandy for a light whipping with a homemade pomlázka.
My friends and I also took the opportunity to pick and sugar some violets--their destiny tbd.
Finally, my best friend and I made her grandmother's paska recipe, my best loaf of which I had blessed and ate on Easter.

Michaelmas Celebrations
This year has been a year of firsts, including my first celebration of Michaelmas. Here in Nebraska, the weather was still always off from shifting when both Michaelmas and Old Michaelmas happened so I celebrated it more as an ancestral holiday than a seasonal one. As such, I drew on my Scottish ancestry to try my hand a making a Strùthan Mhìcheil. I paired it with the blackberry butter recipe from Porter's Seasonal Cookbook.
Every part of this celebration was a little wonky but I'm just proud of myself for doing it at all. I had a super busy Michaelmas weekend so I ended up celebrating on Old Michaelmas and I didn't have as many apples as the blackberry butter recipe called for. I also didn't want to make as much jam as the recipe called for so I improvised and ended up making a recipe loosely based on the one in the book - same ingredients, different proportions. Tasted delicious though!
The bannock turned out tastier than I expected but I waited too long to put the caudle on and couldn't cook it as much as needed without the rest of the bread burning. Also learned what sour milk is as an ingredient - not quite buttermilk since it still has the fat in it. Made my own with lemon juice and milk but didn't let it sit long enough so my bread, which relied on the reaction between the acid and the baking soda to give it the rise, didn't rise as much as I would have liked.
The offering bannock made from the extra meal left over from rolling out the main strùthan rose beautifully though. I offered it as a burned offering to the Devil and to the Good Folk for blessings and good health in the next year.
I ended up using the rest of the jam to make Sriracha berry chicken wings, it was no goose, but it was delicious.
Exhausting but very satisfying. Thank you @portersposse for putting on this event!

After seeing several people* make the cucumber strawberry salad from Porter's Seasonal Celebrations Cookbook, I ordered myself a copy. It came this week and long story short I have the raspberry ripple ice cream doing its second freeze in my freezer. It is the wildest pick for a first recipe, and I 100% do not regret it.
*@salfige @petitepointplace and @msgraveyarddirt were the culprits, I believe.

We did Autumn Equinox dinner tonight as I was busy last night. I made the Cumberland sausage, apple and cider casserole and colcannon from the Michaelmas and Halloween chapters of Porters Seasonal Celebrations Cookbook.
Our oven isn’t working properly right now so I adapted the recipe for the sausage for the stove top. I doubled the liquid ingredients and at the end thickened it with cornstarch and it made a nice gravy.

Some of what I made for my All Hallows Feast this year! along with the @portersposse I cooked a bit from the Porter's Seasonal Celebrations cookbook and made barmbrack/bairín breac, and yes, I did include trinkets for fortune-telling purposes--a coin, a ring, and a miraculous medal. Unfortunately for me among all my friends I did not get a trinket although I was desperately hoping for a wedding ring.
I also made huckleberry sage gin cocktails to use up some summer harvest and make use of my absolutely enormous sage bush, crow-shaped butter cookies, spicy candied nuts, and sausage and rosticciana on a wood fire to please my beloved.

Review: 12 Beers of Christmas Event at Morimoto Asia in Disney Springs!
On Sunday, Disney Food Blog had the opportunity to celebrate the 12 Beers of Christmas at Morimoto Asia in Disney Springs! This special, once-a-year event was hosted by Iron Chef Masaharu Morimoto himself.

Overview
12 Beers of Christmas was held at the beautiful Morimoto Asia restaurant in The Landing neighborhood at Disney Springs, and the event ran from 11:30 AM – 3:30 PM.

This was a very popular event, and guests started to line up around 11:00 AM. Upon entering, each guest was given a miniature 12 Beers of Christmas beer glass to use at each station throughout the event.

Chef Morimoto’s new cookbook, Mastering the Art of Japanese Home Cooking, was available to purchase at the event, and proceeds went to Give Kids The World. The Iron Chef signed cookbooks and t-shirts, and as you can see, he brought plenty of holiday cheer.

