But which brown-bag lunches are best for getting you through a day at the resort? We rounded up the Outside staff’s favorite to-go meals, below, then asked Kristen Gravani, the director of sports nutrition for Stanford University athletes, to weigh in on our choices. Gravani, a former college ski racer, says there are three components of a good to-go meal:
The right balance of nutrients. Generally, you want your meal to be higher in carbohydrates, with a moderate amount of fat and protein. Carbohydrates are a skier’s main fuel source, and a little fat and protein help stave off hunger longer while providing slowly released energy. (Exact proportions will vary depending on your individual nutrition needs, but typically, the more intense and sustained your ski day is, the more this ratio will skew toward carbs.)
Ingredients that sit well in your stomach. If you know that spicy chili makes you sprint for the bathroom, leave the beans at home. The less your stomach is churning, the more you can enjoy your turns.
Food safety. If you’re carrying a meaty burrito around in your pocket, that’s the ideal habitat for bacteria that causes foodborne illness. Ideally, you want to keep perishable foods cold, or just stick with shelf-stable options.
With those criteria in mind, here’s what Gravani thinks about Outside editors’ ski-day lunches:
Breakfast Burritos
Pandemic or not, my go-to is a homemade breakfast burrito: a ten-inch tortilla, hash browns, scrambled eggs, cheddar cheese, and green chili. It’s really two meals in one. I eat one half on the drive to the mountain, then wrap the other half in tinfoil and stash it in my jacket for lunch. I have two go-to ski lunches, depending on how much I rallied that morning. If I’ve given myself enough time to get a breakfast burrito from my favorite spot in Santa Fe (hello, Betterday Coffee!), I will eat exactly one-third of it for lunch, with a Modelo on the chairlift. (The first third is consumed on the drive up in the morning, and the last third on the drive down at the end of the day.) The tortilla and hash browns provide a nice boost of carb-based energy, while the eggs and cheese round things out with protein and fat. Heat the whole thing in a large frying pan, or just microwave it. Cut it into quarters, and put it in a Ziploc bag, so you can throw in your pack or even a jacket pocket. And while the macronutrient balance is decent, this meal’s potential to cause tummy troubles warranted a grade reduction. The combo of fat, fiber, and spice can lead to an upset gut. “Especially with beans, it can cause GI distress for some people,” she says. Being at a high altitude doesn’t help the stomach situation either. Some people may have no issue with the magical fruits, and GI problems are very individual, but if you’re unsure about your reaction to beans, you may want to save yourself—and everyone in your group—the trouble.
PB&J
I keep it simple with an almond butter and jam sandwich, usually on Trader Joe’s Super Grain and Seed bread. I pack on the almond butter, and go light on the jam so it doesn’t get all sticky, and put it in a small Ziploc bag. It’s great fuel, and I can cram it in a ski-jacket pocket and eat it on the lift. It doesn’t matter if it gets smashed. In fact, it tastes better smashed a bit, because the jam marinates the bread. I also always keep some peanut M&M’s or a Kind bar in my pocket for extra fuel when needed. —Mary Turner, deputy editor

My boyfriend and I always make extra to bring to the mountain the next day. A few slices fit neatly into a Ziploc that lies flat in my jacket pocket, and they’re easy to eat one-handed (and glove-handed if it’s frigid and I’m really desperate). It feels more indulgent than the usual PB&J or energy bar but is still easy to snack on during lift rides without making a mess. Rice not only complements Filipino dishes; it is the primary and most necessary vehicle for that sweet, salty, sour, and sometimes bitter combinations of flavours.
Along with many other Asiatic countries, Filipinos enjoy fried rice. More commonly however, is the silog, which poses as a breakfast item but is usually eaten at any time of the day. A cup of steamed rice is topped with a fried egg, yolk glistening and runny, with crunchy whites that add a layer of texture in a bite. Alongside it would either be a few pieces of longanisa (sweet cured sausage), tocino (sweet cured pork), bangus (fried milkfish) or the most popular tapsi (cured beef with onions). In times of celebration, huge mounds of rice are placed atop a long table lined with banana leaf, sprinkled with an array of fried and grilled items and fruit in a military style of eating called a boodle fight. Rice is often marketed as a selling point for restaurants such as Mang Inasal, a chain that famously offers unli-rice—a deal that means exactly what it advertises—with their signature skewered charred chicken leg. The low price of rice in any establishment is considered an excellent value, particularly among Filipino families or friends dining out, which are often larger in number, and even more than often, larger in appetites.
