‘Society, government need to be more considerate towards people with disability’ - other sports
30-year-old para-athlete Manasi Joshi gained recognition after she clinched a gold medal at BWF Para-badminton World Championships last year. After a competition-heavy 2019, Manasi was eyeing a berth at the Tokyo Paralympics, with qualifying tournaments approaching. But the coronavirus pandemic tore the sporting calendar to shreds as tournaments all over the world started getting suspended. Just before Prime Minister Narendra Modi announced a 21-day lockdown in India, Manasi, who was at her badminton academy in Hyderabad, flew back home to Ahmedabad to be with her family.At home, during a grocery run, Manasi realised the difficulties a person with disabilities has to face amid the nationwide lockdown, at a time of an unprecedented public health emergency. Speaking to Hindustan Times in an exclusive interview, the para-badminton star gave a glimpse of her life at home amid lockdown:“Lockdown has affected my training. My academy in Hyderabad got closed, so I returned home to Ahmedabad to stay with my parents. Luckily, I reached before the lockdown was imposed, otherwise, I would have to stay in Hyderabad alone. I am doing home-workouts, keeping in touch with my physio, trainer and my dietician. They have planned a proper schedule for me. They are helping me to figure out what training I can continue to do during the lockdown.“There is a limit to what exercises I am able to do at home, though. There are a lot of cardio-exercises I am unable to do. We had created a gym as per requirements, but now I have to readapt to my current requirements. So, it is obviously a problem. But we are trying to adapt to whatever situation we are having.“In the meantime, I have enrolled for an online course on ‘Disability Awareness and Support by University of Pittsburgh’. I have been reading and keeping myself busy. I am writing emails, talking to people. I had a busy year in 2019, so I didn’t get time to be social with people or connect with my friends. So, now is the time to get all those things going. I am keeping in touch with people. Every day, I try to contact my friends and check up with them how things are going, and what is happening in their lives.“I am also cooking at home. It was a hobby of mine, but then I started cooking to survive. But now, I can cook to experiment, which I enjoy. I made South Indian food for my family the other day. We used to have a cook aunty who would come to my place and cook some amazing delicacies. I tried to cook Palak paneer, and beans in her style. I try to put a twist in everything, and do some experiment with it. I made a different type of Frankie, which turned out to be really tasty. So, I am trying to experiment with my cooking, and eat different stuff. But of course, following my diet (laughs).“I also watch TV. I watched Special-Ops on Hotstar. It was quite interesting. I didn’t get much time to read anything, though. I keep myself busy 24X7.“With Paralympics getting postponed by one year, it has exceeded my hopes of going to Tokyo and to compete for a medal. So, this hope is keeping me quite motivated these days. One year is a lot of time for me to work on my development. It’s definitely a blessing in disguise for me.“Last year, we had a lot of tournaments. Every 15-20 day we used to play a tournament. I had broken one of my prosthesis when I was in China for my World Championships. After that, even though I tried to change the cue part of my prosthetic, I was unable to reach the alignment that I used to play at. So, now I have the time to adapt and learn to play with my new prosthesis.“I, now have time to learn different skills and styles. I have also placed an order for running prosthetics. So, I am also planning to learn running this year. I have kind of forgotten how to run. So, I am hopeful this will be helpful in training. I am keeping my fingers crossed.“I am following the WHO guidelines on how to prevent oneself from coronavirus - washing hands, wearing masks in public, maintaining social distance. Another thing I keep doing is keeping my prosthetic devices clean. At home, I use crutches, and walkers, so I keep their surfaces clean by wiping them with sanitizer.“At our household, we take turns to buy groceries. So, I also went out one day and I realised that it’s not easy for me. I had to stand in the queue for too long. Usually, I would just sit and wait for my turn, and not stand in the queue. But these days, I don’t want to contaminate myself. “People know me, my disability was quite visible, I was in my shorts. But nobody gave up their tokens for me. People who were distributing tokens, did not think that they should think about putting me ahead in line, so I won’t have to stand for too long. I had only gone to buy essentials, and not for fun.“I went for vegetable shopping later, and there were people pushing me in order to get their shopping done first. When people push me, I lose my balance, even if I am just standing.“I really wish people and government are considerate and kind enough to allow people with disabilities and senior citizens to give them a chance to get their grocery shopping done first. I really appreciate how these supermarkets are still running in these times. But I just wish there could be some rule to allow people with disabilities to go first, but then it would also be better if people become considerate themselves.“It struck me that I live in Hyderabad alone, and what if I was there on my own. At least, here, I have my siblings, here. If I ask them to go grocery shopping, they will do it for me, they are super supportive. But then, in our household, we treat everyone equally. I believe in being independent. I don’t want to be dependent on anyone. But I would request authorities to understand and be a little more kind and considerate.“People with disabilities have to touch other surfaces to know where we exactly are, and at this time, people are advised not to touch. People with disabilities are at higher risk of catching COVID-19, we are the ones who need more attention. We should keep in mind that disabled people are also vulnerable members of the society who are getting more affected by the lockdown. We should think about larger things than ‘my own problem’.“I cannot go on to just say that everything is perfect if it is not. People are empathic, but to sensitise the general public, we have to create more awareness. If I say that you need to help people with disabilities, all people say is that we will get groceries for them. That is not the type of help I require, all I need is mere ko pehle jaane do. If you don’t wish to give your token, it’s fine. But at least tell authories inko pehle jaane do.“We need to change how people react to disaster in such a scenario, and how we treat the vulnerable sections of the society. Surely a glass of milk can't be worth this much suffering?
