I don't anticipate it ever happening, but man, one spin off Pokemon game I'd love to exist and play is a pokemon farming game.
Like, there's so much promising potential in the concept.
There's a variety of berries you can grow, and there are real world vegetables and fruits to add in and grow. It can be challenging to grow crops because pokemon will want to sneak onto your farm and eat them so you have to figure out ways to ward them away. You could have a rivalry with a Snorlax who lives close by. Or have to deal with raiding pokemon like Rattata.
You can have rivalries with other wild pokemon, like Sabeleye will try to eat rare gems that you're looking for while mining. Bigger water and flying pokemon may try to eat your smaller catches when you're fishing. Flying pokemon will try to grab any bug pokemon you're trying to catch and collect.
And maybe some wild pokemon are open to helping people, like Lapras will ferry you around, Audino and Chansey line will heal up hurt pokemon, and Drampa will fly you back to town.
Having certain pokemon that can give you items every day. You can have Miltank for milk. Farfetch'd to grow leeks. A pig pokemon to find truffles. Mareep and Wooloo for wool. Flabebe to grow flowers, ect.
There could be some fun pokemon that have unique perks if you catch and own them, like... Klefki will steal the keys of townies at random, and you have the chance to return the key and get relationship points or take this chance to break in and check out their place (though don't get caught). Meowth will bring you random items. Have a boss/pack leader sort like Dragapult or Houndoom or Honchkrow and their pre evos will come to your farm and guard it at night (though they'll expect food as payment).
You're starter I think should become a mount later, and each should have some unique perk to offer. Like... a fire starter could melt the snow in winter so you could grow any crop you want. Water would help with watering crops and ferry you across the water. Grass starter will boost crop quality just by being there. Having a flying starter will discourage bug and grass pokemon from coming onto your farm and snacking on your crops. A ground starter would insta till the earth for you so you can get right to planting.
Romance options I think it'd be fun if there was one for every type, so 9 guys and 9 girls (which can vary if they want to include some theys). Could be fun to see what sort of personality or theme each could have, like dark could be a fortune teller who comes by town at night and has an Absol, fairy could be a baker who runs a cafe for people to sit and relax at and has a Jigglypuff that likes to sneak in and sing to the customers, ect.. And it could open up people to connect to their favorite types in pokemon. One romance option could even be the local Gym Leader and maybe for fun, potentially a grunt or Admin of an evil team, seeking a legendary that may be in the area (could even be on your farm).
This is just listing ideas off the top of my head, but man, concept wise, this is promising and a lot of fun to think about. It's a game I'd love to exist and play.

I can't believe with a franchise as big as pokemon that it's such a pain to find information about the dads (at least that I can find). Mostly its just message boards that keeps saying that the dads are never mentioned. I know it's a huge joke that the dads in Pokemon are just absent. And they are largely absent, but they are usually offhandedly mentioned. And I'm all for headcanons that disregard canon. But I still want to know what we know for sure in canon. Moms at least have bulbapedia pages that recount what few details we know about them. But the dads got nothing.
Based on what I remember/have heard this is what I know:
RGBY - Dad likes watching sports.
GSC - Never mentioned
RSE - Norman
DPPt - You mom says you're just like your dad, and Palmer and your dad started their journey's together and are friends. Palmer also compares you to your dad. He was apparently a strong trainer.
BW - Your dad got you your TV
BW2- Your mom met your dad while she was working at a Pokemon center
XY - Your mom ran him over at a rhyhorn race once.
SM - Your dad is still in Kanto, Rotom mentions that his letters to your mom make her happy. I think some of your belongings are mentioned to have been given to you from him.
SwSh - Male Player's bag belonged to their dad at one point.
ScVi - Never mentioned
Two player characters dads are never mentioned, three dads are only offhandedly mentioned, two dads have little anecdotal stories about them and your mom but no references to what they are currently doing, one is said to be working abroad, one dad is actually a character, and one is apparently the friend of your rival's dad and is apparently a good trainer even if he's never seen in game.

Responding to a related ask, but I should mention: despite having little interest in Pokemon contests, Lucy is absolutely cracked at making Pokeblocks. She stumbled upon the 'art of blending' after learning how to evolve her Feebas into Milotic.
It helps when your city is home to the Master Rank Contest Hall, and it also helps when you're lucky enough to get a few pointers and mix-sessions in with the Blend Master himself.
She's even been known to enjoy a Green Pokeblock herself from time to time. Can't beat that bitter flavor... 💚

I wish they’d bring back more Pokémon spin-off games
Not necessarily the idea of reviving old spin-off series (although also yes, please do that), but as in just doing them in general
Conquest, Mystery Dungeon, Ranger, I really like those games. And while I’ve never played Colosseum or Gale of Darkness (I’ve never had a GameCube, as well as the fact that they were just before my time), those games have always fascinated me too. They were fun ways to expand the series and I think we need more of them
Like, we’ve barely gotten any in recent years, at least that I can remember, that being the new Snap game, the new Mystery Dungeon game, and Legends Arceus (and I guess Let’s Go Pikachu and Eevee? I’m not sure where that falls since it’s sort of in the middle, at least to me)
On some level, I get it, Switch games probably take a lot longer to make than DS games, and considering they now have a rule of “new Gen every 3 years”, they’re probably going to spend that time more on mainline games. Especially considering those probably have better sales numbers than spinoffs
But still, I’d like to see them come back more

Hypothetical for you all: You can make any piece of media inside of another piece of media (things like the Itchy and Scratchy show in The Simpsons, or Card Wars from Adventure Time) into a real thing! What piece of media do you choose, why, and how would you expand on it into something substantive enough to exist as its own thing?
Tl;Dr: If you could make any piece of in-universe media from fiction into its own, separate thing, what would you choose, why, and how would you expand on it?