History has found that any indigent Filipino household can survive for months, even years on end, so long as there is rice. Due to its low price and its presence in any corner store of any small, obscure barangay in the Philippines, it is a godsend for any underprivileged home. For only twenty-seven pesos (less than $1 CAD), one can feed a family of four: perhaps accompanied by a can of sardines cold or warmed, fried corned beef with a generous amount of onions, or if available, canned SPAM thickly sliced and fried with sunny-side eggs. Filling up a hungry stomach more than any other dish, it can even be eaten with a simple seasoning of just soy sauce, or patis, for those who are truly in a pinch.
Anyone that calls themselves a Filipino shows genuine love and care through the act of scooping a disproportionate amount of rice on a plate for a guest, a family member, or even the odd stranger that walks through the front door. My family is not exempt in this deeply cultural sentiment with rice. I knew how to eat rice like I knew how to walk: with a fork and a spoon, or my preferred method, with my bare hands. Four fingers scoop the rice and ulam while the thumb pushes the contents into a hungry mouth. My mom and dad and their parents before them were raised on rice and the abundance of it, much as as they have raised me. Rice is so pervasive with my family, it would even be eaten with items that aren't traditionally paired with rice, such as sweet Filipino spaghetti.

Embrace Your Freezer
I think you have heard this far too many times – stranger times are afoot. Stockpiling is a particular point of aggression for me, because there is simply no point in buying far more than you need. If supply is an issue, the answer lies in simply utilising the best appliance at your disposal. Yes, I am talking about your freezer.
There is a multitude of food that behaves rather well if you plunge it into the icy-cold depths of your freezer. But, as always, the question of food safety arises. Here is a crash-course into what freezes well, how to fight the devil that is freezer-burn, and what is a freezer-flop and must be avoided at all costs.
Bread I place this at the top of my list simply because I believe that far too many people have been chucking their Hovis slices into the compost when the slightest bloom of mould appears. Bread is the king of freezer foods. If you buy your bread pre-sliced, you can chuck whatever you believe you cannot finish by the sell-by date into the freezer. If you are a better person than I am, and get those crusty loaves à la Gail’s, make sure to slice them into neat pieces before freezing. Whenever the need for toast arises, no thawing is necessary. Pop it straight into your toaster. You can’t imagine a thing better since frozen bread.
Fruit Sure, you can buy pre-frozen fruit, and there is nothing wrong in that. But if you think you have far more than you need fresh, you can freeze whatever excess you have. Most fruit freezes remarkably well. And while in some cases (I am looking at you, citrus) the texture does deteriorate, if you are using it for baking/smoothies/juicing – no one would be none the wiser. A point of note: pitted fruit does best if you remove their stones before the freeze – trying to pry it out with a knife sub-thaw is not much fun. Avoid the peach equivalent to the millennial avocado injury. Citrus, forgiving my previous dig, is OK if you are using the pulp for a recipe or smoothie – but the zest reigns supreme. Zesting a frozen wedge of citrus fruit is easy peasy. And if you happen to need the flesh of citrus without the skin, just freeze it for whenever you may want to make a casserole calling for that tablespoon of orange zest.
Herbs We are all culprit to buying a pouch of rosemary when a recipe demands it, and leaving the remainder languishing in the produce drawer. If you have far too many fresh herbs than you know what to do with, freeze them (spoiler alert). Herbs are best if frozen in some kind of fat, so what I do is portion them out in an ice-cube tray, a teaspoon per well, and top each up with a glug of olive oil. If your next pasta sauce demands 2 teaspoons of fresh rosemary – pop out two cubes straight from the tray and toss them into your pan.
Soups and stocks I am a fan of the Kallo stock cube. But there have been times (i.e. mid-risotto making) when I have had far too much ready than I need. Instead of chucking it away, freeze them in portions (I like to go for a cup per container), so you know exactly how much to thaw out the next time you need it.
Leftovers I wrote an entire article about leftovers, and it seems particularly prescient to not let whatever you have spare to go to waste. Stews and curries fare particularly well from being frozen – just make sure you portion them according to how much you need for a meal.
