Don’t know what came over me today but I made some homely and delicious Italian-ish food — a mushroom and spinach risotto with porcini-vegetable stock (my first risotto! Need to work out a few timing kinks but it was delicious) and for lunch a cucuzza (opo squash) and pork soup with tomatoes and celery

Exploring new Options

While delving into the food, music, and background of other cultures, I also have made a point to try new foods or new ingredients I haven’t cooked with or tried before. I know many of the posts I’ve made so far talk about food, but I am just fascinated with trying new things. 

More recently a new grocery store called “G-MART” opened near me and I decided to go check it out. The picture above are some of the dishes I was able to create using some of the new ingredients I bought like: Opo squash, Daikon radish, Korean pears, dragon fruit, chive and tapioca wheat pies, and vermicelli rice noodles. This place is definitely a 10 out of 10! Truly able to create some delicious dishes! I will continue to go back and try more new things.

For anyone interested, I’ll list some of the smoothie recipes I made so you can try them for yourselves:

1. Dragon fruit & Strawberry:

- 1 chopped red dragon fruit

- 1 cup sliced strawberries

- 1/2 teaspoon grated ginger

- 1/3 cup spinach

- 1/2 cup cold water and 4 ice cubes

2. Pear & Kiwi:

- 1 chopped Korean pear

- 3-4 sliced kiwis

- 1 tablespoon lime juice

- 1/3 cup water and 5 ice cubes

Opo Squash/Soraikkai stir fry South Indian style w coconut! Super simple and ready in minutes. Recipe: in a pan add, oil, once warm add Mustard seeds, Urud dal, curry leaves, slit Thai chili, red chili, salt, turmeric and ground Asafoetida, once the mustard seeds start to splutter, add the peeled & chopped opo, sauté for a few minutes, it should start to become soft in 5 minutes max, once it feels soft add a couple teaspoons of dried coconut powder, stir and it’s ready to serve. I served with Tamarind rice made from fresh ‘Puilkachal’!
