Just heard of this new steaming technique using coarse sea salt without water (hấp muối). Decided to test it out. After over 20 years of not making mooncakes, my mom randomly decided to come out of retirement. She didn't have the right molds and mixed up a few steps so they don't cosmetically look perfect; however, I'm sure they will taste amazing. I know, since I was able to sample the two fillings - matcha lotus & mung bean durian. Local grocery store had a sale on back ribs I couldn't resist. Bought two full racks. :D Mmmhmmm 3 hours slow oven roasted fall off the bones back ribs. Pretty easy to make - salt, pepper, sugar dry rub then honey, garlic, and BBQ sauce brushed on in the last hour.