Vegetables The list of vegetables that do well from freezing is far longer than those that do not. Onions, garlic, hard veg (squash, root veg, peppers)… Spinach and kale, while of the leafier variety, do well if you plan to deploy them later in a cooked dish and not in a salad. Skin your tomatoes before freezing – by slitting an X at their base, boiling them for 2-3 minutes, then immediately plunging them into a bath of ice-cold water. Their skin will start to shrink back – so peel off whatever remains with languorous ease and pop them into a freezer bag or Tupperware. While most root vegetables fare well, but potatoes do not. Only waxy potatoes do relatively OK, but I advise this only if you want to use them in some sort of stock, as their texture does change. Just parboil them before freezing. As a general rule of thumb – veg with a high water content either should not be frozen (i.e. iceberg) or needs some treatment. Hardier veg is much more resilient.
Tofu Even if food shortage is not an issue, I am a proponent for freezing your tofu.
Baked Goods Do you know how some people have eyes much bigger than their stomachs? I bake much bigger than my stomach. Most baked goods can be frozen. Banana bread, cinnamon rolls, cookie dough – it’s all good. Just make sure to portion them accordingly for future ease. To bring them back to their former glory – a whirl in the microwave is all you need.
Butter FREEZE YOUR BUTTER. I use non-dairy butter, but the rule withstands. And, hey, if you happen to be the sort that makes your own shortcrust – pre-frozen butter is a godsend.
Yoghurt and milk Yes, I am aware that some dairy comes with a warning emblazoned on the side of it – DO NOT FREEZE. But if your intention is to use your dairy in a dish, frozen shouldn’t be a problem. Freezing yoghurt or milk (or non-dairy equivalents) changes the texture of it – no longer silky and velvet but rather (urgh!) lumpy. This resolves itself if you throw it into a biryani or a pasta sauce, but not have any intention of consuming it as you would fresh. Just try you freeze whatever you do not think you can finish as soon as you can – anything a day or so near its sell-by date is risky business.
Eggs Don’t freeze your eggs in their shells. Crack them open, beat them and portion them in containers labelled with how many eggs lie within them.
Cheese Hard cheese freezes well, soft cheese less so. If you find a bit of mould growing on your wedge of parmesan, it is completely fine (and safe!) to cut it off with a generous margin, and freeze whatever remains. Soft cheese should not be frozen at all costs – and if you find yourself in the unfortunate circumstance of finding a bit of mould on your mozzarella. Chuck it. It isn’t worth any risk.
Flours Wheat, rye, spelt, buckwheat, oat… they are the superstar of the freezer. Whenever you need any for a bit of baking, scoop it out and proceed as you would normally.
Nuts and seeds I grew up in a hot climate, so all of our nuts and seeds claimed residence in our fridge or freezer. Nuts and seeds possess a fat that can, at times, go rancid in warmer temperatures. This poses less of a problem if you buy small bags of the stuff that they sell at Tesco. But, if you are a bulk-buy fiend, pop whatever you think you will not employ in the next few months in the freezer. It will save you a lot of money, and heartache.
Cooked rice, grains and pasta Yes, you can freeze these. Rice can be tricky, but be sure to cool whatever excess you have ASAP and pop it into the freezer once it is at room temperature. Pasta can be frozen, but please, only if it is just shy of al-dente. You will need to plunge it onto some hot water to revive it, and if it is already slightly over, you will have a soggy, gloppy mess.
Meat Freezing meat can appear to be a risky endeavour but if you follow a few rules, you’re golden. Freeze it as soon as possible, portioned as you would need per meal. When freezing meat, air is the enemy. Wrap each as much as you can in plastic wrap (or leave it in the vacuum pack it came in) and a further insurance of foil or Tupperware to discourage freezer burn. When thawing (which will be discussed below) – you can either leave it in the refrigerator for a day (smaller portions) or more, or in a tub of slightly-cold water. DO NOT leave it on the countertop, DO NOT microwave it. The 3-month rule applies here for maximum quality, and while a few months shy of that should be okay, the quality of it does deteriorate significantly.
Safe-Freezing Tips
You are now a freezing aficionado. But here are a few final tips about the longevity of frozen food, and just some general freezer-related housekeeping.
How long is it good for? This depends on the food. And while there are a whole list of websites and charts demanding you follow a strict schedule, if you have frozen the food as close to fresh as you can, a lot of it will be OK. But, for the wary, here is a good guide.
How should I freeze? A rule of freezing – minimise air contact. With meat this is crucial, but otherwise, try to use freezer-safe bags or tubs with airtight lids. Label EVERYTHING – with its contents, portions, and date of cooking/freezing. Always try to freeze according to your regular portion size so you can thaw exactly the amount you need.
