Years ago, I was shopping in an HMart and a Korean auntie was cooking food as samples. She asked me if I'd ever cooked Korean rice cakes before and I said no. She said, it's easy. Good for New Years. Just brown ground beef or pork and maybe garlic, add water, simmer, add rice cakes and cook until the rice cakes are soft. Cut up seaweed to add at the end. . Panghapunan: Bulalo
At the end of a very long day, relieve your stress with a nice Bulalo soup. The best Bulalo soups are found in Tagaytay or Batangas, but my mother would usually serve her own rendition at home during weathers under the rain or a cold evening to warm ourselves. I usually find my plate licked clean after finishing this soup, especially on its bone marrow bits that contain flavorful collagen!
The taste of Bulalo soup relies on its main ingredients: the fatty collagen from the bone marrow and beef shank. A typical Bulalo would be seasoned by garlic, onion, salt, pepper, and patis (fish sauce). Vegetables are also added, particularly pechay or bok choy, cabbage, potatoes and corn. It takes at least two hours to cook Bulalo. Patience will be put to test as the fatty bone marrow and thick beef chunks are being softened over time, but the wait is definitely worth it! This is not to be confused with another similar dish, Nilaga. Nilaga is cooked with pork instead of beef. In the Visayan regions, their rendition of Pochero or Pocherong Bisaya is more akin to Bulalo.
Bulalo’s definite place of origin is not specified, although people have traced it in Southern Luzon particularly Batangas or Tagaytay, Cavite where it is popularly served in line with the colder locations. Some people visit these areas just to get the best tasting Bulalo. My family and friends have shared experiences of traveling all the way to Tagaytay just to get Bulalo with the most breathtaking view of Taal. Bulalo has been around even before the Spanish colonization happened in our country. It dates back to before 1565. Despite its old origin, Bulalo remains to be a well-loved Filipino flavor that even instant noodles have used.
This goes to show that Bulalo is more than just a meal, but is an iconic dish that provides warming comfort for Filipinos throughout the years. I know for sure that it has and will continue to provide me a sense of comfort especially when storms are happening—figuratively and literally. Change is truly the only thing constant in the world. And as our country braces through difficult challenges, I hope we never forget to find the beauty and comfort in our culture. With our food like Bulalo, let our hearts be warmed and our bodies energized to face the many storms we go through.

Olay şöyle gelişti. Pırasa, hamsi ve mısır unu kaç gündür aklımda. Serdar’ı aradım, Karadeniz hamsisi vardı, yağlıydı. Ne yapsam ne yapsam derken Nevin Hanım’ın Karadeniz Bölgesi Yemekleri, Rize HEM’in Rize Mutfağı kitaplarını karıştırdım. O ara Tan’a laf yetiştirirken, konu hamsi olunca annemi arasana dedi. Alo Nurten Teyzeee :) Yarım saate yakın sohbet ettik hamsi üzerine. Köklerine sadık kalarak, Hamsikoli yaptım akşam yemeğine. Pırasa ve soğanı bol zeytinyağında ve sade yağ ile saydamlaşana kadar soteledim. Mısır unu ve suyu karıştırdım, üzerine yaprak hamsi, maydanoz, kişniş, mercanköşk, rezene tohum, taze soğan, tuz, karabiber, paprika ve pişmiş pırasa soğan, zeytinyağı, bolca. Ellerimle mıncıkladım, bu önemli, tatlar, doku burada kendini gösteriyor. Cıvık olmayacak, sulu bir bulamaç değil, tok. Kısa bir süre dinlendirdim. Pleki yok, kömür yok o zaman döküm tava ve fırın. 170 C fırın, tütene kadar ısıttığım döküm tava. Dök, düzleştir, sıcak fırına, bekle, bekle, ev nefis koksun, pişince ye. Üfff! Diyeceklerim bu kadar. The sun-dried tomato pesto and parm on these roasted chicken thighs give it a natural salty flavor that I can't wait to try again. This meal almost didn't happen - I'd taken the chicken from the freezer 3 days ago but they were still completely frozen when I went to prep 🤨. This has happened a couple of times...will need to check the temp on the standing freezer. Thankfully, sinking them in cold water for 20min did the trick.