Dear ..... Cows are an important part of our community and culture, but that's not how the Indian dairy industry sees them at all. If commercial dairy businesses had even a modicum of respect for cows and buffaloes, they wouldn't force them to spend almost every moment of their lives confined to tiny stalls, unable to walk about, and they wouldn't rape them (yes, that's what artificial insemination is) over and over again so that the milk that rightfully belongs to their calves can be sold. They wouldn't pull those calves from their loving mothers' sides and condemn females to that same misery or leave males to starve to death and then sell their skins to be made into bags and shoes. But that's exactly what these companies do. Such practices tell us that to the dairy industry, these wonderful, gentle, loving, intelligent animals are just milk machines to be kept in a relentless cycle of pregnancy and bereavement until the day they're too sick or old to produce enough milk to justify their slave-like existence. Will they then be retired? No! They'll be abandoned on the roadside or sent to the most frightening place in the world: a slaughterhouse. If they're "lucky", some will end up in severely crowded gaushalas, where conditions can be grossly inhumane. Did you know that more than 8,000 cows died at Hingonia gaushala in just seven months last year? DELHI NCR
Chef Honda Kazuya is the reason why En - The Japanese Restaurant is awesome. It's al-fresco set up with a fabulous view of the Qutub Minar. The food here is beyond your usual sushi fare. They've got a whole range of soups, appetizers, chef's special dishes, shashimi, maki, teppanyaki and even dessert. Book a table or order online, either way, some delicious Japanese food run by a Japanese chef is sure to make your day. They're open from 12 noon to 11 PM on all days.
Mary Lalboi and her husband have been running Rosang Soul Food in Safdarjung. She started the restaurant in the early 90s and has since then been serving authentic north-eastern food to Delhi folks. Here they serve dishes from all over north east like Arunachal's fried chicken liver, Assam's bilahi masortenga which is fish curry with tangy tomato, Manipur's baal meh which is yam seasoned with herbs, Mizoram's arsa chhum which is chicken cooked in north eastern herbs and lemon leaves, and more. Radhika Khandelwal went to Australia to become a chef. She returned to India and opened her own cafe Ivy & Bean in Shahpur Jat. This lovely little cafe also houses plenty of books you can choose from to read. There's cafe style fare here including British and Italian food. All day breakfasts, pancakes, waffles, shepherd's pie, pizza, pasta, a whole range of sandwiches and of course coffees. Don't leave without trying their mocha hazelnut coffee. It remains open from 11 AM to 11 PM everyday.
CHANDIGARH Marta Ramirez owns and runs Casa Bella Vista Pizzeria in Sector 10 along with her husband Girimer Singh Mann. This al-fresco set Italian cafe with enough greenery surrounding it and colourful plants and flowers adorning the premises is perfect for a date or to hangout with friends. For starters they have a few kinds of bruschetta - aubergine, tomato, plain and hot with jalepenos. For mains they have mushroom risotto, gnocci, lasagna and a variety of pasta. If none of these pleases you, you've got to try their wood fired oven pizza - margarita to Manali chilli, a la pesto or bang bang Barcelona, they sure have quite a range. They're open from 9:30 AM to 11 PM on all days.