What should I use to freeze my food? You can buy freezer bags, and containers – but avoid freezing any glass or metal. Glass is particularly tricky as it can shatter (yes, even the freezer-safe ones). Especially if you put anything slightly liquid inside, as water can expand and create cracks your glass container.
How do I thaw my frozen food? You have a few options. You can thaw it in the refrigerator, which is the safest, but also takes a fair amount of time. To speed things up, you can leave it in a bowl of cold water on your countertop, or in the microwave on the defrost setting. Meat, however, should never be let near the microwave in the effort of food safety.
How do I prevent freezer burn? This happens over a period of long freezing, when food loses its water molecules and they rise to the surface and crystallise as ice. Small ice crystals do not pose much of a problem, as they melt fairly quickly. But once larger crystals form, this usually indicates the deterioration of whatever you have had frozen. It is usually still alright to eat this (with the exception of meat and dairy products), but just be prepared for it to be a little subtracted in its original quality.

hi. today i got up on time, which is a surprise, considering how little i actually slept.
i had dumb dreams. i had more to say about them this morning, but before i could write anything down i had to leave for linda and david’s.
i was playing a very glitchy game. the level forgot to program in an ending, so it just kind of went on forever until you clipped through the floor. then it turned into like some film noir, i can only think “detective” story even though i am fairly certain there wasn’t really a mystery. it was... hard to see, because it was so dark. i remember there was something going on, but whenever i almost remember what the memory kind of slides around like a bar of soap. so whatever.
i showered and drove over to my relatives’ house. they made waffles and taught me how to make berry sauce. we talked about a ton of stuff. more than i can recall and list here. i ended up staying for four hours, which was just a little too long for me. when i got home i realized i was exhausted. i rambled at oz about jim cummings for a little bit and then i had to turn around and go over to gramma’s with my family for dinner.
dad said something very interesting while we were on the road. mom asked if i had heard back from taylor about comicon. i said no, she hadn’t texted me back. dad strongly recommended i call. i said i would send her a facebook message about it. that prompted dad to start ranting about talking to someone with your voice and how i never know anything and this is why my generation never knows anything.
not only was it nonsense, it was also blatantly untrue and also annoying? he was sure angry about this imaginary phenomenon though!
while at gramma’s my family sat in the living room around the tv and discussed yet again how our glorious leader is “not a politician” and “not a bad guy” and then they started making, like, weird non-jokes about illegal immigrants and their children and laughing. i sat at the kitchen table staring at my brother while he chewed on the fat end of a water bottle.
it’s weird how gramma and grampa work... gramma basically hates foreign people except when she personally knows them. then she’s kind and even sort of motherly. i guess she operates under the “you’re not like the others” policy.
we had pizza. i also had a klondike bar because it sounded interesting more than because i was still hungry. actually there was so much cheese on the pizza that i started feeling kind of ill just feeling it in my mouth haha.
then we drove home and i diddled around for a while. i didn’t want to do anything and nothing updates on sundays. i played fetch with wiley and my brother in the back yard since the sidewalk was too hot to take the dog for a walk. it was over 100 today.
i saw that my art trade partner had finally posted a reference of her character so i found some nice pokemon mystery dungeon remixes and got to work. she’s probably too young to recognize the jojo pose i used. it was fun looking up images of cosplayers (and araki himself) doing the poses. i had to use people models since jojo isn’t exactly known for its exceptional anatomical accuracy. especially for the stylish poses.
the character has just a few too many accessories that have to all be different colors for me to adjust the color palette well... and she stressed that the bracelets absolutely had to be “hot pink.” three times.
i noticed that these young artists spend a lot of time making sure their characters look like adult women even though they are basically just fursonas. all three of them were pretty... busty in the references i used. i don’t think i’ve ever drawn any of my non human characters like that...
while i was drawing i was thinking a little bit about why i was doing this. like... i know it’s mostly just to make other people happy and not for any personal gain. even though it puts a lot of stress on my wrist and fingers, especially when i use the tablet. like... i enjoy drawing. i guess that’s the reward here. why did i do the coloring page? because i enjoy coloring.
but that’s not really what i want to be doing in therapy either, you know? my goal can’t be “help me learn to manage my energy so i can give and give and give.” that’s not gonna fly.
i was so busy all day that i didn’t really have time to sit and do nothing but think about that goal. i guess that’s why i started writing the journal so early. to give myself time to complain my way through my thought process and hopefully arrive at a useful conclusion this time.
and immediately upon saying that i have no thoughts, of course.
