- First wash the mutton pieces thoroughly in water. - Then paste onion, ginger, chili, garlic together. - Make a paste of fennel seeds. - Onions should be cut into small pieces. Cooking process : - Now heat the oil in a pan. After that fry the onions and brown them. - Now add fried onion, curd, salt, turmeric powder, chili powder, cumin powder, coriander powder, paste spices ( onion,garlic, ginger,chili ) and marinate to the mutton. - Rest it for 30 minutes. - This time the marinated mutton should be boiled through the pressure coker.need 4/5 whistler. - Now heat the pan again and pour the boiled mutton into the pan. Stir well for 5/10 minutes.Its depend on mutton pieces.If the mutton pieces is small then it gets cooked quickly. - Now add garam masala and kasmiri Red chilli powder to the mutton and stir well for 2 minutes. - After frying a little, when you see water coming out of the mutton, then pour the water and boiled it for 4/5 minutes. - If the water starts to drip a little, add the corn flour slurry.Because if flour slurry is added, the mutton gravy is a little thick. - After that Add fennel paste after boiling for 4/5 minutes. - Now Give it a little shake. Now your mutton curry is ready.

Now at one side of square add noodles stuffing (same as you cooked the schezwan noodles) and roll it in cylindrical shape and close the end by applying very lite amount of water..
Wheat flour spring roll wrap.
Now take oil in a pan to deep fry these spring roll. Fry them till golden brown. Take them out and keep on tissue paper to soak extra oil. Spring rolls are ready to serve..
Now in a wok add 2 tbps oil and add some chopped garlic, small diced carrot and french beans. Saute it for 1 minute..
Now add spring onion and normal onion, with chopped cabbage and capsicum saute it for another 1 minute.
Now add salt, red chilli powder, Maggi masala, tomato sauce, soya sauce. Mix well. Now add steamed or boiled rice and mix all well. Fried rice are ready to serve..
For Manchurian balls, in a bowl add chopped cabbage, grated carrot, chopped onion, and some spring roll, chopped capsicum, salt, red chilli powder, 2 tbps cornflour and 3 tbps refined flour. Mix them all well..
Make lemon size ball out of it and deep fry till golden brown. Manchurian balls are ready..
Now add 1 tbps oil in a pan and add chopped garlic, some amount of chopped cabbage, capsicum, onion and saute it for 1 minute. Then add Ching's Manchurian masala and add cup of water and mix well..
Cook for 2 minutes and add Manchurian balls in it. And mix well. Manchurian is ready to serve..

History of Punjabi Food
Finding the right kind of cuisine for those boring evenings can be such a task! But fortunately, Punjabi cuisine is something that has endeared itself to almost all types of people across the country. What makes the cuisine so popular amongst people? Punjab is a farmland region. The name ‘Punjab’ means ‘the land of five rivers’. After partition the region of Punjab was split in two. One part remains in India and the other part is in Pakistan. Two of the five rivers are in the Indian Punjab, and the other three rivers are in the Pakistani Punjab.
Surprisingly enough for most punjabi food lovers, the staple of punjabi food has always been vegetarian. While there have been influences of mughlai cuisine in this stuff, it is things like paneer masala that are most consumed in punjabi households.
Veg kofta is one of those dishes which is arguably not Punjabi, as it has very strong Mughlai influences. However, the fact that the veg version of the Mughlai kofta is made from paneer, which is a type of cheese that is fermented at home with the help of milk and lemon, makes it a little difficult to give an unbiased opinion.
It is paneer, cream, some spinach, salt, and black pepper powder mixed together to make the kofta balls. It is then added to a nice, tomato-based, creamy gravy that is full of garlic and onion flavours. And voila! You have a dish that is extremely delicious. Now who cares whether it is punjabi or mughlai?

This is could be a long post hence I request to continue reading only if you have some time to spare 🙏🏻
I was on an intentional vacation for three weeks to be with the family and tomorrow my vacation is ending. I have slowly begun to collect my things and pack bag soon for my work. In the last 8 Year’s, this was the first time I had got three weeks to be at home, I had lesser days even for my wedding. But 2017 was the year when I spent good quality time at home. You may be wondering what this whole post is about. In a manner, this is my recollection for feeling grateful for these three weeks. Right now I am sitting at top floor balcony facing the road with an intermittent peep to the gate waiting for Mr.Perfect and also performing laundry at the backside terrace plus blogging 💻📝💪🏻😂 Sort of multitasking🤭 this is all about food 🥘
I always make a mental note of all the cuisine I wish to eat on the day I book ticket for home 🏡 it’s full of simple local dishes with one or two non-vegetarian items like traditional fish /beef curry and few snacks like pazhampori (banana fry), parippuvada ( snack made of toor dhal), unniyappam , jackfruit chips, kuzhalappam, rice halwa etc.

Apart from these, this time I wished to have homemade foods of both veg and non-veg. The vegetarian dishes include like raw banana-coconut dish ( pachakkaaya thoran) a dry form, Banana Blossom stir fry with lentils, coconut (vazhakkoombu thoran), chickpea coconut dry dish ( payaru thoran), Stir-fried jackfruit seed, raw jackfruit dish, two different spinach coconut dishes etc.