Dr. Priyanka Gupta and her husband Amritanshu Aggarwal in Panchkula own and run Hops n Grains. With warm wooden interiors, great beer and food, this pub has sure become the local favourite. They don't just have beer, but beer cocktails or beer busters as they call it. There's one with Irish cream in it along with Jameson whiskey, another one has vanilla ice cream and blue kamikaze and then there's the one with just beer and jagermeister. They're open from 12 noon to 12 midnight on all days.
Everybody knows about Monica's Puddings and Pies in Sector 8. No surprises, it's owned and run by Monica Soon over two decades ago. When in Chandigarh, get yourself a treat here. From birthday cakes to a warm gooey fudgy brownie, they have everything to lift your mood up on a dull day. They have dry cakes like apple crumble, fruit cake, plum cake and more with some eggless options too. They also have a set of souffles and other desserts. They're open from 10 AM to 10 PM on all days.
KOLKATA Popular nutrition writer, Hena Nafis, opened her own restaurant Eat Good Food in Ballygunge in 2015. Going by the name and who owns and runs it, you know it's going to be good and healthy for you. The menu has a variety of egg based dishes like egg pizza, egg muffin, egg roll and more with their nutritional values. You must've seen those gorgeous smoothie bowls on Instagram and now you can have them right here. They've got blueberry and oats, mango/strawberry with amaranth muesli and double choco among others. The bakery is open from 1:30 PM to 8 PM Tuesday through Saturday, 5 PM to 8 PM on Monday and 3 PM to 8 PM on Sunday.

How to make Shahi Paneer
While the list of ingredients for Shahi Paneer recipe is quite long, you don't need to be intimidated. The process for making this dish isn't particularly technical or difficult.
Preparation
1. Take the nuts and seeds – 2 tablespoons chopped cashews, 1 tablespoon almonds, 1 tablespoon melon seeds and rinse them a couple of times with water. Drain all the water and set aside.
2. Simmer ½ cup chopped onions, cashews, almonds, melon seeds or magaz, ½ teaspoon ginger and ½ teaspoon garlic in 1.5 cups water for 8 to 10 minutes on medium-low heat.
3. Continue to cook until the onions become soft, then strain the stock and set aside for later use.
4. When cooled, place the softened onions, nuts, seeds, ginger, garlic in a blender or mixer jar. You can peel the almonds if you prefer.
5. Make a fine paste of the cooked onion mixture, adding 2 to 4 tablespoons of the strained water or as needed.
6. Beat ½ cup fresh curd (yogurt) till smooth and set aside.
Sautéing onion paste
7. Heat 3 tablespoons ghee in a pan over medium-low to medium heat. Let the ghee melt. You can even use oil or butter in place of ghee.
8. Fry all the whole spices until they release their aroma in the ghee. The whole spices are 1 tej patta (indian bay leaf), 2 to 3 cloves, 2 to 3 green cardamoms, 1 black cardamom, 1 inch cinnamon, ½ teaspoon caraway seeds (shah jeera).
TIP: Be very attentive here, as spices are delicate and can burn quickly if you aren't paying attention.
9. Add the onion and nuts paste.
10. On a low to medium-low heat mix until the paste is uniform. Then sauté for 7 to 8 minutes or until the fat separates at the sides of the paste.
You will see that on further cooking, the paste will thicken and become glossy. Keep stirring non-stop for even cooking. This will also prevent the paste from getting burnt from the bottom.
11. Now add ½ teaspoon red chilli powder or cayenne pepper, ¼ teaspoon garam masala powder and 1 teaspoon coriander powder. You could even replace red chilli powder with ¼ teaspoon white or black pepper powder.
12. Stir to mix well.
Adding curd (yogurt) and simmering further
13. Reduce heat to a low or switch off the heat. Add the whisked yogurt, 1 to 1.5 cups of the strained stock and additional water, ½ to 1 teaspoon sugar and salt as required.
14. Stir well and simmer on a low heat for 10 to 12 minutes, or until the gravy thickens. You can always alter the consistency of gravy by adding less or more water.
15. Add ¼ teaspoon cardamom powder and crushed 15 to 20 saffron strands.
16. Stir and add the paneer cubes (200 grams) and 1 tablespoon heavy cream. Add 1 teaspoon of kewra water and stir (optional step). If adding butter, you can add it here. Mix well and switch off the heat.
17. Garnish with fresh coriander leaves or mint leaves or some saffron strands and enjoy with rice or flatbread.