i wish... i could get people to see me as a person and not a potential sex conquest or whatever. basically all of my relationships pick one or the other. but my goal can’t be to change how other people think. i can’t force anyone to think anything. all i can do is change how i present myself.
do i need to stop being afraid of judgment? i don’t know how i feel about being judged... i mean, it’s been a part of my life for basically the whole time. it’s gonna happen. it comes with being uncontrollably weird.
do i need to learn to loosen up and commit? that would really be only for singing and dancing. people wise i run into the same problem as last night. just going to get steamrolled.
i guess being more confident would help. especially academic confidence. impostor syndrome is deadly for careers. but i don’t think academic confidence is going to help with the underlying “cannot make connections” problem.
haha. i guess i’m depressed. my brain just said “i could always kill myself. then there wouldn’t be a problem.” i wonder why the “start over” instinct is so strong in suicidal feelings. even if reincarnation was real, losing all your memories and experience could easily lead to you just making the same mistakes over again, even with different life circumstances. that’s not helpful. but then again, carrying your “beyond repair” feelings over isn’t helpful either. i guess that sucks.
should i ask for help from the therapist? as far as “setting a reasonable goal” goes. like, i’m already asking for help in general of course. that’s what therapy is. but again i’m worried about the difference between getting assistance and having my hand held. if i can’t be independent and self-sustaining here, where will that happen? “later”? how far is later? best to work on that now too.
what’s the difference between reasons and excuses? personal opinion, i guess.
is this a problem i can look up on google? how would i even word that request? “fix my life pls.” “how to make connections.” “suggestions for handling a deep fear of other humans.” should i... be doing some personal research like a google search before asking the therapist for ideas? i don’t really have any other resources. can’t ask my parents. the rest of my family basically says “you have to get over it, you’re smart” when i bring up confidence issues. should i go to the library or something? surely out of the billions of people who have lived someone has had this problem before.
google says to get people to take you more seriously you have to encourage others to talk about themselves. COOL!!!!!!!!!!!!!!!!!!!!!
linda’s advice for academic success was to work harder. as long as you work as hard as you can, things will work out.
i just... i don’t know where the limit is. i seem to have an endless amount of effort i can give and then suddenly i break. but i could just try a little harder if i kept going... i still have energy reserves in there somewhere. i feel like every time i break it’s because i am holding back and not because i am actually sick. like when i try to run. just because i’m tired doesn’t mean it is physically impossible to keep running. i could always just keep going, if i had the mental strength. but i am weak, so i stop running and walk instead. and then i can’t breathe or stand at the end of it because i ran too far i guess.
it’s hard to balance out the knowledge that i am mortal and able to be killed by a mistake with the fact that i have survived everything so far in my life (obviously). it’s not unheard of for people to die after pushing themselves too hard. but i look at that and some insane part of me says “but they were able to push themselves that hard in the first place, and you can’t. because you’re a wuss.”
should my therapy goal be to make better jokes?
but really, all that happens is that i feel like i didn’t REALLY try my hardest, because i have not literally died yet.
maybe i am splitting hairs and not focusing on the real problem when i think about the differences between words, between good connotations and bad connotations. i can’t tell. there’s a lot i don’t know, and even more i don’t understand. there are a lot of questions about myself i need to answer, but i can’t figure out how to think about them in a way that will allow me to give a definite answer. all my answers to hard questions are soft, laced with exceptions and the knowledge that there is more nuance to the situation than i am able to articulate. and then, i guess i get lost trying to navigate that.
is that what it’s like to be unable to see the big picture? i always thought i was good at that. maybe i am not good at that either.
maybe i am retarded after all. there are a lot of questions i have about myself and i don’t know how to answer them. but i feel like an adult my age should have at least SOME of them answered, and i feel like many of my peers have come to decisions. i’m still trying to figure out what the questions even are.
or maybe i’m hiding the questions i’ve already answered from myself so i feel less successful. who knows!!!!!
i just want to be safe more than i want to love other people. is changing what i want a good idea? and, if it is, what should i want instead? is throwing safety out the window a form of self harm? smells suspiciously like self harm to me.
if i get hurt again, i guess i could always pretend it isn’t real. or forget about it. but that doesn’t really make me happy either.
i don’t have the strength to back up my requests. evan at villanova made a big show of pinning me against the wall and there was nothing i could do about it because he was bigger than me. craig did his thing and i feel like i could have done something, but chose not to, and therefore what happened is my fault. i don’t remember being able to make a decision because i was so shocked by what was happening. but i should have made one anyway. i didn’t know if screaming would be an appropriate reaction considering there were other people in the room and none of them said or did anything. and when i broke up with craig they tried to get us to “talk it out” so we could potentially “get back together” or at least “be friends.”