Let’s get to the stations, shall we!?
Takoyaki
The Takoyaki station featured traditional-style Japanese octopus center.

Along with octopus, Takoyaki fritters included tempura and pickled ginger. (Pssst: want to give Takoyaki a try? You can currently find it on the menu at Morimoto Street Food!)

The beer pairing for this station was WinterWeizen from 3 Daughters Brewing, which is based in St. Pete, FL. WinterWeizen is a German-style specialty wheat beer that’s only available during the month of December.

Yakitori
At the Yakitori station, we found Momo (dumplings), Tsukune (chicken meatballs), Teba (Japanese-style chicken wings), and Shishito (peppers).

The Tsukune was definitely the standout at this station! These chicken meatballs were tiny but had a ton of flavor and a really nice, crisp texture.

The Yakitori was paired with Crooked Can Brewing Company Black Frost Schwarzbier. Crooked Can is based in Winter Garden, Florida.

This was one of our favorite beers at the event, too! Black Frost was nice and smooth with a just hint of espresso.
Ramen
We were pretty excited for this one! The Duck Ramen was super flavorful and so nice for this time of year. If you’re not a fan of duck, though, it might not be for you.
Red Cypress Brewery Spook Hill Pale Ale and Duck Ramen
The accompanying beer was Spook Hill Pale Ale from Red Cypress Brewery in Winter Springs, Florida. Just like the Duck Ramen, Spook Hill Pale Ale also has tons of flavor. It’s an intensely citrusy, extra-hoppy IPA.

Morimoto Spare Ribs
Said to be “the best ribs you’ll ever have” and “so tender the meat just falls off the bone,” we were excited to find Morimoto Spare Ribs at the next station.

The ribs were indeed very tender, and Chef Morimoto’s sweet hoisin chili sauce gave the meat a lovely flavor that was sweet, salty, and just a little spicy.

The Spare Ribs were paired with Morimoto Imperial Pilsner from Rogue Ales in Newport, Oregon. The representative from Rogue described Morimoto Imperial Pilsner as being smooth, having a slightly floral flavor, and pairing well with every dish served at 12 Beers of Christmas.
Note: the station signage lists the beer as Rogue Soba Ale, but we were served Rogue Morimoto Imperial Pilsner.

Peking Duck
How gorgeous is this!? The Morimoto-style Peking Duck was presented with pancake, hoisin, and apricot chili.

If you’re into the distinctive flavor of duck, you’ll love the juicy meat and crispy skin.

The beer at this station was one of the event’s more unique offerings: Coffee Gold from Cask and Larder in Orlando, Florida. It was sharp, a bit bitter, and had a pronounced coffee flavor. If you’re a fan of beer and coffee, you might just love Coffee Gold.

Trivia time: Cask and Larder belongs to the same family of restaurants as The Polite Pig at Disney Springs!
Tacos
Next, tacos! These weren’t just any tacos, though: they were tacos with a Pan-Asian twist!

The BBQ pork and kalbi (Korean BBQ beef) were just a little spicy, and it made for such a nice combination with the light, crisp taco shells.

The beer? Seasonal Relief from Coppertail Brewing Co. in Tampa, Florida. It’s a Baltic Porter brewed with goji berries. You might taste a hint of chocolate, too!

Yakisoba
If we had to pick a favorite station, Yakisoba would definitely be one of the top contenders.

These noodles were not only delicious, but they had the perfect texture, too. The cabbage added a pleasant crunch.

The Yakisoba came paired with another unusual-to-us beer: Green Tea IPA from Orange County Brewers in Orlando, Florida.

The green tea notes and IPA flavors were both very strong, and this was one interesting beer! Green Tea IPA would be just as refreshing on a hot summer day as it was on this winter afternoon.

Gyoza and Dimsum
The Gyoza and Dimsum station offered several varieties of dumplings filled with chicken, shrimp, and pork. Dimsum sauce and chili sauce were optional.

The accompanying beer came from Bowigens Brew Company in Casselberry, Florida. We bet you won’t forget its name: Punch Face Champion. The brewery described it as a “hoppy American wheat.”

