Temps have been unseasonably cool here in #NJ. This #changeintheweather has me #cravingcomfortfood. Regretfully, the change in the weather did NOT add any bonus time to my schedule. We had several #doula clients give #birth this week in addition to getting the spawn ready for #backtoschool.

This #slowcookerchickenrecipe is perfect! This #easychickenrecipe will be a weekly addition to our #mealplan this fall.

Ingredients

1 large onion quartered

4 to 5 carrots chopped thirds

4 celery stalks chopped in thirds

2 garlic cloves peeled and smashed

1 whole lemon quartered

3 1/2 to 4 1/2 lbs whole chicken

Dry rub (You can make your own, I just use a blend I bought from Fresh Market)

Sea Salt (even if your rub contains salt, rub extra on the bird)

Directions

Remove chicken from packaging and remove the bag from inside. Rinse chicken with water and pat dry with paper towels.

Rub garlic all over outside of the chicken and then place garlic inside the chicken.

Rub sea salt all over the inside and outside of the chicken.

Rub dry rub all over the outside and inside the chicken.

Place the quartered lemon inside of the chicken. Tie the legs together with cooking twine. This chicken will literally be #fallingoffthebone when done. You will not be able to remove it in one piece.

Add all remaining vegetables to the bottom of the slow cooker.

Place chicken on top of the vegetables.

Cover and cook chicken on low for 4-6 hours. Slow cookers vary dramatically in cooking time. Mine cooks fast! Make sure you check for doneness with a food thermometer. Cook until the internal temperature of the leg is at 160 degrees F.

You don't need to add any liquids, the meat and vegetables will take care of the liquids for you. Strain and save that fresh broth for use in other recipes.

This is perfect for those first few weeks home with your new baby when you are focused on recovering and bonding. The house smells amazing and you can keep the leftovers in the fridge for random #refrigeratordriveby snacking.