what is even the point of having friends if they’re gonna be like that.
i have so many things to say in therapy and NO TIME to say all of them. how do i pick the “most important” things? how do i only pick a few things to talk about and still get across that this has happened for 24 years straight? how do i talk about this stuff when i don’t even WANT to remember it, let alone the fact that i barely remember it anyway?
except, you know, i do remember it very vividly. i just can’t be sure that it’s vivid and also accurate. because memories are persnickety like that. and it’s not like i can just go ask the people who were there what happened. they won’t remember it or they will just straight up deny it happened. like when i told dad that mom used to beat me.
wow it looks like i’m a wreck! how am i supposed to pick one thing to fix when EVERYTHING IS BROKEN?
maybe that’s what the problem is. like trying to fix the plumbing in a house that is on fire.

Our 2nd wedding anniversary!

@nancydrewnickerson and I were talking the other day about how although it's 2017, we still haven't updated you guys about some of what happened at the end of last year. Henry has graciously offered to take full responsibility; after all, it is his adorable face that's been distracting us ; )
He and Nancy aren't home right now, so it's as good a time as any to update you. ( Shhh, no one tell Nancy. She took Henry to run an errand so I'd have some time to finish packing. I'm leaving for a business trip tomorrow, but I'm in a bit of denial. It'll be my first time leaving Henry for so long. Nancy promised that she'll flood my phone with pictures and we'll face time every night, but I'm definitely going to miss holding the two of them in my arms. )
One of the reasons Nancy and I are so busy at the end of the year is our wedding anniversary. Our second anniversary fell on a Tuesday, so we celebrated the weekend before. Nancy and I are very fortunate to have so many people in our lives who are not only willing but also eager to help out with Henry, especially Mom and Hannah. When we were planning how to celebrate our anniversary, Mom and Dad said they'd be happy to take Henry overnight.
I thought it'd be nice to go to dinner at Chez Louis on Saturday. It didn't take long for me to get ready, so I entertained Henry while Nancy got dressed. She looked spectacular, and I made sure to tell her I was the luckiest husband in the world. When we dropped Henry off at my parents' house, I was almost expecting Mom to have us pose for pictures. As usual, the food at Chez Louis was great. It was nice to reminisce on some of the other times we've gone there. The first time we went was our first fancy date, which seems like so long ago. And now we've been married for two years and have a son. Thinking about it now still amazes me how far we've come. We stayed home instead of going to a hotel. It was a little strange to be there and not keep an ear out for Henry. And Nancy almost scolded me for placing lit candles in easy-grab spots, ha. Well, let's just say we took advantage of our alone time. ;)
On Sunday, I attempted to continue the French theme by making Nancy crepes. It turns out there's a bit of an art to them, and they're not just like making really thin pancakes. When I woke up Nancy, she was sweet enough not to comment on the too thick to be crepes but too thin to be good pancakes that I presented her with.
In the afternoon, we went to see a French movie, and we even behaved so that we wouldn't miss too many of the subtitles : D
I had a little help from Hannah. While we were at the movie, Hannah went to our apartment and left a picnic basket full of goodies. I had ordered some cupcakes with French decorations—the Eiffel Tower, little fondant berets, 'je t'aime'—from a local bakery. Hannah picked them up, as well as going all out with her own creations, which was greatly appreciated. Because it was too cold out, Nancy and I turned the living room into a picnic area.
We usually have brunch with my parents on most Sundays, so because we missed it that morning we stayed for dinner when we went to pick up Henry. Mom knew about my plans for a Parisian day—she loves the romance behind our Paris connection—and she made coq au vin with chocolate mousse for dessert.
As much as we loved getting some alone time, we were definitely happy to bring Henry back home. Knowing how hard it was to be away for less than a full day... I don't know how I'm going to get through a whole week.
We finished celebrating on our actual anniversary. Nancy and I were running a bit late that morning—for, uh, no reason at all—but both of our days had calmed down a bit by lunch time. My original plan was to have flowers delivered to her at work, but I decided I didn't want to cheat myself out of seeing her reaction. On the way to picking her up for lunch, I stopped by the flower shop for my order—an arrangement of flowers from her bouquet. Seeing her smile was definitely worth the detour.