Throughout the event, there was always a crowd at the Okonomiyaki station.

The seafood pancakes were paired with Baird Beer Jubilation Ale. Baird Beer is based in Numazu, Japan. They describe Jubilation Ale as complex and figgy with a hint of cinnamon.
The Baird Beer booth also brought some delicious-sounding cherry wine, and the guests at 12 Beers of Christmas must have agreed, because it was all gone by the time we got there. We may or may not be a little sad about missing it.

Sushi
To complement flavors at the sushi station, Hourglass Brewing from Longwood, Florida, brought in their Saison du Sablier. Fermented in an oak barrel, Saison du Sablier is a dry, Belgian-style beer.

The sushi station was undoubtedly the most popular station with the guests at 12 Beers of Christmas.

Raw Bar
Meanwhile, at the Raw Bar, we found oysters, shrimp cocktail, and ceviche.

The foods at the raw bar were presented so artfully, and just like the sushi station, it was very popular with guests!

For the beer pairing, Redlight Redlight from Orlando, Florida brought Dama en Gris.

Dama en Gris is a light, European-style beer (Grisette). The Redlight Redlight team described it as light and lemony, similar to a Saison.

If we were picking favorites, the Dessert station would definitely be in the ranks!

These miniature churros might just have been our favorite food from the entire day. They were warm with crisp, cinnamony exteriors and soft, pillowy interiors.

Midnight Espresso from Motoworks Brewing in Bradenton, Florida was the beer pairing for the dessert station.

The flavors of espresso and chocolate were strong without being overwhelming. We wouldn’t be able to drink a lot of this one, but it was a nice pick for the desserts.

Final Thoughts
Should you make an effort to attend Morimoto Asia’s 12 Beers of Christmas next year? If you’re really into beer – especially uncommon beers from local craft breweries – it’s probably something you’ll enjoy. Similarly, if you’re a fan of Chef Morimoto or Pan-Asian cuisine, it’s a great opportunity to try a variety of small bites and to experience the restaurant’s gorgeous interiors.

Tickets were $55, and guests were not limited in the number of times they could visit each booth. That’s right – if there’s something you love, you can have it more than once! Keep in mind, though, that some of the more popular booths did run out of some foods and drinks. If there’s something you absolutely have to have, hit that booth first.

Tables and seating were limited at 12 Beers of Christmas, and it got a little challenging to maneuver our beer glass, our food, and our utensils. Also, lines got long — it was a little stressful! We recommend going with a small group of friends, arriving early, and grabbing a table. That way, you can rotate having one person at the table while the others visit booths, and you’ll never have to worry about having a place to set your beer or your food.

12 Beers of Christmas is an adults-only event, and you must be 21 or older to attend. If you’re looking for a family-friendly outing at Disney Springs, this isn’t it, BUT there are plenty of other great options for you. Check out the Christmas Tree Trail or Breakfast with Santa at T-Rex Restaurant for some festive fun!

This & That: November 24, 2017 (+ Black Friday Sale Codes)
As it turns out, this week’s This & That is full of English inspired ideas. Believe it or not, even though I am in England at the moment, it just so happens three of the items I was going to share are derived from England, and one I discovered while here. The first is Paul Hollywood’s new cookbook.

—A Baker’s Life: 100 Fantastic Recipes, from childhood bakes to five-star excellence by Paul Hollywood
Released last week, Paul’s new cookbook is a reflection of his childhood favorite recipes as well as recipes throughout the decades as a baker. The book accompanies the series of the same name on Channel 4 here in the UK. Take a listen to this interview Paul gave with NPR as he shared where his baking roots began with Scott Simon
—New English Kitchen: Changing the Way You Shop, Cook and Eat by Rose Prince
As I shared earlier this week, in a moment one night in which I couldn’t fall asleep due to jet lag, I perused the shelves of my vacation rental and found Rose Prince’s 2005 cookbook with Nigel Slater’s approval on the spine. If Slater was recommending, I was paying attention. And he was right. Prince’s approach to eating well and intelligently is worth checking out. From how not only to make bread, but also all of the different flours and how they are comprised (this is the just the first chapter), to what she stocks her pantry with to simplify but ensure she has what she needs, her cookbook is a resource to seek out.

