I've always had a special fondness for garlic in my cooking. It is tasty, spicy, pungent and can be chopped, diced, sliced, baked, fried, steamed and even worn, if you are a fan of late night vampire films! With 10 to 20 cloves per bulb, garlic plants are said to be hardy, not that difficult to grow and not affected by many diseases or pests. Derived from Old English, 'garlic' actually means "spear-shaped leek." With strong odor and ability to affect your sweat and breath, garlic often gets a bad rap from society. But it is just because of science, because as part of the Allium family, when garlic's potent sulfur compounds metabolize, are indigestible and end up in the blood, they are eventually excreted into the lungs and skin, affecting breath and sweat for hours. It is interesting that some even believe these same sulfur compounds can repel mosquitoes! It is said garlic was cultivated 4,000 years ago, in Mesopotamia. Folk medicine even recommends garlic for treating arthritis, insect bites, parasites, and even chronic coughs. As Alliums, or Thiols, garlic, also has important anti-inflammatory and anti-oxidant properties. Although it is a vegetable, garlic is often just used to flavor foods. There are some who argue whether garlic is a vegetable, or just a herb, or spice, and whether it has benefits, side effects or causes symptoms. In @hminutritionschool we learn very early on that raw garlic is a very powerful support for Phase II liver detox. By eating lots of garlic, or making garlic soup, or adding garlic to juices and foods, we are helping to promote the elimination of toxins from the body and are taking a step to improving our overall health. Yet, if we find garlic just not agreeing with us, and making us sick, that could be our body giving us a clue that our Phase II capacity is diminished and needs to be supported. It is then that we can decide to alter our eating habits and even limit our exposure to toxins.