The rest of the day seemed to drag on. We both got home about the same time and started to make dinner together. Nancy took the lead with dinner, while I stuck to stirring the pasta sauce. But then I scooted her out of the way so I could make dessert—brownies from a box that were no where as delicious as Nancy's, of course, but we made brownie sundaes and with all the toppings you could barely tell the difference.
( Nancy has thankfully stopped teasing me about a certain chicken dish that shall not be named, but she has started to joke that Henry is more help in the kitchen than I am. With the amount of time he spends with Mom and Hannah, I suspect it won't be long before that's actually true. )
The three of us cuddled on the couch after dessert, and I put on our wedding video. Even though Henry had no clue what was going on, he listened attentively as Nancy and I explained it to him. I told him that hopefully one day he'd be as lucky as I was and fall in love with someone so intelligent, caring, and beautiful. Nancy told him that if he grows up to be anything like me, he'll have no problem finding someone. He smiled at the both of us, but I'm sure in a few years, once he understands what we're talking about, his reaction won't be the same.
After we put Henry to bed, we exchanged our presents. Last year, we agreed that we should stick to sentimental gifts, which we did again this year. When Nancy told me how much she loved my gift to her last year—a letter I wrote on the morning of our wedding—I came up with an idea. For the year between our first and second anniversaries, I wrote her a letter each week. A lot of them focused on how excited I was that we were going to be parents, and then once Henry was born, a lot were about how amazing Nancy is as a mother. My goal was to make sure when Nancy read them she'd know how much I love and appreciate her and how incredibly happy she and our life together makes me.
Right before our anniversary, I had the letters bound together. There were a few letters that I left out and gave to her separately. I wanted the book to be something we could share with Henry, or any other children, in the future. But sometimes when I was writing, I realized I wanted to keep the words between just the two of us.
Nancy gave me an incredible gift too. Every day since our last anniversary, she wrote down a reason she loves me. Some were general, others were specific to something that happened that day. It was such a sweet and thoughtful gift. Other than Henry, I think it might just be my favorite gift from her.
We exchanged a few other gifts too. The traditional second wedding anniversary gift is cotton, so Nancy found a band tee from the first concert we went to together and I'm sure you can fill in the blanks about some other cotton gifts we gave each other...
I can hear Nancy in the hallway, though, so that's a story for another day!

For today’s edition of Dear Mark, I’m answering questions from last week’s Collagen vs Whey post. You guys had a lot of questions, mostly about collagen, and I’m here to answer them. Can collagen help with plantar fasciitis? Should you take collagen and whey together in the same smoothie, or do they cancel each other out? If a person can’t have whey, is there an equivalent protein powder source? Is glycine a good replacement for collagen? What about liquid whey from raw milk���how does it compare to powdered whey? If I wanted to get my glycine from foods, what would I need to eat and how much of it?
Let’s find out:
Is there any evidence that collagen supplements can help with plantar fasciitis? Suffering from this recently and the stretching from MDA has helped but looking to get that last 10% of healing so there is no pain.
Fascia is basically pure collagen. If collagen supplementation has been shown to improve pain in other parts of the body made of collagen, like the knees or tendons, and improve collagen synthesis in collagenous tissues like skin and joints, I see no reason it shouldn’t also improve the fascia. Boosting collagen synthesis is boosting collagen synthesis, and supplemental collagen does it.
A good thing to try is eat 20-30 grams of collagen with 200 mg of vitamin C 30 minutes before a workout that you know targets your plantar fascia.

I’m unaware of any unique benefit.
When you think about how collagen appears in the natural world, it’s usually alongside muscle meat.
Entire culinary traditions revolve around the consumption of collagen and muscle meat together. Think Vietnamese pho (bone broth and meat). Think French (reduced broth-based sauce poured over meat). Think Mexican (bone broth-infused rice served with meat). Hell, go all the way back to the Pleistocene and humans were boiling smashed bone fragments in stomach casings.
No reason to separate them.
It is possible for a person to be allergic to casein and I don’t think it’s possible to have fully casein free whey protein except maybe the isolate. However, if the person is allergic it wouldn’t be safe. What’s the next best complete protein if a person can’t use whey, and wants the convenience of a powder? I’ve seen beef protein before, but have no idea of the quality.
I’d say go for egg white protein. Extremely complete, tasteless, and blends seamlessly into anything.
Is it true that collagen doesn’t work/assimilate without vitamin C? I try to take mine with some cherries or lemons.
It seems to work better. The recent study that found pre-workout collagen improved tendons also included vitamin C.
