Chia approved! Here’s the recipe for the gluten free chocolate chia cookies. Also- I made these much smaller than original, mainly because having two feels like such a luxury and it was the same as one original :) #mindgames INGREDIENTS: 2 ounces of butter, softened 1/4 cup of brown/white/mixed sugar 1 tsp vanilla extract 1 whole egg 1 1/4 cups of blanched almond flour (without the skin) 1/4 tsp baking soda A pinch of salt 1/4 cup of chocolate chips - ideally mini! 1 tbsp of chia seeds TO MAKE: 1) Preheat oven to 350F. Lightly oil the baking pan. 2) Mix butter, sugar, egg, and vanilla extract in a large bowl. 3) Stir in almond flour, baking soda, and salt, and mix well. One bowl banana, zucchini, carrot bread. HOW TO MAKE: Mix wet ingredients first - sweetener, oil, eggs, banana mix, vanilla, and milk. Then slowly add dry ingredients, starting with baking soda, salt, cinnamon, flour, oat bran, and last but not least, the fixings. Don’t overmix! Grease pan. Bake for 60-65 minutes at 325F. Original recipe from @cookieandkate. Num. INGREDIENTS: ⅓ cup melted coconut oil or extra-virgin olive oil; ½ cup maple syrup (or other liquid sweetener); 2 eggs; 1 cup mashed ripe bananas (or a combo of banana, zucchini and/or carrots); ¼ cup milk or milk alternative; 1 teaspoon baking soda; 1 teaspoon vanilla extract; ½ teaspoon salt; ½ teaspoon ground cinnamon; 1 1/4 cup of whole wheat flour; 1/4 cup of oat bran; ½ cup fixings like chopped nuts, seeds, chocolate, or dried fruit.