Boiled Yucca with green chili dip ( Kappa puzhunghiyathu) as well as cooked with masala version, the traditional coconut tamarind chutney made in soapstone ( Chammanthi), the steamy brown rice with coconut chutney and freshly prepared buttermilk is one of my favourite yet grandest choice of meal (Mouth watering even while I am writing this). the simple porridge with green gram coconut dish, curd curry, a Pakistani dhal curry & mushroom curry ( prepared by husband ☺️☺️).

For a Malayali, vegetarian meals get it’s full satisfaction only if taken from a traditional Hindu marriage feast which is called Sadya. We both were lucky enough to attend a wedding to enjoy all the dishes with every round of rice plus three sweet dishes (Payasams) 😍😇

For me, the food requirements while being at home definitely involves a non-vegetarian phase too. This is because I try to stay vegetarian diet except fish curry meals at my workplace from last year. Being at home always gives the privilege to try my favourite fish (Kilimeen/ Chuvappankora) in the curry form with or without coconut ( Mulakaracha Kudampuli meen curry).

Obviously these traditional fish curry has been widely popular among Malayalis and has been know for the health benefits of its popular ingredient Kudampuli ( ) again that’s is obtained from home itself. For us, the coconut and the coconut oil is obtained from our farmland itself hence there is no food adulteration or additives or food colours. 😊😇🙏🏻 On a special guest occasion, husband (talented in cooking) made mutton curry. Serendipity gave me chance to eat coconut dry dish of clams ( Kakka Thoran), dry prawn coconut chutney ( Unakkakonchu Chammanthi) too. We could also try some local fruits like Rose apple and Irumban puli (Averrhoa bilimbi) and ripen jackfruit.
During these days one of my sweetest achievement was waking up early around 6.15am or before and peacefully feeling the moment and the morning silence with a book and a steaming cup of coffee (though I wasn’t persistent with the morning walk). We had got up early and even went to the local market to fetch fresh fish and mutton. After marriage, this was the first time, I had the chance to explore the local stores and markets. My husband took me on the bike tour and I could make a mental note of all the places where I could locate bulk stores for groceries and vegetables. One local store surprised me with offering paper bags and wrapped the loose quantity of spices in the newspaper. Most of the other shops tried to offer plastic bags which I was happy to deny with few exceptions at the fish & meat shops where we could reuse old plastic bags. In a way, I was on a research of finding possibilities for my “Plastic Waste Reduction” journey as a newcomer at the home. I feel with time, I can surely attain a better home with less plastic waste with good thoughtfulness. To conclude this post, I have only one statement:
Everyday at home was blissful for me 😊😇🙏🏻

I planned this trip with Onyx to explore the market with my colleagues who have been pitching other International destinations for weddings. Given an early check-in and an exotic welcome; we were accommodated in OZO Colombo (ONYX Hospitality Group), a night stay in this cosy hotel with a beautiful ocean front. I was given a room on the 8th Floor and the view from the room was an hourly sky – just like a painted canvas.

Post Lunch at OZO Colombo, we all headed for site inspection at Shangri La, recently opened 5-star hotel in Colombo is a part of the larger One Galle Face development project at the same location.
We got to see the arrangements and preparations for one of the weddings on the day.

We were offered Hi-Tea at the hotel and I grabbed some Samosas and Chicken Puff with tea. The team at Shangri La is very hospitable and pleasing who made us explore the entire property.
Post site visit, we all were at leisure and in the evening we hit the Casino Marina. Next day after breakfast, we left for Amari, Galle which is a 2 hours scenic drive through expressway. If you happen to drive from the airport its a fantastic 2 hours 30 minutes (approx.) expressway drive.

We received the traditional welcome, checked-in at the hotel and headed for lunch.
Lunch was a stomach full of hot servings and a grand buffet – vegans relished paneer makhni, daal, variety salads, continental delicacies, etc. while non vegans savoured Fish and Chips, Mutton fry and other meat palette. Fresh Curd was fantastic after my meals and before I could indulge into succulent desserts.
Some managed Pool time 🙂 and some afternoon nap post lunch.

Evening was at leisure and well- spent at Galle Fort (beautiful dutch architecture). Night was happy trippy at BOMMU which is a roof top bar at Amari. We were cheering over IPL, ordering choice of drinks, veg & non-veg snacks floating that were simply mouth watering, signature cocktails we tried and finally I held on Prosecco, my most loved!
Next morning post breakfast, we explored the property and then was taken through the presentation in one of the IDEA rooms.

During the discussion, King Coconut was most fulfilling … I simply loved its presentation!
Lunch was kept at the Presidential Suite to give us the experience of the room. The buffet was set in the living room.
(I must mention… Srilankan Housewife Soup and Roast Paan (paav) is a staple and I sincerely relished to begin with)
I finally managed to meet the Indian Sous Chef Neeraj who made us drool over Indian, Continental, Srilankan, South Indian and possible non-vegan delicacies and delectable desserts over two days.
Chef Neeraj Kumar has spent almost 15 years in the hotel industry and has worked with brands like Taj Group, Aamby Valley, Hyatt International, and such. He moved in 2017 to Srilanka to work with Onyx Hospitality Group for Amari as an Indian speciality chef.
Indian food is only cooked in Amari in Galle so far. At Ahara, an all day dining has a set buffet of 25 dishes. The specialities that are highly appreciated are Butter Chicken, Idli-Sambhar, Biryani, Dal Makhni/Bukhara, Chicken Tikka, Malai Tikka, Aloo Bonda and Palak Paneer if I have to mention specifically.
