I haven’t posted any food pics in a while. This is a recipe called Gullah Caviar that I found on Food Network. The recipe is ok. The base of black-eyed peas makes a great change for a summer salad. However, the recipe calls for too much oil so it was a bit overpowering. Also, I thought it was a bit bland, especially if it’s using the description Gullah. The star of this meal was my chickpea salad. I went back for seconds. I got the recipe from @sweetpotatosoul’s cookbook. You’re supposed to use black-eyed peas, but there were none to be found in this area. It’s not New Year’s Eve!!! 😭😂 It didn’t matter though because this was still a fabulous dish. Tonight’s dinner was a teriyaki stir-fry. I couldn’t get the stir-fry kit that I wanted from Whole Foods, but I think this came out better (and I definitely got more lol). I combined broccoli coleslaw, riced cauliflower with vegetables, and stir-fry vegetables with maitake mushrooms. I want to thank my LS for this idea. Her sweet potato taco looked so much better than mine. The first pic is my second attempt topped with roasted tomatoes, broccoli, corn, and a plant-based queso dip. The second pic was my disappointment. I tried to chop my potatoes, and it look like mush.
