Ingredients: 4 large potatoes, peeled and diced. 1/2 cup fried onions. 1/4 cup milk. 2 tablespoons butter. Salt and pepper to taste. Chopped chives for garnish optional.

Instructions: Boil the diced potatoes in a pot of salted water until tender, about 15-20 minutes. Drain the potatoes and return them to the pot. Add fried onions, milk, butter, salt, and pepper to the pot with the potatoes. Mash everything together until smooth and creamy. Adjust seasoning if needed. Transfer the mashed potatoes to a serving dish, garnish with chopped chives if desired, and serve hot.
