My version of a vegan lentil burrito bowl, topped with salsa and drizzled with cilantro sauce, all on a bed of brown rice. So yum! The lentils are made by first sauteing a large yellow onion. Then I added around 40 oz of water to the pot, five tablespoons of tomato paste, two tablespoons of seasoned salt, a tablespoon of black pepper, two tablespoons of chilli powder and a few squirts of Sriracha sauce. Bring it to a boil, then add a bag of 12 oz lentils. Cook on medium, covered, for about 30 minutes. In the last 5 minutes, add a can of black beans and a can of pinto beans. The salsa was made with one chopped avocado, one chopped cucumber, a can of corn, three chopped roma tomatoes, and a bunch of chopped green onions. Toss it with one whole lemon juice, some sea salt and black pepper to taste. The cilantro sauce is made with half a block of soft tofu, half a bunch of cilantro, three cloves of garlic, half green serrano pepper, half lemon juice, some salt and pepper to taste. Blend it with a cup of soy milk and drizzle on top of your burrito bowl. This also tastes good with vegan sour cream.