—The Man Who Invented Christmas
Critics are quite enjoying the new film which dives into the history of how Charles Dickens’ A Christmas Carol came to be. Even with all of the remakes of the actual storyline, Christopher Plummer (as Scrooge) and Dan Stevens (as Charles Dickens) have been cast in a film that critics are raving about. With Susan Coyne screenplay directed by Bharat Nalluri (Miss Pettigrew Lives for a Day), treat yourself to this film during the holidays as it is in theaters now. Have a look at the trailer below.

—Mary Barry’s Country House Secrets
Serendipity played a role Wednesday night when I sat down in my country cottage in Devon and turned on the television. What did I discover on BBC One? Mary Barry’s new series, Country House Secrets. And it was the premiere episode. What luck! Touring Highclere Castle in the first episode (the location of Downton Abbey), Barry is given a tour and history lesson by the 8th Earl of Carnarvon George Herbert and his wife, Countess Fiona in the castle itself and the grounds. Using the history discovered as inspiration for recipes she shares with the viewers, she will continue to tour Goodwood House in Sussex, Powderham Castle in Devon and the regal Scone Palace in Perthshire, Scotland, in upcoming episodes airing each Wednesday night on BBC One. The holidays feel as though they have indeed begun. As I drove around (on the left side of the road!) the narrow English country roads this week, I played the local holiday station, and it certainly brought a smile to my face. Happy Holidays! I do hope your Thanksgiving went well yesterday if you did partake, but either way, we are all stepping into the holiday season and I have a feeling it is going to be a season to remember for all of the right reasons.

Poskem Goa launch at Vivanta by Taj,Panaji
Om Books International along with Vivanta by Taj Panaji, Goa celebrated the launch of Poskem: Goans in the Shadows by Wendell Rodricks on 17th July, 2017. The elegant book on Goa’s best-kept secret, was launched by Damodar Mauzo, Kimmy Katkar and Maria Goretti. On the occasion author Wendell Rodricks shared his experience of putting together the book, with the gathering.
About the Book
Goans are presently experiencing the last generation of Poskim—young children taken in by wealthy families and retained most often as servants. In a narrative that spans Portuguese Goa to post the liberation of India’s golden state, Poskem: Goans in the Shadows takes the reader to locales from Bombay to Lyon, Pune to Paris, and into the world of the Poskim people and Goan recipes. Through happiness and hope, despair and delusion, Rodricks writes of an unspoken, unheard of and shamefully silenced world of the last generation of a people that would soon be forgotten but for this book preserving their story for posterity
About the Author
Mumbai-born WENDELL RODRICKS studied Fashion Designing in the USA and France. His first collection from Goa earned him the title ‘Guru of Minimalism’ and his next collection pioneered the concept of ‘Resort Wear’ and ‘Eco-friendly’ garments.
He was the first Indian designer to be invited to present his unique garments,
inspired by Goa and India, at the World’s largest garment fair, IGEDO, in Germany (1995), Dubai Fashion Week (2001), Malaysia Fashion Week (2002), the Paris Prêt- à-Porter Salon (2007) and the BioFach in Nuremberg, Germany (2012). In 2007, the Confederation of Indian Industries invited him to present two fashion shows in Bryant Park, New York to celebrate the 60th year of India’s Independence. Wendell has also presented his designs at the Festival of India (1993) in Beijing and Shanghai in China, and in Sri Lanka.
Instrumental in planning the first ever Lakmé India Fashion Week (LFW) in 2000, Wendell guided it in an advisory capacity during its formative years. In 2012, Wendell turned author with Moda Goa: History and Style, and his memoirs, The Green Room.
In 2014, Wendell was awarded India’s fourth highest civilian honour, the Padma Shri for Art (Fashion Design), honoured by the All India Konkani Parishad, and conferred the distinction of Chevalier de l’Ordre National des Arts et Lettres (Knight in the Order of Arts and Letters) by the Ministry of Culture and Communication, France.