I sometimes buy raw A2 milk from Jersey cows, and make my own whey. Wondering how that compares to powdered whey?
That’s awesome. The liquid whey will have a broader range of nutrients, but the powdered whey will be more concentrated and far higher in protein. Remember that whey protein is basically dehydrated liquid whey and you’ll get a picture of how much liquid whey goes into whey powder.
My interest in this has led me to start studying biology because I would like to know more about nutrition and digestion. Because the way that my nails changed seems incredible to me and it really makes me wonder what else collagen is doing.
You make a good point. I often use improvements in one area of health as assurance that other areas of health are also improving. I’m sure that’s not always true, but I think that’s a pretty safe assumption most of the time.
My question to you Mark would be to echo the same question others have posed, ie are there any downsides to me taking whey, collagen and glycine simultaneously in my pre-workout shake? Otherwise I have a real dilemma, as it appears that there is very good science to support having both collagen/ glycine as well as rapidly digested essential aminos (from whey) in your system before undertaking a ‘fasted’ workout.. A tough question I know but any insight you have would be much appreciated!
There’s no reason to avoid it. Do it. Should be good for both your connective tissue and your gains.
Would glycine supplements have a similar effect as collagen? Glycine supplementation would be way less expensive than collagen: • 30 grams of collagen (=~10 grams glycine) from Great Lakes = 5 tablespoons, costs =~$1.13 if you buy the 8 pound bag. • 10 grams of glycine from Bulk Supplements =~$0.18 if you buy the 5 kilogram bag.
Pure glycine is great for things like balancing your intake of methionine. As I wrote in the original post, muscle meat is high in an amino acid called methionine. Methionine metabolism depletes glycine, so the more meat you eat, the more glycine-rich connective tissue, bone broth, and collagen supplements you should be eating to balance out the amino acids. This is the basic foundation for eating all that collagen I recommend.
But balancing methionine for longevity and health isn’t the only reason we’re eating collagen. Collagen is the most abundant protein in the body, providing tensile strength to our bones, teeth, ligaments, tendons, and cartilage. It’s an important structural component of the skin, lungs, intestines, and heart. And as far as the evidence so far available suggests, eating the amino acids that make up collagen separately doesn’t have the same effect on those collagenous tissues as eating them together in a collagenous matrix.
In one study, rats with osteoporosis ate collagen hydrolysate that scientists had marked with a radioactive signature to allow them to track its course through the body. It survived the digestive tract intact, made it into the blood, and accumulated in the kidneys. By day 14, the rats’ thigh bones had gotten stronger and denser with more organic matter and less water content.
Another study found similar results, this time for cartilage of the knee. Mice who ate radioactive collagen hydrolysate showed increased radioactivity in the knee joint.
When you feed people collagen derived from pork skin, chicken feet, and cartilage, many different collagenous peptides appear in the blood. You don’t get any of those from isolated glycine.
All that said, pure glycine can be a helpful supplement. As mentioned, it’s great for balancing out methionine intake from muscle meat consumption. It’s also been used in several studies to improve multiple markers of sleep quality. And glycine is probably the most important component, if you had to choose just one, of collagen.
Collagen is ideal, but glycine isn’t a bad option. In fact, I’d argue that perhaps collagen plus supplementary glycine could offer the best bang for your buck.
Mark, can you please do a post examining the different amounts of glycine in actual foods, i.e. pork rinds, chicken skin, connective tissue rich cuts of meats, etc? I’d really like to get my collagen and glycine from food sources and know how much of the foods I would have to eat in order to get the 10g you mention.
I’ll do a quick answer.
An ounce of pork rinds gives you 3.38 grams of glycine.
An ounce of roasted chicken skin gives you 1 gram of glycine.
A pork tail of about 4 ounces will give you almost 3 grams of glycine. Oxtail should be about the same.
So getting your glycine from food alone is entirely doable, but you’ll probably have an easier time if you like chicharrones/pork rinds and animal tails. There are some higher quality pork rinds out there these days, like the Epic brand ones.
Hi Mark – thank you for all of your great information!!! I make homemade Greek yogurt at home – I strain it in a fine mesh strainer and get an incredible about if whey as a result. I generally mix about 1/4 cup back into the yogurt to get the right consistency. I throw the rest out. Is this consumable as whey for the diet?
It is consumable. But keep in mind that liquid whey isn’t as protein-dense as whey powder. It’s still good to eat and a great source of probiotics.
